Here is another Delicious crispy skinned duck breast recipe served with hoisin plum sauce. Healthy but yummy bok choy and vegetable fried rice.

4 magret duck (Duck Breast skin on. Magret are more expensive but larger than normal breasts so feel free to buy le)
3/4 cup hoisin sauce (I buy blue dragon brand it is the best I have found, some brands can have a very strong flavour)
1/4 cup plum sauce (I buy Sharwood's plum sauce with a hint of ginger again I really like it.)
1 tablespoon peanut oil
8 heads bok choy, medium in size
4 -5 green onions, sliced
1 garlic clove, crushed
1 teaspoon ginger, grated
1 1/2 tablespoons soy sauce
1 teaspoon turmeric
1 1/2 teaspoons sugar
1 1/2 tablespoons fresh coriander, finley chopped
1 tablespoon olive oil
2 teaspoons sesame oil
1 1/2 cups cooked white rice (leave for about 30 minutes to make sure most of the moisture has drained)
4 green onions, sliced
1 large carrot, diced
2 celery ribs, diced
1 small red pepper, diced
80 g shiitake mushrooms, chopped
1/4 cup frozen corn
1/4 cup frozen peas
100 g baby spinach leaves, coarsely chopped
2 -3 teaspoons soy sauce
1 teaspoon sugar

Steps:

  • Prick duck skin all over, heat a non stick fry pan, add duck skin side down and cook until skin is browned and crisp (there will be a lot of fat that drains from skin so keep pouring fat out from time to time).
  • Preheat oven to 180°C, place duck on wire rack in baking dish skin side up and bake for 20-25 minutes or until cooked as desired, let breast stand for 5 minutes before serving. I like to turn the grill on for the last few minutes of cooking to really crisp up the skin.
  • For The Sauce: Combine both sauces in a pan and heat until hot.
  • Bok Choy:.
  • Cut ends off bok choy and pull leaves apart.
  • Heat oil in pan or work add onions, garlic and ginger stir fry a minute, add sugar, soy, turmeric and bok choy stir fry 3-5 minutes until tender; add coriander stir and serve immediately.
  • Vegetable Fried Rice:.
  • Heat oils in a wok. Add carrot, celery, mushrooms and pepper stir fry 2-3 minutes.
  • Add soy sauce, peas, corn, spinach and sugar stir fry a couple minutes more. Finally add rice and stir fry until thoroughly mixed and heated through serve immediately.
  • Serve sliced duck breast with bok choy, fried rice and sauce.

1 (4 to 5-pound) Long Island duck
1 cup honey
2 cup soy sauce
1 cup cold black coffee
1/4 cup finely chopped fresh ginger
1/4 cup lite miso
1/3 cup light brown sugar
1 orange, halved
1 lemon, halved
1 lime, halved
1/4 cup peanut oil
4 heads baby bok choy, halved lengthwise
1 small piece ginger
1 tablespoon mirin
3 tablespoons soy sauce
1/4 cup chicken stock
1 tablespoon lite miso
2 tablespoon cornstarch, dissolved in 2 tablespoons water
1 (12-ounce) bag frozen pitted cherries, thawed and drained
Salt and freshly cracked white pepper

Steps:

  • Using a fork, pierce the duck skin all over to allow the flavor of the marinade to penetrate and the fat to drain. Combine honey, soy sauce, coffee, ginger, miso and brown sugar together in a bowl, stir well to dissolve the brown sugar and miso. Squeeze the citrus juice into the marinade then stuff the cavity of the duck with the citrus halves. Place the duck in a 2 gallon freezer bag, then pour in the marinade. Seal and refrigerate for 24 hours.
  • The next day, remove the duck from the marinade and pat it dry with paper towel. Preheat oven to 450 degrees F.
  • Place the duck on a rack in a roasting pan. Fold the wing tips back and tie the legs together. First, roast the duck for 20 minutes, the high temperature will caramelize the sugars on the outside of the duck and set a rich mahogany color. After 20 minutes, drop the temperature down to 325 degrees F and roast for 1 hour. Duck heaven baby!
  • You can start the bok choy when the duck has about 10 minutes left in cooking. Preheat a large skillet on medium high. Add peanut oil.
  • Saute cut side down for about 1 minute until golden. Discard the oil. Take the back-side of a knife and give the ginger a good whack. Bruising the ginger will release a ton of flavor. Add the ginger to the pan with bok choy then add the mirin, soy, and chicken stock. Stir in the miso, careful not to damage the food.
  • While you have the spoon in your hand, stir in the cornstarch mixture, then let the sauce simmer and thicken for a few minutes. Finish with the fresh cherries, a pinch of salt, and fresh cracked white pepper.

