VEGETARIAN BEAN AND CHEESE ENCHILADAS
A few notes: Scale this recipe up or down as needed. For a 10-inch square or round baking dish, these proportions are about right. Use more or less sauce if you are using a larger or smaller pan. I am using this tart pan here. For a 9x13-inch pan, I imagine using 1.5 times this recipe will be about right. I am partial to using flour tortillas, which is not traditional, but I find them to be more flavorful. When I have a stash of Caramelo tortillas on hand, that is my preference. When I don't, I look for the tortillas made from a blend of flour and corn (Trader Joe's, Whole Foods) or I make them from scratch (this one is made with sourdough starter or discard). If you are using Caramelo tortillas, char them on one side in a skillet. If you are using standard flour tortillas, warm them in a skillet before using - this makes them more pliable and therefore easier to roll. The success of this recipe relies on using super flavorful black beans. This is my favorite way to prepare black beans: Simplest Slow Cooker Black Beans. If you are using canned beans, consider draining and rinsing them, then placing them in a pot with enough water to cover, a healthy splash of olive oil, a bay leaf, some crushed red pepper flakes, a good pinch of salt, and a clover of garlic. Simmer gently for 15-20 minutes or until the beans have taken on some flavors from the broth. See notes in the post above for freezing the unbaked enchiladas.

- Heat the oven to 425ºF.
- In a 10-inch baking dish (see notes above regarding other vessels), spread 1/2 cup of the enchilada sauce.
- Place a tortilla on work surface. Spread 2 to 3 tablespoons of beans across the center. Top with a light sprinkling of cheese. Fold the tortilla in half; then roll into a coil (see video for guidance with the rolling). Transfer to the sauced baking dish, seam side down. Repeat with the remaining tortillas until you have filled the dish.
- Spread another 1/2 cup enchilada sauce over top. Sprinkle the cilantro and scallions over top. Top with the remaining cheese. (At this point, you can cover the dish and place it in the fridge for up to 24 hours.)
- Transfer pan to the oven (uncover it if you stashed it in the fridge) and bake for 15 to 20 minutes or until some of the cheese is beginning to blister.
- Let cool briefly, then serve.
BEAN TORTILLA CASSEROLE
This hearty Tex-Mex dish is meatless and easy to make-ahead -- two great reasons to add it to your dinner lineup.

- In a medium pot, heat oil and garlic over medium and cook until fragrant, 2 minutes. Add beans and 3/4 cup water and bring to a simmer until beans are very tender, about 5 minutes. Mash slightly and season with salt. Meanwhile, in a blender, puree diced tomatoes with cilantro.
- Lay 4 tortillas in the bottom of an 8-inch square baking dish. Top with one-third of the tomatoes, half the bean mixture, and one-third of the cheese. Repeat, using 3 tortillas. Top with remaining 3 tortillas, remaining tomatoes, and cheese. Cover with foil and bake (or refrigerate up to 8 hours).
- Preheat oven to 450 degrees. Bake, covered, until cheese is melted, about 15 minutes; remove foil, reduce oven to 350 degrees, and bake until heated through and cheese is browned, 20 minutes. Serve with sour cream.

TORTILLA, BEAN AND CHEESE CASSEROLE ("ENFRIJOLADAS")

- Preheat the oven to 350 degrees F.
- Put the drained beans and chicken broth in a large bowl.
- In a saute pan, heat the olive oil over medium-high heat. Add the onion, tomato, chile, and garlic. Saute until the onion is soft, about 5 minutes. Rub the oregano, between palms of your hands and sprinkle over the beans. Add salt and pepper, to taste. Add the beans and broth to the pan and simmer for 10 minutes. Cool the beans for about 5 minutes before putting them in the blender. Carefully, pour the mixture into a blender and puree. Return the pureed mixture to the pan and gently reheat over medium-low heat, stirring frequently.
- Using tongs, pass the tortillas 1 by 1 through the refried bean sauce until they are somewhat softened and coated on both sides with the sauce. Set aside on a plate. Fill each tortilla with 1/4 cup of shredded cheese. Fold in half and arrange them, overlapping, in a 9 by 13-inch baking dish. Top with an additional 1 to 1 1/2 cups of the bean sauce, just enough to cover the beans but allow the edges of the folded tortillas to show. Bake until cheese is melted about 10 to 15 minutes.
- To serve, drizzle with Mexican sour cream lengthwise in a 2-inch thick strip down the center of the dish. Top with 8 overlapping red onion rings.
BEAN AND CHEESE TOASTERDILLA

Once you get the hang of folding them, they are a breeze to put together and something the kids can make too. Serve with sour cream and salsa.

- Lay tortillas flat on a clean work surface. Spread refried beans down the middle third from top to bottom, leaving a 1-inch space halfway down to allow for a fold. Sprinkle cheese on top, lightly pressing into the beans.
- Fold the left side over the beans, then the right side on top, so the two sides are overlapping in the middle. Fold in half vertically so the bottom edge meets the top edge.
- Place the quesadillas into the toaster slots and set the toaster to medium heat. Toast for 1 cycle. Carefully remove quesadillas and reverse the vertical fold, so that the inside is now the outside. Return to the toaster and toast until lightly browned, about half a toasting cycle.
- Carefully remove the hot quesadillas to a plate. Cut in half at the fold to make 4 pieces.

- Heat the oil in a large skillet.
- Add the chopped onion and saute for 3 to 5 minutes.
- Add the garlic and chile and cook for 1 minute.
- Put all the beans into a bowl, mash with a potato masher, then stir into the pan with the cilantro.
- Stir in the bouillon.
- Cook the beans, stirring, for 5 minutes, until soft.
- Place the tortillas on a cookie sheet and heat through in a warm oven for 1 to 2 minutes.
- To make the relish, put all of the ingredients into a bowl and mix together well.
- Spoon the beans into serving dishes and top with the cheese- Season well.
- Roll the warm tortillas and serve with the relish and beans.

- Heat the oil in a large pan and cook the onion for 2 mins. Add 1 can of the beans and heat for a further 2-3 mins, while mashing into the onions with a masher or fork to make a rough paste.
- Add the remaining can of beans, the tomatoes, courgettes, paprika and 5 tbsp water. Cover and very gently simmer for 10 mins until thickened and pulpy, stirring occasionally. Season to taste with lime juice, salt and pepper, then stir in the coriander. Warm the flour tortillas in a dry frying pan, then lay out with the chilli beans, shredded lettuce, sliced cucumber and soured cream dip. Ask everyone to help themselves: fill, roll and eat!
