4 (8 ounce) skin-on red red snapper fillets
1 1/2 cups crushed cashews
2 eggs
1 cup milk
1/3 cup olive oil
2 tablespoons butter
1 lemon
2 ounces white wine
salt and pepper
1/2 can coconut cream, such as coco lopez
2 tablespoons coconut rum
2 tablespoons white wine

Steps:

  • Wash filets and dip each in egg wash (eggs mixed with milk), then roll in crushed cashews until encrusted.
  • Saute in olive oil and butter until golden brown on each side.
  • Add salt and pepper to taste, wine and lemon.
  • Finish in oven, being careful not to overcook.
  • Garnish with rum sauce, carrots and tomatoes.
  • For Sauce: Mix all ingredients in small saucepan, bring to boil and remove from heat.
  • Serve warm.

24 oz red snapper filet
1 c macadamia nuts, chopped fine
1 tsp olive oil
1 tsp thyme, leaves, finley chopped
lemon wedges

Steps:

  • 1. 1. Pre-heat oven to 450 degrees. Pat fish dry. Finely grind 3/4 cup of the nuts in a food processor or by hand, add olive oil and thyme and combine. Spread nut mixture on top of fish filets.
  • 2. 2. Place filets in medium size broiler safe baking dish and bake, uncovered for 10 -12 minutes or until centers are opaque. Meanwhile, coarsely chop rest of nuts.
  • 3. 3. Remove fish from oven and turn on broiler. Top fish with coarsely chopped nuts and place fish under broiler to brown for about one minute, watching carefully. Serve with lemon wedges.

1 Maui onion or other sweet onion, finely diced
1 tablespoon chopped fresh chives
1 tablespoons chopped fresh cilantro
1 teaspoon chopped Japanese pickled ginger
1 tablespoon ginger vinegar from pickled ginger
1/4 teaspoon prepared wasabi paste
2 tablespoons extra-virgin olive oil
2 shiso leaves (available in Japanese markets), cut into thin julienne strips, or 1 dash ground cumin
2 tablespoons ogo seaweed (available in Japanese markets), or julienned cucumber
1 teaspoon hijiki seaweed (available in Japanese markets), hydrated in cold water until tender, or 1 tablespoons julienned cucumber
Salt
Freshly ground black pepper
1 cup chopped unsalted macadamia nuts
4 (6-ounce) onaga fillets (Hawaiian gray snapper), yellowtail, or any other snappper
Ginger Butter, recipe follows
1 pound unsalted butter, softened
1/4 cup finely chopped fresh ginger
Pinch salt
Pinch sugar

Steps:

  • First, make the Maui Onion Relish. In a nonreactive mixing bowl, stir together all the relish ingredients. Cover with plastic wrap and refrigerate for 2 hours. Preheat the oven to 400 degrees F. Lightly grease or oil a baking dish large enough to hold the fish fillets side by side.
  • Evenly spread the chopped macadamia nuts on a large dinner plate. Season a fish fillet with salt and pepper, and brush it evenly on both sides with 1/4 of the butter mixture. Dredge it in the nuts to crust it evenly on both sides, and transfer to the baking dish. Repeat with the remaining fillets, butter mixture, and nuts.
  • Bake the fish fillets until they are cooked through and the nut crust is golden brown, 8 to 10 minutes. Spoon the Maui Onion Relish onto 4 serving plates and, with a spatula, transfer a fillet to each plate, placing it on top of the relish. Serve immediately.
  • Prepare the Ginger Butter by putting all the ingredients in a food processor with the metal blade and processing until smooth. Set aside at room temperature.;

1 large tomato, or 2 plum tomatoes, cut into 1/4inch thick slices

Fresh basil, mint or dill leaves

  • Preheat the oven to 450 degrees. Tear 2 pieces of parchment or aluminum foil, about 12-inch square.
  • Drizzle some olive oil in center of each square and spread with your fingers. Set the filets, skin side down, over the olive oil in the foil and season with salt and pepper. Drizzle more olive oil over fish, then top with tomatoes and then fresh herbs. Drizzle drops more olive oil and season with salt and pepper.

1 whole red snapper or redfish, (about 6 1/2 pounds), cleaned and scaled
2 tablespoons olive oil
2 teaspoons Creole seasoning
1 (3-pound) box kosher salt
1/2 cup chopped fresh parsley leaves
1/4 cup chopped fresh tarragon leaves
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh cilantro leaves
1/4 cup grated lemon zest
2 tablespoons fresh lemon juice
1 tablespoon grated orange zest
2 oranges, juiced (about 1/2 cup)
1 teaspoon freshly ground black pepper
6 cups cooked sticky rice, warm
Fresh Orange and Tomato Salsa, recipe follows
3 cups chopped vine-ripened tomatoes
1/2 cup small diced red onions
1 large fresh jalapeno, seeded and cut into small dice
1/2 cup loosely packed chopped fresh cilantro leaves
1 tablespoon chopped fresh parsley leaves
1/2 teaspoon chopped garlic
2 medium oranges, skin and pith removed and segmented

Freshly ground black pepper
4 tablespoons fresh lime juice
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • With a sharp knife, make 5 slits, at an angle and about 1 1/2 inches apart, on each side of the fish. Rub 1 tablespoon of the olive oil over each side of the fish, then season each side with Creole seasoning. Place the fish on the prepared baking sheet. Combine the kosher salt, herbs, lemon zest, and juice, orange zest and juice, and black pepper in a large mixing bowl. Mix well. Mound the mixture evenly on the surface of the fish, leaving the head and tail uncovered. With your fingers, firmly press the mixture into the flesh. Bake for 1 1/2 hours. Remove from the oven and cool for 2 minutes.
  • With the back of a heavy spoon or a mallet, lightly pound the salt crust to crack it open, beginning at the tail end. Carefully pull off the salt crust. Then, with a small spatula or wide knife, remove the flesh from the bone on the top side of the fish. Remove the back bone, then serve the flesh from the bottom side of the fish. Spoon the rice in the center of each serving plate. Lay the fish on top of the rice. Spoon some of the salsa over each serving.
  • Combine all of the ingredients in a mixing bowl and toss well. Allow the salad to sit for 15 minutes before serving.

