Southern Ratatouille (a.k.a. - Stewed Squash and Tomatoes) image

2 tablespoons olive/vegetable oil
1 medium onion
4 garlic cloves
1/2 lb yellow summer squash
1/2 lb zucchini
28 oz can diced tomatoes
salt
pepper
3 to 4 tablespoons chopped basil

Steps:

  • Coarsely chop onion. Half squash and zucchini and slice into 1/4 inch slices.
  • Heat 2 tablespoons oil in large dutch oven over medium heat. Add onion and saute until translucent.
  • Peel and mince garlic, add to pot. Saute 1 minute.
  • Add squash, zuchinni, and canned tomatoes with juice. Salt and and pepper to taste.
  • Cook 10 to 15 minutes, or until squash reaches desired tenderness. Add chopped basil and serve.

Microwave Ratatouille image

Using the microwave to cook rounds of eggplant, summer squash and tomatoes arranged prettily in a pie dish takes far less time (and olive oil) than does traditional ratatouille, a Provencal appetizer or side dish that calls for dicing and sauteing each vegetable separately. You won't have to stand over the hot stove, either, making it the perfect dish for the dog days of summer, when the vegetables are at their peak. It is delicious served warm or at room temperature.

1 medium yellow onion, sliced 1/4 inch thick
2 cloves garlic, minced
3 oil-packed sun-dried tomatoes, chopped
1/4 cup extra-virgin olive oil
1 teaspoon chopped fresh thyme (from about 3 sprigs)
Kosher salt and freshly ground black pepper
1 small eggplant, peeled in alternating stripes, sliced into 1/4-inch-thick rounds (about 6 ounces)
1 small zucchini, sliced into 1/4-inch-thick rounds (about 4 ounces)
1 small yellow squash, sliced into 1/4-inch-thick rounds (about 4 ounces)
2 plum tomatoes, sliced into 1/4-inch-thick rounds (about 8 ounces)

Steps:

  • Toss the onion, garlic, sun-dried tomatoes, 1 tablespoon of the olive oil, 1/2 teaspoon of the thyme, 1/2 teaspoon salt and a couple grinds of pepper in a microwave-safe 9-inch pie dish. Cover with a piece of wax paper. Microwave on high (at 100 percent power) until the onions are soft and translucent, 7 minutes in an 1,100-watt oven or 10 minutes in a 700-watt oven. (When removing the wax paper, be careful to avoid the hot steam.) If the onions are still a little raw, microwave again, covered, in 30-second increments.
  • While the onions cook, toss the eggplant, zucchini and yellow squash slices with 2 tablespoons of the remaining olive oil, the remaining 1/2 teaspoon thyme, 1/2 teaspoon salt and a few turns of black pepper in a large bowl. Add the plum tomato slices, and gently toss.
  • Alternating vegetables, shingle slices in a circular pattern over the cooked onions in the pie dish. Sprinkle lightly with salt. Cover with wax paper. Microwave on high (at 100 percent power) until the vegetables are soft, 9 minutes in an 1,100-watt oven or 14 minutes in a 700-watt oven. If there is any resistance when you pierce the vegetables with a paring knife, microwave again, covered, in 30-second increments. Microwave, uncovered, on high (at 100 percent power) for 3 minutes in an 1,100-watt oven or 4 minutes in a 700-watt oven to evaporate excess moisture. Drizzle with the remaining tablespoon of olive oil.

My favorite way to serve this ratatouille is with crepes. Very delicious. I also add a mixed green salad on the side, and some French bread with butter for a wonderful meal. It makes a large batch, but I found that it freezes really well for future use.

