Kind of like a cobbler. Really good, I need all the rhubarb recipes I can find because it's one of my favorite dessert flavors. This is super easy. From the San Francisco Chronicle Cookbook.

1 1/2 lbs fresh rhubarb, cut into 1 inch pieces
3/4-1 cup sugar (depending on sourness of fruit)
4 tablespoons unsalted butter, cut into pieces
1 cup cake flour
3 tablespoons sugar
1/2 teaspoon salt
1 cup heavy cream, whipped plus
2 tablespoons heavy cream, whipped

Steps:

  • Preheat oven to 375 degrees F.
  • Grease a shallow 8x12 baking dish with butter, set on a baking sheet.
  • Spread the chopped rhubarb over the bottom of the baking dish.
  • Sprinkle with the sugar, coating evenly.
  • Dot with the butter.
  • Sift the flour, sugar and salt into a mixing bowl, gently stir in the cream to make a sticky dough Spread this mixture over the fruit, covering evenly.
  • Bake for 45 minutes or until the fruit is bubbling and the top is golden.
  • Serve with cream, ice cream or custard.

This is a tasty combination of sweet and tart. I love rhubarb but the raspberries add another dimension that is really good. Although this recipe calls for fresh rhubarb, I think frozen would work well here.

1 1/2 cups flour
1 cup quick oats
1 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter
1 (12 ounce) package frozen raspberries in light syrup, thawed and undrained
1/2 cup sugar
3 tablespoons cornstarch
2 cups chopped rhubarb
whipped cream (to garnish) or ice cream (to garnish)

Steps:

  • Preheat oven to 325°F.
  • Combine flour, oats, brown sugar, cinnamon and salt in large bowl.
  • Cut in butter until crumbly.
  • Reserve 1 1/4 cups for topping.
  • Press remaining crumbs into ungreased 9-inch square pan.
  • Drain raspberries, reserving syrup.
  • Set raspberries aside.
  • Add enough water to syrup to make 1 cup.
  • Place mixture in small saucepan.
  • Combine 1/2 cup sugar and cornstarch and add to syrup mixture in pan.
  • Cook over medium heat, stirring constantly, until thickened and bubbly.
  • Remove from heat and set aside.
  • Top oat mixture in pan with reserved raspberries and rhubarb.
  • Pour cooked syrup mixture over fruit and sprinkle with reserved topping.
  • Bake for 1 hour or until golden brown.
  • Cool in pan on rack.
  • Cut into squares and serve with whipped cream or ice cream.

Rhubarb reminds me so much of summertime desserts when I was a child. My Mom had a huge patch of rhubarb and she served it all the time, but mostly with strawberries. I couldn't wait to try this recipe from Sunset Magazine. We weren't disappointed! We like this with vanilla ice cream but it would also be good with sweetened whipped cream.

1 cup rolled oats
1/2 cup all-purpose flour
1/2 cup finely chopped walnuts
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon salt
1/2 cup cold butter, cut into chunks
12 ounces rhubarb (about 3 stalks)
3/4 cup granulated sugar
2 tablespoons cornstarch
4 cups raspberries, rinsed and drained

Steps:

  • In a large bowl, mix oats, flour, walnuts, brown sugar, cinnamon, ginger and salt. With your fingers or a pastry blender, rub or cut butter into oat mixture until coarse crumbs form. Cover and chill.
  • Rinse rhubarb; trim off and discard green parts of stalks. Cut red parts into 1/2-inch thick slices; you need about 2 cups of sliced rhubarb. In a large bowl, combine granulated sugar, cornstarch, raspberries and rhubarb and mix gently to coat. Pour into a shallow 2 to 3-qt. baking dish and sprinkle evenly with the topping.
  • Bake in a 350° oven until topping is golden brown and fruit is bubbling, about 45 minutes. Serve warm or at room temperature with ice cream or whipped cream.

2 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon kosher salt
1/2 pound (2 sticks) very cold unsalted butter, 1/2-inch-diced
1/4 cup ice water
1/4 cup cornstarch
4 cups (1/2-inch-thick) sliced fresh rhubarb (1 1/4 pounds)
6 ounces fresh raspberries
2/3 cup sugar
1 teaspoon grated orange zest
1/4 cup freshly squeezed orange juice
1 extra-large egg beaten with 1 tablespoon water for egg wash
Turbinado or demerera sugar, such as Sugar in the Raw

Steps:

  • For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with the steel blade. Pulse a few times to combine. Add the butter and toss carefully with your fingers to coat each cube of butter with the flour. Pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button just until the dough comes together. Turn onto a well-floured board, cut in half, and form into two disks. Wrap and refrigerate for at least an hour. (Wrap the second dough well and freeze, if not using.)
  • For the filling, place 3 tablespoons of water in small bowl, whisk in the cornstarch, and set aside. In a large heavy-bottomed saucepan, combine the rhubarb, raspberries, granulated sugar, orange zest, and orange juice. Cook over medium heat for 5 to 6 minutes, until some of the juices are released. Stir in the cornstarch, bring to a boil, lower the heat and simmer for 2 minutes. Refrigerate for 30 minutes, until cool.
  • Preheat the oven to 425 degrees F. Line a sheet pan with parchment paper.
  • Roll the pastry to an 11- to 12-inch circle on a lightly floured surface and transfer to the prepared pan. Pile the raspberry rhubarb mixture onto the pastry, leaving a 1 1/2-inch border all around. Fold the border up over the filling, pleating, if necessary, and pressing lightly. Brush the pastry with egg wash, sprinkle the pastry with turbinado sugar, and bake for 30 to 35 minutes, until the pastry is browned and the filling is thickened. Cool for 30 minutes and serve warm or at room temperature.