MING TSAI RED ROAST PORK WITH BOK CHOY FONDUE (DAD)

1 bottle red wine
2 cups shaoxing wine, may substitute with 1 cup dry sherry
4 cups thin soy sauce
4 cups of water, make sure to cover pork
12 to 15 pound pork shoulder, bone-in, fat cap on
2 boxes Chinese rock sugar or 2 cups brown sugar
1 large ginger sliced
1 head of garlic, sliced in half
2 bunch scallions
2 star anise
2 Thai bird chilies
2 cinnamon sticks
8 bok choy, halved, cored and cleaned
1/4 cup sambal oelek, as a condiment

Steps:

  • Put all liquid ingredients and sugar in a tall stockpot and bring to a boil. Add pork and reduce heat. When boiling again, turn down to a simmer and skim off the 'scum'. Add the rest of the remaining ingredients, except cabbage. Taste for seasoning; it should be fairly sweet. If not, add more brown sugar. Remember that the taste of the braising liquid will ultimately be the taste of the pork, so make sure it tastes good! Simmer slowly for 6 to 8 hours, or until pork is very soft. Carefully remove the pork, place it on a large platter and cover with foil to keep hot. Strain the liquid and reduce until a syrupy consistency is achieved, this will take 20 to 30 minutes. In the last 10 minutes of reducing, add the bok choy to cook until soft. Place bok choy around the pork and glaze pork with reduction. Serve with side of sambal oelek.;

1/2 cup lobster stock
Lobster knuckle meat from 4 lobsters

  • In a hot saute pan, saute garlic and ginger in butter. Add bok choy, stock and lobster meat. Season and cook until soft. Check for seasoning.

This is a very simple recipe that is quick and easy to do and tastes wonderful. I love duck and cook it all the time, whilst I have made duck with fruit sauces and Asian sauces and they are wonderful. Sometimes I think you can over complicate recipes and they are tasty, but they are time consuming with lots of steps and sometimes simple is the best way to go.

4 duck breasts
2 1/2 teaspoons five-spice powder (depending on the size of breasts.)
2 garlic cloves, crushed
5 tablespoons soy sauce
2 star anise
4 bunches gai lan
2 bok choy
200 ml water
1 teaspoon chicken stock
1 -2 tablespoon honey, depending on personal taste
6 green onions, sliced 2cm long
1 1/2 teaspoons cornflour

Steps:

  • Cut diagonal slits in the skin being careful not to go all the way through to the flesh (not too far apart as these will be the size of slices, you will slice the duck when finished.) Rub five spice over breasts.
  • Heat a pan and add duck skin side down cook for 8-10 minutes to crisp up skin and render fat. Place breasts on a wire rack in an oven proof dish. Cook in pre-heated oven 180ºC for about 25 minutes, or until cooked as desired.
  • Remove duck from oven, allow to rest for about 5 minutes then slice along slits.
  • While the duck is cooking cut the ends off of the bok choy and trim gai lan, in a large pan or wok, add soy, garlic, star anise and gai lan stir-fry a few minutes.
  • Add water, bok choy, chicken stock and sugar stir-fry a few minutes more and then add onions and cook about a minute more remove vegetables to warm serving plates. Mix a little water with the cornflour and add to sauce, thicken slightly. (sauce will not be too thick it is not meant to be.) If not using a wok you will probably have to cook the vegetables longer as regular pans do not get as hot as woks.
  • To Serve: Arrange vegetables on a plate, top with duck breast and drizzle sauce around plate. Decorate with some star anise if desired.

1/2 lb roast duck meat, chopped & Without Skin
1 2/3 cups coconut milk
1 tablespoon red curry paste
5 cherry tomatoes
10 lychees, Pits removed
1/2 cup cherry eggplant
4 kaffir lime leaves, shredded
1/4 cup sweet basil
1 Thai red chili pepper, sliced
1 teaspoon sugar
1/2 teaspoon fish sauce
1/3 cup water
2 cups jasmine rice, Cooked

Steps:

  • Remove leafy stalk end of cherry eggplant. Clean, then crush and soak in salted water to prevent discoloration.
  • In a saucepan, combine 1 cup of the coconut milk and the red curry paste over medium-low heat, stir often until the mixture comes to a slow boil.
  • Add duck meat and stir well. Add the remaining coconut milk and water. Mix well. Return to boil.
  • Stir in eggplant, lychee, chili and tomato.
  • Add sugar and fish sauce, mix well.
  • Add kraffir lime leaves and basil. Stir again and remove from heat.
  • Serve immediately. Spoon over Jasmine rice.
