1 1/2 lbs mahi mahi fillets, skinned
1 tablespoon water
2 -3 drops liquid smoke
1 tablespoon butter substitute (melted)
1 teaspoon lemon pepper seasoning (Watkins is best)

Steps:

  • Preheat grill to high heat.
  • Cut the mahi-mahi into 4 equal portions. Be sure to remove the skin.
  • Combine the water and liquid smoke in a small bowl. Brush this solution over the entire surface of each piece of fish.
  • Brush the melted butter over the entire surface of each piece of fish.
  • Sprinkle a generous portion of lemon-pepper seasoning on top of each piece of fish, then grill the fish with this side down on the grill. Sprinkle remaining seasoning over the top of each piece.
  • Grill for 5-6 min each side, then serve hot with rice and veggies.
  • 7 Points per serving (1 fillet).

I found a similar recipe on the internet and then I personalized it. I just love Mahi Mahi and this recipe really hits the spot. Simply decadent!

1 lb mahi mahi fillet
12 ounces beer
1 tablespoon lemon juice
6 tablespoons butter (unsalted)
3 cloves garlic, chopped
1/2 teaspoon salt

Steps:

  • Cut fillets into 2 inch chunks and drizzle with the lemon juice.
  • Pour the beer into the bottom of a saucepan (if using fresh lemon juice, toss the leftover lemon rind in with beer) and place a collapsible vegetable steamer over the beer.
  • Bring the beer to a boil, place the fish chunks in the steamer, cover and steam for 5 to 10 minutes, dependent upon the thickness of the fish.
  • The fish will be rubbery if it is overcooked.
  • Meanwhile, heat the butter with the garlic and salt (I heat it slowly until the garlic is no longer raw).
  • Remove the fish from the steamer and discard the beer/liquid/rind.
  • Serve the fish chunks with the garlic butter dipping sauce.

4 mahi mahi fillets (8 oz ea)
1 cup orange juice
2 teaspoons fresh dill
1/2 cup white wine
3 dashes Worcestershire sauce
2 tablespoons chili powder
salt
fresh ground black pepper (to taste )
1 cup shredded red cabbage
1 teaspoon sugar
1 tablespoon red wine vinegar
1/2 cup julienned yellow squash
1/2 cup julienned zucchini
2 teaspoons olive oil
1/4 teaspoon fresh lemon juice
1 teaspoon thyme
1/2 teaspoon salt
fresh ground black pepper
1 teaspoon fresh minced garlic

Steps:

  • Marinate fish for 2 to 4 hours. Dust with seasoning before grilling.
  • Grill on a well oiled grill until opaque, 6 to 7 minutes.
  • Bring 1 cup of water to a boil, add sugar, vinegar and cabbage turn down the heat and let cook for 2-3 minutes. Cook red cabbage separate, as it will discolor other vegetables. Drain and hold warm.
  • Blanch zucchini and yellow squash and drain well(place in boiling water about 1 minute).
  • Heat olive oil and garlic in saute pan over medium high heat. Add zucchini, squash, cabbage, salt, pepper, lemon juice, thyme and saute until everything is heated through. Serve as soon as possible.
  • Place some of the vegetables on each plate, place the fish on top, then scatter a few colorful pieces of vegetables on top of the grilled fish.
  • Enjoy!
