SUGAR FREE & GLUTEN FREE RED VELVET CAKE
Trying to find an awesome Red Velvet Cake for my gluten free and sugar free customers and this is finally a great cake. It can also be made just gluten free by using the cake flour mixture only found here Recipe #208061

Steps:
- Preheat oven to 350 degree. Grease and flour (2) 9 or 10 inches pans. Sift all dry ingredients together and set aside. Beat butter and sugar in a large mixing bowl until light and fluffy. Add eggs one at a time. Mix in sour cream, vanilla, and coloring. Gradually mix in dry ingredients on low speed until well blended But do not over beat.
- Bake about 40 minutes or until a toothpick inserted in the middle comes out clean.

Steps:
- Beat eggs until fluffy; add sugar gradually.
- Add oil, applesauce, beets & vanilla.
- Sift together the rice flour, potato starch, tapioca flour,cocoa, xanthan gum, salt, & soda; stir into applesauce mixture; mix well.
- Pour into a Bundt pan that has been coated with non-stick spray.
- Bake 55 minutes in 375° oven.
- Cool 10 minutes. Remove from pan.

- Preheat oven to 350 degrees. Spray 3 8-inch round cake pans with non-stick spray and line the bottoms with parchment paper.
- In a large bowl, whisk together the gluten free flour, xanthan gum, granulated sugar, cocoa powder, baking soda, and salt. Try to press out as many cocoa powder lumps as possible then set the bowl aside.
- In a medium bowl, whisk together the eggs, buttermilk, oil, vanilla extract, and the food coloring then whisk in the vinegar.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Add the hot water and mix until the water is completely incorporated into the batter.

- Beat the butter and sugar until well combined. Add the eggs one at a time, beating after each addition.
- Beat in the flour alternately with the buttermilk or yogurt, beginning and ending with the flour. The point is to keep the mixture smooth, which is more easily accomplished if you add the flour and yogurt in portions.
