BUFFALO CHICKEN BURGERS

- For the burgers: Melt 9 tablespoons of the butter in a pan, then pour it into a measuring cup.
- Put the ground chicken in a bowl and add 1 tablespoon of the melted butter, 1 tablespoon of the hot sauce and the salt and pepper. Mix and form into 2 patties.
- Set a nonstick pan over medium-low heat and add the oil to the pan. Add the patties to the pan, turn the heat up to medium and cook until they are browned on the first side, about 4 minutes.
- Meanwhile, mix the remaining 8 tablespoons hot sauce into the remaining butter in the measuring cup.
- Flip the patties and put a couple tablespoons of the butter and hot sauce mixture on each. Cook another 4 minutes.
- For the blue cheese dressing: Meanwhile, mix the mayonnaise, sour cream, blue cheese crumbles, vinegar and some salt and pepper in a bowl. Taste and adjust with more vinegar, salt and pepper if needed.
- Add the remaining 2 tablespoons butter to a skillet and heat over medium-low heat until the butter is melted and the skillet is hot. Add the onion rolls cut-side down and toast until golden, about 2 minutes.
- Flip the patties again, put another couple tablespoons of the butter and hot sauce mixture on each patty and cook until the patties are cooked through, about 2 more minutes.
- Spread a little of the butter and hot sauce mixture on the top and bottom buns. Top each bottom bun with a patty, then some sliced celery, blue cheese dressing, blue cheese crumbles, celery leaves and the top buns. Serve with more blue cheese dressing and the celery sticks.
BUFFALO BURGERS
Buffalo is so delicious! I was surprised to see few recipes using it on this site. These burgers are great grilled. Remember, buffalo does not need to be cooked as long as hamburger, you do not want to overcook.

- Preheat grill to medium-high heat.
- Using your hands, lightly shape the ground sirloin into four 1/2-inch thick patties. Try to leave some air in the burger and avoid packing them too densely.
- Season with salt and pepper.
- Lightly drizzle the red pepper quarters with olive oil.
- Cook the burgers on both sides over the hot grill for about 5 to 6 minutes per side for medium burgers.
- At the same time, grill the peppers for 2 to 3 minutes on each side.
- Lightly toast the buns on the grill.
- Serve the burgers on toasted buns with grilled red peppers, slices of sweet white onion and crumbled blue cheese.

- Mix meat, onion, peppers, and garlic together. Mix well. Shape into preferred sized patties.
- Brush the grill with vegetable oil. Next, place the patties onto the grill. Make sure they are place approximately 4 inches from medium heated coals.
- Turn them only once--about 4 - 6 minutes for a medium doneness. **NOTE: You can also broil these as well.Placing the patties about 3 inches from the heat source. Turning only once.**.
- Serve with the hot chile sauce.
- HOT CHILE SAUCE Boil the water, adding the chilis. Boil for 5 minutes and drain.
- Remove the stems and remove from heat. Cool.
- Add this to a blender and add the following: vinegar, mustard, and garlic. Blend until the chiles are finely chopped. On low speed, gradually add the oil. Blend until smooth and creamy.

- Combine the meat, onion and season lightly with salt and pepper.
- With wet fingers, shape into 4 patties for grilling and set aside.
- Mash the cream cheese, blue cheese and butter together with a fork and divide into 4 knobs.
- Stem the tomato and cut it in half. Scoop out the pulp and seeds and sliver the shell. Set aside.
- If cooking over charcoal, secure a strip of bacon around the edge of the burgers with a water-soaked toothpick.
- If cooking indoors, cut the bacon strip in half and put one half diagonally across the side facing down to moisten the meat as it cooks.
- Grill the burgers over medium heat on a charcoal, stovetop or electric grill for 3-4 minutes per side.
- Serve on lettuce-lined buns with a knob of cheese on top and a sprinkling of tomato sliver.

BLACK AND BLUE BURGERS
Very flavorful burgers full of spice and the wonderful flavor of cheese. Great over the charcoal grill, although these can be made indoors at a pinch.

