RAVIOLI & ZUCCHINI LASAGNA

Ravioli & Zucchini Lasagna image

Found this on MSN when they did a daily special on zucchini recipes. Since my garden overfloweth with squash about this time of year I saved it here for safe keeping.

Provided by MsSally

Categories     One Dish Meal

Time 40m

Yield 6 serving(s)

Number Of Ingredients 8

2 medium zucchini, cut lengthwise into 1/4-inch-thick slices (about 1 pound total)
1 (26 ounce) package cheese ravioli (frozen large)
3 teaspoons olive oil
1 small onion, chopped
8 ounces lean ground beef (90% fat free)
1 (26 ounce) jar tomato and basil pasta sauce
1 cup 2% mozzarella cheese (shredded)
1/4 cup lowfat parmesan cheese

Steps:

  • Preheat oven to 375°F Line cookie sheet with paper towels. Grease 2-quart ceramic baking dish.
  • Heat large covered saucepot of water to boiling over high heat. Add zucchini and cook 5 minutes. With tongs or slotted spoon, remove zucchini to prepared cookie sheet to drain. Return water to boiling. Add ravioli and cook until ravioli rise to the top.
  • Meanwhile, in 3-quart saucepan, heat 2 teaspoons oil over medium heat. Add onion and cook 8 to 10 minutes or until tender and lightly browned; transfer to small bowl. In same saucepan, in remaining 1 teaspoon oil, cook beef over medium-high heat 3 to 4 minutes or until browned, breaking up beef with side of spoon. Stir in tomato sauce and onion; heat to boiling.
  • Drain ravioli; return to saucepot. Add meat sauce to ravioli in saucepot and stir until combined.
  • In prepared baking dish, arrange half of zucchini; top with half of ravioli, then half of mozzarella and half of Parmesan. Repeat layering all ingredients. Bake 20 minutes or until hot in the center and golden and bubbly on top.

CHEESY ZUCCHINI PACKETS WITH ROASTED TOMATOES

Cheesy Zucchini Packets with Roasted Tomatoes image

Thin strips of zucchini sub in for gluten-packed pasta dough in these baked triple cheese-stuffed raviolis. If you don't have a mandoline, a simple vegetable peeler makes perfect zucchini ribbons.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h20m

Yield 4 servings

Number Of Ingredients 10

4 large zucchinis (about 3 pounds)
Kosher salt and freshly ground black pepper
12 medium plum tomatoes (about 3 pounds), halved crosswise and tops trimmed
2 teaspoons Italian seasoning
2 tablespoons extra-virgin olive oil, plus more for drizzling
1 cup whole-milk ricotta (about 10 ounces)
1 cup shredded mozzarella (about 8 ounces)
1 ounce herbed goat cheese
Zest of 1/2 lemon plus juice of 1 lemon
4 cups baby arugula

Steps:

  • Preheat the oven to 425 degrees F. Put a rack on a baking sheet.
  • Use a mandoline or vegetable peeler to make ribbons from the entire length of each zucchini, as wide as possible (the first few may be too skinny). Make 48 ribbons total (you should get 12 from each zucchini). Lie the ribbons flat on the rack on the baking sheet (it's ok if they overlap slightly) and sprinkle with 1 teaspoon salt. Let sit for 10 minutes, then pat completely dry with paper towels.
  • Put the tomatoes in a large bowl and toss with the Italian seasoning, 1 tablespoon of the olive oil, 1 teaspoon salt and a few grinds black pepper. Arrange the tomatoes cut-side down in a 9-by-13-inch baking dish. Bake until soft to the touch and some of the juices have been released, about 25 minutes.
  • Meanwhile, mix the ricotta, mozzarella, goat cheese, lemon zest, 1 teaspoon salt and a few grinds black pepper in a medium bowl. Lay out 2 zucchini ribbons lengthwise and slightly overlapping, then top with 2 more ribbons crosswise and slightly overlapping, to make a cross. Spoon a heaping tablespoon of the cheese mixture in the middle of the zucchini cross. Tightly fold the zucchini over the cheese mixture one ribbon at a time, alternating between the crosswise strips and the lengthwise strips, so you end up with 1 zucchini square. Repeat with the remaining ribbons and filling. Drizzle with the remaining tablespoon olive oil and season with salt and pepper.
  • Put the zucchini packs on top of the roasted tomatoes and bake until the zucchini is softened and the cheese is melted, 10 to 12 minutes.
  • Meanwhile, toss the arugula with the lemon juice and divide among 4 plates. Spoon the tomatoes and zucchini onto the plates and drizzle with olive oil.

