PARKIN
Parkin is a traditional ginger cake from Northern England flavoured with syrupy molasses, oatmeal and warm spices. A lovely teatime treat!

Steps:
- Heat oven to 160C/140C fan/gas 3. Butter a deep 22cm square cake tin and line with baking parchment. Beat the egg and milk together with a fork.
- Gently melt the syrup, treacle, sugar and butter together in a large pan until the sugar has dissolved. Remove from the heat. Mix together the oatmeal, flour and ginger and stir into the syrup mixture, followed by the egg and milk.
- Pour the mixture into the tin and bake for 50 mins - 1 hr until the cake feels firm and a little crusty on top. Cool in the tin then wrap in more parchment and foil. Keep for up to five days before eating if you can - it'll become softer and stickier the longer you leave it, up to two weeks.

GRANNY'S GINGERBREAD
This delicious, traditional cake is so moreish - when testing this recipe, we couldn't eat it fast enough! It's sticky but light in texture, not too dense.

Steps:
- Preheat the oven 180C/160C Fan/Gas 4. Line a 30x23x4cm/12x9x1½in traybake tin with baking paper.
- Mix the flour, bicarbonate of soda, ginger and mixed spice in a large bowl.
- Gently heat the butter, treacle, syrup and sugar together in a small saucepan until the butter has just melted. Set aside to cool slightly.
- Pour the butter mixture into the dry ingredients, add the egg and beat with a wooden spoon. Gradually pour in the milk and beat until smooth.
- Pour into the tin and bake for about 35 minutes, or until dark golden and springy to the touch. Leave to cool in the tin for 10 minutes, then remove from the tin and place on a wire rack to cool completely.
MARY'S PRUNE CAKE
This is a recipe given to me years ago by my Mother-in-law. A very sweet, dense cake my husband grew up with and to this day still requests.

Steps:
- For the cake: Blend sugar, oil and eggs.
- Add dry ingredients altering with the milk.
- Add vanilla, nuts and prunes.
- Bake in a 13x9x2" pan at 300 degrees for 45-60 minutes.
- While hot and still in pan pour icing over the cake.
- For the icing: Mix all ingredients in saucepan and bring to a boil.
- Remove from heat and pour over cake.
- Use fork to pierce holes in cake to absorb icing.
