HOT PEPPER JELLY BBQ SAUCE
A sweet but spicy BBQ Sauce. Just thick enough to slab on any meat over the grill or in the oven. The whole family enjoyed the stickiness and flavor. Brush sauce onto meat of your choice. Sweet, but a touch of hotness, too. I found this to be very enjoyable on ribs. Was able to do a 8-rib rack, but it can do another one; I just like it thick. This would be enough for 12 chicken quarters. Very easy.

RED BEANS AND JELLY BBQ SAUCE

- Preheat the oven to 350 degrees F.
- BBQ jelly:
- Whisk all of the ingredients together in a mixing bowl and set aside until needed.
- In a 2 gallon stock pot over high heat, add the grapeseed oil and the onions, pepper and celery. Cook until the onions become translucent, about 15 minutes. Add the beans, garlic and andouille and cook for 5 more minutes. Remove from the stove and add the thyme, parsley, Cajun spice and the chicken stock. Pour the entire bean mixture into a casserole dish, and stir in the BBQ jelly. Bake for 20 minutes. Remove from the oven and serve.
- Serving options: Grated cheese can be added before baking or before serving.

My company had a Mardi Gras party and I wanted to make a flavorful red beans and rice recipe that everyone would love!

- Combine sausage, half the onion, half the green bell pepper, half the jalapeno pepper, water, chicken bouillon, garlic and herb seasoning, Cajun seasoning blend, red pepper flakes, and bay leaf in a large stockpot; Bring to boil and cook, stirring occasionally, until liquid is reduced by half, 15 to 20 minutes.
- Mix kidney beans, tomatoes, remaining onion, remaining green bell pepper, and remaining jalapeno pepper into the sausage mixture; season with salt. Bring to a boil, reduce heat, and simmer until kidney bean mixture is thickened, 15 to 20 minutes. Remove and discard bay leaf.
- Spoon 1/2 cup cooked rice into 6 serving bowls; top with kidney bean mixture.

BBQ RED BEANS
Spicy and a tang of vinegar. Awesome beans, but a bit vinegary. To make it suit my own personal tastes, I added 2 (16 oz.) cans of diced tomatoes and 2 more (16 oz.) cans of beans. My husband insisted I add 1/2 pound of browned ground pork sausage. I also add a teaspoon of baking soda because I've been told it lets the "air" out of beans. Used kidney beans they took several hours of simmering to get tender enough--next time I will try the pink beans. Those of you with a tender palette, beware of the cayenne pepper and use accordingly! What I ended up with was an awesome pot of BBQ Beans.

- In 6- to 10-quart pan over medium heat, melt butter.
- Sauté bacon, onion and celery until vegetables often, about 15 minutes.
- To pan add Barbecue Sauce, ale, Worcestershire, brown sugar, dry rub seasoning (Recipe #33812), Cajun seasoning, garlic powder, and liquid smoke.
- Bring to a boil.
- Reduce heat to simmer and add tomato paste.
- Stir occasionally and cook sauce for 15 minutes more.
- Add beans and simmer, stirring frequently, for 1 hour.
SPICY-SWEET RIBS AND BEANS CROCK POT
I found this recipe in Southern Living! Yummy! I've prepared this the night before on low to have done for an early dinner! I did tweak it. The optional ingredients were added to the original recipe from Southern Living.

- Place beans in a 5-quart electric slow cooker; set aside.
- Cut ribs apart; sprinkle with garlic powder, salt, and pepper.
- Place ribs on a broiling pan. Besides browning for taste this removes some of the fat.
- Broil 5 1/2 inches from heat 18 to 20 minutes or until browned, turning once.
- Add ribs to slow cooker, and sprinkle with onion, garlic, and pepper.
- Combine jelly, barbecue sauce, and hot sauce in a saucepan; cook over low heat until jelly melts. (I just added right to the beans and it melted in with no problem).
- Pour over ribs; stir gently.
- Cover and cook at HIGH 5 to 6 hours or at LOW 9 to 10 hours.
- Remove ribs.
- Drain bean mixture, reserving sauce.
- Skim fat from sauce.
- Arrange ribs over bean mixture; serve with sauce.
- Serve on a bed of rice.

- In a large saucepan combine olive oil, kidney beans, tomato sauce, 1/2 cup water, oregano, basil, thyme, salt, pepper and 2 teaspoons adobo. Simmer on low heat.
- Meanwhile, bring 4 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes, or until rice is cooked and all liquid is absorbed. Stir in remaining 3 teaspoons adobo. Serve beans over the rice.