1 tablespoon instant tapioca
1 tablespoon cornstarch
⅛ teaspoon salt
4 cups rhubarb, cut into 1/2 inch pieces
1 cup raspberries
½ cup brown sugar

½ cup quick cooking oats
½ cup butter, chilled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, combine sugar, tapioca, cornstarch and salt. Place rhubarb and raspberries into bowl making sure to completely coat them with dry ingredients. Pour into baking pan.
  • In a medium bowl, mix together brown sugar, flour and oats. Cut in butter until mixture resembles pea-sized crumbs. Spread on top of fruit mixture.
  • Bake in preheated oven for 45 minutes, or until rhubarb is tender.

This is a great jam to can during the summer when you have plenty of rhubarb! My DH loves raspberry anything, especially jam/jelly. I love the tart that the rhubarb gives. My friend gave me the recipe and I'm writing it down so I don't have to keep calling her each year to make sure the ammounts!

5 cups sliced rhubarb
4 cups sugar
1 (12 ounce) bag frozen raspberries
1 (3 ounce) package raspberry Jell-O gelatin

Steps:

  • Mix the first 3 ingredients in a large pan (you don't need water!). When it boils, start a time minder for 12 minute Let boil for the whole time, although you might need to turn it down so it doesn't boil over. Keep stiring so there is no scorching. Turn off heat and add jello.
  • I like to run through a blender b/c I don't like it chunky style, but its a personal preferenc. Can. I fill mainly to top, put the flat part of the lid in a small ammount of boiling water and lift it out with tongs. I then put the lids on and that works for me.

RHUBARB BAKED IN WILD RASPBERRY SYRUP

4 cups fresh raspberries, preferably wild
1 tablespoon fresh lemon juice
About 1 1/2 cups sugar (depending on the amount of raspberry juice produced)
1 1/2 pounds rhubarb (7 to 8 large stalks)
1/4 cup sugar
1/2 vanilla bean or 1 teaspoon vanilla extract
Vanilla ice cream, for serving

Steps:

  • For the raspberry syrup: Combine the raspberries, lemon juice and 1/3 cup water in a large metal bowl. Crush the berries and set the bowl over a pot of simmering water, double-boiler-fashion. Cook very gently until the raspberries begin to dissolve, about 15 minutes.
  • Pour the mixture into a jelly bag (or a large sieve lined with two layers of cheesecloth) set over a deep bowl. Let the mixture drip, gently stirring the pulp now and then but not pressing on it, until it seems that all of the liquid has been expelled, 1 to 2 hours.
  • Measure the juice, pour it into a wide-bottomed saucepan and then measure out an equal volume of sugar (for example, for 1 1/2 cups of juice, you'd need 1 /¿2 cups of sugar). Add the sugar to the juice and set the pan over medium-high heat. Bring the syrup to a rolling boil (watch to make sure it doesn't boil over), boil for 30 seconds and then remove from the heat. Let it settle for a minute, and then carefully skim off the foam. Bring to a rolling boil again and then immediately remove from the heat. Let it settle, and skim it again. Measure out 1/2 cup of the syrup for use in the baked rhubarb and set aside; refrigerate the rest of the syrup for another use.
  • For the baked rhubarb: Preheat the oven to 325 degrees F.
  • Trim and discard the ends of the rhubarb; cut the stalks into 3/4-inch-thick slices on a deep diagonal, keeping them neatly stacked together. Transfer the slices to a 9-by-13-inch baking pan, making rows of cut rhubarb, until you have filled the pan.
  • Warm the reserved raspberry syrup in a microwave oven (or a small saucepan) until hot. Add the sugar to the warm syrup and stir to dissolve. If using the vanilla bean, slice it lengthwise, scrape out the pulp and throw the pulp into the syrup and the pods in with the rhubarb. If using vanilla extract, add it to the syrup.
  • Pour the raspberry syrup evenly over the rhubarb and bake, uncovered, until the rhubarb is soft but not mushy, 15 to 18 minutes. Halfway through baking, remove the pan from the oven, and gently tilt the pan and spoon the syrup over the rhubarb to glaze it.
  • Allow the baked rhubarb to cool in the pan, glazing it once more with the syrup as it cools. Refrigerate the rhubarb in the pan. (The rhubarb will keep in the refrigerator for up to 1 week, and gets firmer and brighter as it sits.)
  • Serve over vanilla ice cream.
