Ingredients

3 cups fresh red currants, washed and stemmed
sugar
6 eggs, separated
1 pinch salt
1/2 cup sugar
1 1/2 teaspoons vanilla

Steps:

Sprinkle a little sugar on currants and stir gently to mix.
Let stand at room temperature 30 minutes, or until syrup begins to form
Meanwhile, beat egg whites and salt until foamy.
Gradually beat in sugar, beating until egg whites form stiff peaks.
Beat egg yolks until thick.
Mix vanilla into egg yolks.
Gently fold egg whites into yolks.
Spoon currants into stemmed glasses, reserving a few for garnish.
Spoon egg mixture over currants.
Top with reserved currants.

6 egg yolks
2 egg whites
6 tablespoons sugar
4 -6 teaspoons brandy

Steps:

Beat the egg yolks and whites with an electric mixer until thick and lemon-colored. Add the sugar gradually, continuing to beat.
Use sherbet glasses, and place 1 tsp of brandy in each. Gently spoon the egg mixture over this.
