RED, WHITE, AND BLUE JELLO
My mom has been making this simple and delicious dessert for years. You can easily make this for other holidays by using different colored gelatins (e.g. try black cherry and orange for Halloween). IMPORTANT: Make sure that the bottom two layers are chilled long enough to become firm and that the top layer is cool before pouring in step 4 or the top layer will go under the cream cheese layer and not make the pretty layered dessert that you want.

Steps:
- Prepare berry blue jello according to directions on box. Pour into 13x9 baking dish and place in the refrigerator. Allow to chill until firm, about 1 hour.
- Prepare lemon flavored gelatin using 1 cup of boiling water. Beat cream cheese slightly and then add the lemon gelatin mixture. Beat gelatin and cream cheese until smooth. Set aside and allow to cool to room temperature.
- Once the cream cheese mixture has cooled, fold in the whipped topping until mixed thoroughly. Pour this mixture over the firmly set bottom layer. Return to the refrigerator and chill until firm, about 1 hour.
- Prepare raspberry jello according to directions on box. Cool this mixture until room temperature and then pour over the middle cream cheese layer.
- Return the 3 layers to the refrigerator and chill until top layer is firm.
- Cut into squares to serve.
- Top with a little whipped topping and a couple of blueberries, if desired.

RED, WHITE AND BLUE JELL-O STARS

Steps:
- Spray a straight-sided 9x13 baking pan with nonstick cooking spray.
- In a medium bowl, mix the 6 ounces of blue gelatin with one envelope of unflavored gelatin. Pour in two cups of boiling water. Stir until the gelatin dissolves. Cool to room temperature.
- Pour the blue gelatin into the baking pan and place in the refrigerator to set for at least 30 minutes.
- Immediately start preparing the white layer: sprinkle two envelopes of unflavored gelatin over the 1/2 cup cold water and let stand for a few minutes. Pour the condensed milk into a medium bowl. Add one cup of boiling water and stir until smooth.
- Pour 1/2 cup boiling water into the unflavored gelatin and stir to melt. Pour into the condensed milk mixture. Let cool to room temperature.
- Retrieve the blue gelatin from the refrigerator, and very slowly and very carefully pour the milk mixture over the blue gelatin. Place back in the refrigerator to set for at least 30 minutes.
- Immediately begin preparing the red layer: mix the six ounces of red gelatin with one envelope of unflavored gelatin. Add two cups of boiling water and stir until the gelatin dissolves. Set aside to cool to room temperature.
- Retrieve the pan from the refrigerator, and very slowly, very carefully pour the red gelatin over the white layer. Place the pan back in the refrigerator to set for at least 30 minutes.
- Retrieve the pan from the refrigerator. Use a knife to cut the layered sheet into squares, or use a cookie cutter to cut shapes. Use a miniature offset spatula to remove the cut shapes from the pan.
- Store in the refrigerator.

- Add 1-1/3 cups boiling water to blue gelatin mixes in small bowl; stir 3 min. until completely dissolved. Pour into 13x9-inch dish sprayed with cooking spray. Refrigerate 30 min. or until gelatin is set, but not firm.
- Sprinkle unflavored gelatine over 1/4 cup milk in medium bowl; let stand 5 min. Bring remaining milk to boil in saucepan. Remove from heat; stir in sugar. Add to gelatine mixture; stir until gelatine is completely dissolved. Cool 10 min. Pour over blue gelatin. Refrigerate 30 min. or until gelatine is set, but not firm.
- Add remaining boiling water to cherry gelatin mixes in separate small bowl; stir 3 min. until completely dissolved. Cool 10 min. Pour over gelatine layer in dish. Refrigerate 2 hours or until firm. Cut into 24 stars with 2-inch cookie cutter.