- You will need 1/2 pound blue cheese total (get the block type cheese, not the crumbled stuff in packages).
- Prepare your dressing by crumbling 3 ounces of cheese and mixing it thoroughly with the other dressing ingredients and setting aside to chill (do not do this more than a few hours before).
- Mix together your spice mix in a large shallow bowl or plate and set aside until needed.
- Mix together chuck and round, then separate mixture into 1/3 pound pieces (just over 5 ounces)- you should have 6.
- Divide each piece in half and form into a thin patty and place onto wax paper on whatever platter you are working with.
- Take the 1/3 pound of blue cheese and cut into 6 divided sections (approximate) and place thin slices onto 6 of the patties you have formed.
- Cover these patties with the remaining 6 patties and form a pinched seal around the edges, making it tight.
- Pick up each patty, and gently reform the burger and pat it back out to thinness, if needed; rest them on waxed paper.
- Take patties one by one and coat in the seasoning mixture, not forgetting to coat the side edges and patting them nicely flat when finished; rest on waxed paper.
- Cook over heated coals or on gas grill until it is cooked through or temperature reads 160F (do not press on patties while grilling).
- Allow patties to rest 10-15 minutes after cooking for cheese to settle.
- Serve on split kaiser rolls (may toast them if you like) with appropriate condiments: lettuce, tomato, sliced red onion, and a little blue cheese dressing (instead of mayo; optional).

- Mix Frank's sauce, mayonnaise, cream cheese, and blue cheese in bowl. Chill and hold. Grill burgers to desired temperature. Top with 3 tablespoons to 1/4 cup of mixture and serve.
BUFFALO SAUCE BURGERS STUFFED WITH BLUE CHEESE
Buffalo sauce, a mixture of melted butter and hot sauce, is a big claim to food fame for Buffalo, New York. It is normally served on fried chicken wings (Buffalo wings), but this burger is a great variation of the theme. The recipe is adapted from one published in my local newspaper and credited to David Joachim, author of The Tailgater's Cookbook. It was included in a feature on tailgating, and the idea was to get these ready to grill at home, then grill them at your tailgating affair. The original recipe called for either ground buffalo or ground beef. Since ground buffalo is not available where I live, I used ground beef. I forgot to notice how long prep took, so the time given is a guess. I served these on PaulaG's Recipe #139827--they are excellent and I highly recommend them.

- Melt butter and whisk in hot sauce.
- Mix blue cheese and garlic in a small bowl.
- Using your hands, gently mix beef (or buffalo), celery seed, onion and 1/4 cup hot sauce mixture in a medium bowl until blended. Form into 12 patties, using a light touch; the patties should be about 4 1/2 inches in diameter and no more than 1/2 inch thick.
- Spoon about 2 teaspoons of cheese-garlic mixture in center of 6 patties, then top with remaining patties and press together, sealing edges.
- Cover and refrigerate until ready to grill. (Even if you aren't making these ahead of time, I think they hold together better after a little chill time).
- Heat grill to medium and oil grate.
- Grill burgers about 4-5 minutes on each side, or until cooked to taste. (I'll only eat ground beef cooked well, so I cooked a bit longer.) Brush with remaining hot sauce mixture during last 2 minutes of cooking. Toast buns if you like.
- (I couldn't think of many traditional condiments I wanted on this burger, so I just ate mine with extra buffalo sauce and lettuce).

- For roasted red peppers, place peppers on grill over over gas burner on high for about five minutes, turning occasionally until the pepper skin is very charred. Remove peppers and place in a bowl. Cover with plastic wrap and let steam for ten minutes.
- Remove peppers and peel off skin. It should come off pretty easily and it's okay if some skin is left on. Slice stems off of peppers and remove seeds, then slice.
- Form burgers into quarter pound rounds and make a small indent in each burger with your thumb. Season well with salt and pepper.
- Grill burgers over high heat for 3-4 minutes. Flip burgers, cook for another 2 minutes or so and then add a slice of fresh mozzarella to each burger.
