1/4 tsp cumin
1/4 tsp red pepper flakes
1/16 tsp. Worcestershire sauce

HUMMUS WITH ARTICHOKES

Hummus With Artichokes image

The base hummus recipe is one of my favorite recipes from Mark Bittman's, How To Cook Everything. One day I realized that I didn't have enough olive oil so used the oil from a jar of marinated artichoke hearts. My husband loved it so the next time I added some artichoke as well as the oil to the recipe. We like this combination and hope others do as well! This is excellent with crostini.

ROASTED RED PEPPER HUMMUS IN CUCUMBER CUPS

Roasted Red Pepper Hummus in Cucumber Cups image

Provided by Giada De Laurentiis

Categories     appetizer

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 10

1/2 cup diced jarred roasted red bell peppers
1 tablespoon tahini (sesame seed paste)
2 teaspoons fresh lemon juice (from 1/2 small lemon)
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt, plus extra to season
Pinch cayenne pepper, optional
One 15-ounce can cannellini beans (white kidney beans), rinsed and drained
1 large clove garlic, peeled
2 hothouse cucumbers, ends trimmed
Fresh parsley, cilantro or mint leaves

Steps:

  • For the hummus: In a food processor, combine the peppers, tahini, lemon juice, cumin, salt, cayenne pepper if using, beans and garlic. Blend until smooth, scraping down the sides of the bowl if needed. Season with salt if needed. Transfer the hummus to a small bowl.
  • Run the tines of a fork down the length of each cucumber several times, turning to make ridges about 1/8-inch deep in the skin all the way around. Cut cucumbers crosswise into 1-inch rounds, for a total of at least 12. Using the smaller end of a melon baller or a round measuring spoon, scoop out the center of each cucumber round to form a hollow. Use a small spoon to fill each cup with hummus, mounding slightly over the top. Tuck a small fresh parsley, cilantro or mint leaf into the side of the filling as a garnish.
  • Arrange the cups on a platter and serve.

ROASTED RED PEPPER HUMMUS AND CRUDITE

Roasted Red Pepper Hummus and Crudite image

Many brands of prepared hummus offer a roasted red pepper variety but taking 5 minutes to dress up a plain or a forty spice hummus will result in a much richer dip, bright in color with the added amount of red peppers you are using and bright in flavor with a little extra lemon juice and garlic.

HOT ROASTED RED PEPPER AND ARTICHOKE DIP

Hot Roasted Red Pepper and Artichoke Dip image

This creamy, decadent dip is best served with slices of Italian bread as an appetizer, but is very filling and could be served as part of a main course! I make this in the crock pot so that it can be eaten whenever, but I'm sure it could be made in the oven too!

Middle Eastern style spread for Pita bread. This recipe is very tasty and easy to make. This is a very popular dish in this region. The base is usually Chickpeas and Tahini, but the flavor added to the base vary widely from one chef to the next. Tahini is a sesame paste, you can usually find it in the Mediterranean section of your grocery store.
