RED CABBAGE WITH JUNIPER & PEARS
Swap apple for wedges of pear, which go beautifully with the garlic, juniper and cinnamon in this colourful side dish

Steps:
- Heat the oil in a large heavy-based pan. Add the onions and sauté for about 8 mins. Stir in the garlic and juniper and cook for 1 min more. Add as much cabbage as you can and cook, stirring, until it starts to soften, then make room for more and add the rest with the cinnamon, vinegar, sugar and stock.
- Give everything a good stir, then cover the pan and leave to cook over a low heat for 35 mins, stirring occasionally and checking it isn't catching on the bottom of the pan.
- Add the pears and cook for 10-15 mins more, depending on their ripeness. If freezing, cook for just 5 mins. Leftovers will keep in the fridge for 1 week.

- Heat the oil in a large pan and fry the onion for 5min to soften. Add the garlic, cabbage, sugar, red wine vinegar, juniper berries, allspice and stock, season with salt and freshly ground black pepper and bring to the boil. Reduce the heat, cover and simmer for 30min.
- Add the pears to the red cabbage and cook for a further 15min or until nearly all the liquid has evaporated and the cabbage is tender.

- Put all the ingredients except the pears in a large pan and cover with a tight- fitting lid. Cook on a low heat for 1 hr, then stir through the pears. Cover and cook for 1 hr more until the cabbage is really tender. If at any point the cabbage looks dry, add a splash of water. If there is still liquid in the pan at the end, turn the heat right up to evaporate it. Season with a little salt and serve. The cabbage can be prepared ahead and either chilled or frozen. - Preheat oven to 350°F.
- Heat oil in a large saucepan over medium-high heat. Add bacon and fry until crisp; remove with a slotted spoon and reserve on a paper towel.
- Add onion and sauté 3-5 minutes, then add garlic and cabbage. Cook 3-5 minutes, then add vinegar, pear and caraway seeds. Transfer to a 9x13 -inch baking dish and bake for 30 minutes or until cabbage is just soft.

- Put the cabbage, pears, ginger, stock and vinegar into a pan. Bring to the boil, then reduce heat. Cover, then gently cook, stirring occasionally, for 40 mins. Stir in the walnuts.
- Split the pork fillet almost in half down its length, then open out like a book. Rub on all sides with the oil and smear with mustard. Grill for 15 mins, turning once, until the pork is browned and just cooked. Cover with foil, rest for 2 mins, then slice and serve with the cabbage.

CROCK POT BAKED SPICED RED CABBAGE WITH APPLES OR PEARS
A delicious recipe using red cabbage, fragrant spices & apples or pears; whilst this is happily cooking away, the spicy smell pervades the kitchen & indeed the rest of the house and heralds the start of my festive baking & freezing season - who needs expensive pot-pourries! Not only is this dish delectable to eat alongside turkey, pork, beef and hams in particular - but the colour is just gorgeous, a rich jewelled ruby red! This cabbage can be kept warm for long periods, reheated and also freezes very well, making it a very well behaved recipe!!

- Discard outer leaves of the red cabbage and ut into quarters. Cut out the central woody root and then shred the quarters very finely. Place in a bowl. Cut the apples or pears into quarters, core them & then slice into fine dice and set aside in another bowl.
- Place peeled and diced onions into another bowl & make sure all the other ingredients are measured and to hand!
- If cooking in a conventional dutch oven or Le Creuset type casserole dish, turn oven on to 180 C or 360°F It can be cooked on top of the stove too.
- For cooking in the crockpot - take the inner crock out and start layering the ingredients: Red cabbage, then salt & pepper; Apples or pears, onions & garlic, then the spices & brown sugar;keep layering this way until everything has been used up.
- (If you would like it slghtly spicier, add a little more spices, but no more than 1 teaspoon per spice, as it will be too spiced & will detract from the apple/pear & red cabbage flavours!).
- Dot the top of the red cabbage with the butter and pour over the red wine vinegar.
- Season once more with salt & pepper and cook for 6 to 12 hours on High in the crockpot, until everything has broken down, is soft and it is a rich red colour.
- For conventional cooking - cook for about 2 - 2 1/2 hours at 180 C or 360°F I.
- It can be cooked on the stove top too; takes about 2 - 3 hours on a low heat, just a slow simmer.
- Pears can be used as well, and I sometimes add a handful of cranberries for a really festive touch!

- In a large Dutch oven or heavy-bottomed pot, heat the butter over medium-low heat. Add the onions, and cook for 5 minutes, or until the onions begin to soften.
- Add water, cider vinegar, and honey to the onions and butter, and stir to combine. Add the cabbage, pear slices, salt, pepper, and ground cloves, and gently mix everything together. It may look dry at this stage, but do not add extra liquid at this point because the cabbage and pears will create more liquid as they cook.