2 onion, sliced into thin rings
3 cloves garlic, minced
1 medium eggplant, cubed
2 zucchini, cubed
2 medium yellow squash, cubed
2 green bell peppers, seeded and cubed
1 yellow bell pepper, diced
1 chopped red bell pepper
4 roma (plum) tomatoes, chopped
½ cup olive oil
1 bay leaf
2 tablespoons chopped fresh parsley
4 sprigs fresh thyme
salt and pepper to taste

Steps:

  • Heat 1 1/2 tablespoon of the oil in a large pot over medium-low heat. Add the onions and garlic and cook until soft.
  • In a large skillet, heat 1 1/2 tablespoon of olive oil and saute the zucchini in batches until slightly browned on all sides. Remove the zucchini and place in the pot with the onions and garlic.
  • Saute all the remaining vegetables one batch at a time, adding 1 1/2 tablespoon olive oil to the skillet each time you add a new set of vegetables. Once each batch has been sauteed add them to the large pot as was done in step 2.
  • Season with salt and pepper. Add the bay leaf and thyme and cover the pot. Cook over medium heat for 15 to 20 minutes.
  • Add the chopped tomatoes and parsley to the large pot, cook another 10-15 minutes. Stir occasionally.
  • Remove the bay leaf and adjust seasoning.

  • Slice the eggplant, tomatoes, squash, and zucchini into approximately ¹⁄₁₆-inch (1-mm) rounds, then set aside.
  • Make the sauce: Heat the olive oil in a 12-inch (30-cm) oven-safe pan over medium-high heat. Sauté the onion, garlic, and bell peppers until soft, about 10 minutes. Season with salt and pepper, then add the crushed tomatoes. Stir until the ingredients are fully incorporated. Remove from heat, then add the basil. Stir once more, then smooth the surface of the sauce with a spatula.
  • Arrange the sliced veggies in alternating patterns, (for example, eggplant, tomato, squash, zucchini) on top of the sauce from the outer edge to the middle of the pan. Season with salt and pepper.
  • Make the herb seasoning: In a small bowl, mix together the basil, garlic, parsley, thyme, salt, pepper, and olive oil. Spoon the herb seasoning over the vegetables.
  • Cover the pan with foil and bake for 40 minutes. Uncover, then bake for another 20 minutes, until the vegetables are softened.
  • Serve while hot as a main dish or side. The ratatouille is also excellent the next day--cover with foil and reheat in a 350˚F (180˚C) oven for 15 minutes, or simply microwave to desired temperature.

We are getting a lot of squash and tomatoes from our CSA and our garden these days. I improvised this for a tasty, quick dinner that uses both. The butter is a bit of an indulgence, but it's essential if you want a thick, tomato base for the stew.

16 ounces penne pasta
1/4 cup butter
1 small vidalia onions or 1 small other sweet variety onion, diced
1 teaspoon sugar
1 small green bell pepper, diced
3 -5 garlic cloves, minced (you can use more or less, depending upon personal preference)
1/4 cup pine nuts
2 medium yellow squash, quartered and sliced very thin (you can also substitute zucchini, eggplant or a combination thereof)
1/4 cup white wine
2 large ripe tomatoes
1 tablespoon tomato paste
3 tablespoons water
salt and pepper, to taste
1/2 cup fresh basil, chopped or torn into thin strips
1 tablespoon fresh oregano (the whole leaves are fine)
1 cup grated parmesan cheese

Steps:

  • Cook the pasta according to package directions.
  • While the pasta is cooking, melt the butter in a large saute pan over medium heat and add the onion. It's important to keep the butter from browning. When the onion begins to turn translucent (after about 2-3 minutes), add the sugar and continue sauteeing the onion, stirring frequently, until it just begins to caramelize (about 5-7 minutes).
  • Add the bell pepper, garlic and pine nuts and continue cooking over medium heat for another minute or so. Stir frequently to keep the garlic from browning.
  • Add the squash and white wine, stirring to deglaze the pan and combine the ingredients.
  • Mix the tomato paste and water until well-combined. After another minute or so, once the squash has begun to "wilt," add the tomatoes, oregano and tomato paste and water mixture, stirring to combine the ingredients and coat them with the tomato paste and water mixture. Season with salt and pepper to taste, cover and cook for an additional 5 minutes.
  • Stir in the basil just before serving.
  • Serve over the pasta with a generous topping of Parmesan cheese.