1 pound red snapper fillets, cut into 1 1/2-inch cubes
Kosher salt
Freshly ground black pepper
Oil, for deep-frying
Sweet and Sour sauce, recipe follows
1/4 cup small diced onions
2 tablespoons chopped fresh ginger
3 tablespoons canola oil
1/2 cup ketchup
1/2 cup duck sauce
1/4 cup rice wine vinegar
2 to 4 tablespoons raw sugar, or white, brown, or purple
Kosher salt
Freshly ground black pepper

Steps:

  • Mix the cornstarch and flour together. Season the snapper with salt and freshly ground black pepper, and dredge in the flour mixture. Fill a deep pot halfway full with oil. Heat oil to 350 degrees F, and fry fish until golden, toss directly into hot sauce, and serve.
  • Put a small saucepan over medium heat, add oil, onions, and ginger. Saute for 2 minutes. Add vinegar, sugar, ketchup, and duck sauce. Bring to a simmer for 5 minutes, add water to desired consistency if sauce is too thick. Season with salt and pepper.

2 large egg whites
1/2 cup water
2-pound whole red snapper, cleaned

Steps:

  • Preheat oven to 375 degrees. In a bowl blend together the flour, cornmeal, coarse salt, and fresh rosemary. Add the egg whites and the water. Stir to combine. Add more water if necessary to form a stiff dough.
  • On a lightly floured surface roll out the dough. Transfer it to a baking sheet. Wrap the whole red snapper completely in the dough. Press the edges of the dough to seal. Put in oven and bake for 25 minutes.

1/4 cup chopped Italian parsley
1 orange, sliced
1 pound fresh fennel, chopped
2 bay leaves
1 shallot, minced
1 teaspoon red pepper flakes
2 teaspoons fennel seed
1/2 cup extra-virgin olive oil, divided
4 egg whites
1 cup kosher salt

Steps:

  • When cooking with a whole fish you must first be sure that the fish is gutted, your local fish market will do this for you. The skin should be scaled and the gills and fins removed. Leave on the head and tail. Rinse the fish inside and out then pat dry.
  • In a mixing bowl, combine the parsley, orange, fennel, bay leaves, shallot, red pepper flakes, fennel seed, and 1/4-cup olive oil. Stuff the cavity of the fish with 3/4 of the mixture, then spread the remaining 1/4 on the bottom of a roasting pan so the fish will not stick.
  • Transfer the fish to the roasting pan and rub the skin with remaining olive oil. In another bowl, whip the egg whites to a stiff peak, then fold in the salt to make a paste. Smear the salt paste over the entire fish and roast in a preheated 350 degree F oven for 30 to 40 minutes. The egg whites form a hard crust that will crack like a shell. To serve, scoop the flesh from the fish with a spoon.

1/2 cup shredded coconut (unsweetened)
1/2 cup flour

6 tablespoons butter, melted
1/2 teaspoon pepper, freshly ground
1 tablespoon lemon juice, 1/2 of a lemon
3/4 cup macadamia nuts, ground or 3/4 cup almonds
1 tablespoon parsley, minced

Steps:

  • Preheat oven to 450 degrees.
  • Oil a baking pan with 1 tablespoon of the butter.
  • Place the fish in the pan, and sprinkle with pepper and lemon juice.
  • In a small skillet heat the rest of the butter. .

1/2 cup mango, chopped
1/2 cup dry white wine
2 tablespoons sugar
1 teaspoon fresh ginger, peeled and minced
2 limes, juiced
1/4 cup heavy cream
1/2 cup cold unsalted butter, cut into small pieces
salt
black pepper, freshly ground
1/2 cup macadamia nuts, chopped
2 cups panko breadcrumbs
1/2 cup fresh basil
1/2 cup mayonnaise
2 teaspoons sriracha sauce (Thai Garlic Chili Sauce)
36 ounces red snapper fillets
salt
black pepper, freshly ground
canola oil, for sauteing

Steps:

  • In a saucepan, combine the mango, wine, sugar, ginger, and lime juice and simmer over medium heat for 5 minutes, until thick and syrupy. Add the cream, mix well, and remove from the heat. Pour into a blender and blend until smooth (or use an immersion blender). Return to the saucepan and simmer over low heat for 8 minutes, until the mixture thickens slightly. Add the butter, a piece at a time, and stir until incorporated before adding the next piece. Be careful not to boil the sauce, or it will separate. Season with salt and pepper and keep warm.
  • Preheat the oven to 450 degrees.
  • Place the nuts, panko and basil in a food processor and process until fine. Spread on a plate. In a bowl, combine the mayonnaise and Sriracha (chile paste) and mix well. Lightly season the fish with salt and pepper. Evenly spread a light coat of the chile mayonnaise on one side of each fish fillet. Coat the same side evenly with the nut coating.
  • In an ovenproof saute pan or skillet, pour in just enough oil to coat the bottom and heat over medium heat. (Be careful not to heat the pan too hot or the macadamia nuts will burn). Add the fish, crust side down, and saute for 3 minutes, until golden brown. Turn the fish and place in the oven for 5 minutes, until cooked through and firm to the touch.
  • Place the fillets on warmed individual places. Serve with the mango-lime butter.