ZUCCHINI LASAGNA

Zucchini Lasagna image

Provided by Ree Drummond : Food Network

Time 1h40m

Yield 8 servings

Number Of Ingredients 14

1 tablespoon olive oil
One 20-ounce package cremini mushrooms, sliced
2 cloves garlic, minced
15 ounces spinach, rinsed and drained
3 large zucchinis (about 1 1/2 pounds)
1 pound mozzarella
6 fresh basil leaves
2 tablespoons fresh flat-leaf parsley leaves
3 cups low-fat cottage cheese
1 cup freshly grated Parmesan
2 eggs, beaten
Salt, to taste
Freshly ground black pepper, to taste
Two 24-ounce jars store-bought marinara sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat a large skillet over medium-high heat. Add the olive oil and mushrooms and saute until lightly browned, about 10 minutes. Stir in the garlic. Add the spinach and cook, stirring, until it wilts. Remove from the heat and set aside.
  • Meanwhile, trim the ends of the zucchini. Using a knife, carefully slice the zucchini lengthwise into thin strips, about 1/16 inch thick. If the zucchini looks watery, lay the slices on paper towels to absorb excess moisture before using.
  • Grate the mozzarella cheese and set aside.
  • Cut the basil into a chiffonade by stacking the leaves on top of one another, rolling them tightly and then cutting across. Finely chop the parsley. In a medium bowl, combine the herbs, cottage cheese, 1/2 cup of the Parmesan, the eggs, salt and pepper and stir well.
  • To assemble the lasagna, place a third of the mushrooms and spinach mixture over the bottom of a 13-by-9-inch baking dish. Spoon a layer of marinara on top and cover with half of the zucchini strips, carefully overlapping the edges. Spoon half of the cottage cheese mixture onto the zucchini and spread to distribute evenly. Sprinkle half the mozzarella on top of the cottage cheese mixture. Repeat the process above, layering the mushrooms and spinach, marinara, the remaining zucchini strips, cottage cheese, and mozzarella into the dish. Top with the remaining mushrooms and spinach, followed by a final layer of marinara.
  • Sprinkle the remaining 1/2 cup of the Parmesan over the top and bake until the lasagna is hot and bubbly, about 40 minutes. Allow to stand for 35 minutes before cutting into squares.

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 12

3 tablespoons butter
1/2 cup thinly sliced onions
2 cups fresh corn kernels (from about 2 ears) or frozen corn, thawed
1 teaspoon chopped fresh thyme
3 cloves garlic, minced
About 1 tablespoon chopped canned chipotle chiles in adobo, plus 1 tablespoon adobo sauce

Yield 4 to 6 servings

Number Of Ingredients 13

One 20-ounce package refrigerated cheese ravioli, such as Buitoni family size
1 tablespoon olive oil
2 cloves garlic, sliced
One 28-ounce can whole plum tomatoes
1 sprig fresh basil plus 1/2 cup torn, and extra for garnish
Kosher salt and freshly ground black pepper
Pinch granulated sugar
One 15-ounce container ricotta cheese
1/4 cup grated Parmesan
1 large egg

  • Lightly mist a medium rectangular or oval baking dish (about 9-by-11-inch) with nonstick cooking spray. Lay half the ravioli in the bottom of the dish (the ravioli will be layered on top of each other). Remove the sprig of basil from the sauce. Spread half the ricotta mixture over the ravioli and top with half the sauce and half the grated cheese. Repeat with the remaining ravioli, ricotta and sauce. Cover with aluminum foil and bake until bubbly, about 45 minutes. Remove the foil and sprinkle with the remaining cheese. Continue to bake until the cheese is melted, about 10 minutes. Let stand at least 10 minutes. Garnish with extra torn basil. Slice and serve with a green salad.
