My family's love of raspberries and cheesecake make this a perfect dessert for us. The luscious treat is best eaten with a fork. -Jill Cox, Lincoln, Nebraska

1 cup all-purpose flour
1 cup finely chopped pecans
1/3 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/3 cup cold butter
1 jar (12 ounces) seedless raspberry jam, divided
2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
1/2 teaspoon grated lemon zest
1/2 teaspoon vanilla extract
3 large eggs, lightly beaten
TOPPING:
1-1/2 cups sour cream
3 tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the flour, pecans, brown sugar, cinnamon and salt. Cut in butter until crumbly. Press onto the bottom of a greased 13x9-in. baking dish. Bake at 350° until lightly browned, 10-12 minutes. Cool on a wire rack for 5 minutes., Set aside 3 tablespoons jam; spread remaining jam over crust., In a large bowl, beat cream cheese and sugar until smooth. Beat in lemon zest and vanilla. Add eggs; beat on low speed just until combined. Spread evenly over jam. Bake until almost set, 20-25 minutes., In another bowl, combine the sour cream, sugar and vanilla; spread over cheesecake. Warm remaining jam and swirl over top. Bake just until set, 5-7 minutes. , Cool on a wire rack for 1 hour. Refrigerate for at least 2 hours. Cut into bars.

1 1/2 cups graham cracker crumbs (10 crackers)
1 tablespoon sugar
6 tablespoons (3/4 stick) unsalted butter, melted
2 1/2 pounds cream cheese, at room temperature
1 1/2 cups sugar
5 whole extra-large eggs, at room temperature
2 extra-large egg yolks, at room temperature
1/4 cup sour cream
1 tablespoon grated lemon zest (2 lemons)
1 1/2 teaspoons pure vanilla extract
1 cup red jelly (not jam), such as currant, raspberry, or strawberry
3 half-pints fresh raspberries

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the crust, combine the graham crackers, sugar, and melted butter until moistened. Pour into a 9-inch springform pan. With your hands, press the crumbs into the bottom of the pan and about 1-inch up the sides. Bake for 8 minutes. Cool to room temperature.
  • Raise the oven temperature to 450 degrees F.
  • To make the filling, cream the cream cheese and sugar in the bowl of an electric mixer fitted with a paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Reduce the speed of the mixer to medium and add the eggs and egg yolks, 2 at a time, mixing well. Scrape down the bowl and beater, as necessary. With the mixer on low, add the sour cream, lemon zest, and vanilla. Mix thoroughly and pour into the cooled crust.
  • Bake for 15 minutes. Turn the oven temperature down to 225 degrees F and bake for another 1 hour and 15 minutes. Turn the oven off and open the door wide. The cake will not be completely set in the center. Allow the cake to sit in the oven with the door open for 30 minutes. Take the cake out of the oven and allow it to sit at room temperature for another 2 to 3 hours, until completely cooled. Wrap and refrigerate overnight.
  • Remove the cake from the springform pan by carefully running a hot knife around the outside of the cake. Leave the cake on the bottom of the springform pan for serving.
  • To make the topping, melt the jelly in a small pan over low heat. In a bowl, toss the raspberries and the warm jelly gently until well mixed. Arrange the berries on top of the cake. Refrigerate until ready to serve.
  • Note: Measure your springform pan. The bottom of mine measures 9 inches, but it says 9 1/2. I put the springform pan on a sheet pan before putting it in the oven to catch any leaks.

Another one of my 3-layer desserts that takes only minutes to prepare. This particular cake mix comes with a packet of glaze and it's own swirl mix. Using the cake mix as a crust this makes a beautiful and tasty dessert. This is my own crowd pleasing dessert. {Note: The name of the boxed cake mix is Pillsbury Cinnamon Swirl Quick Bread & Coffee cake mix. The ingredients look confusing as if 2 different cakes. Just one long name}.

1 (17 1/2 ounce) package Pillsbury Cinnamon Swirl Quick Bread and Coffeecake mix
6 tablespoons butter, melted
3 eggs
3/4 cup sugar-free raspberry jam
1 (8 ounce) package light cream cheese, softened*
1 (3 ounce) package light cream cheese, softened*
2 1/2 cups powdered sugar
1 teaspoon vanilla
3/4 cup pecans, chopped

Steps:

  • Heat oven to 350°F In large bowl, combine quick bread mix, butter and 1 of the eggs; mix well. Spread dough in bottom of ungreased 13x9-inch pan to form crust. Spread preserves over dough.
  • Beat cream cheese in large bowl until light and fluffy. Add remaining 2 eggs, 2 1/2 cups powdered sugar and vanilla; beat until smooth. Spoon and spread mixture over preserves. In small bowl, combine swirl mix from packet and pecans; mix well. Sprinkle over cream cheese mixture.
  • Bake at 350°F For 35 to 45 minutes or until golden brown. Cool 1 hour.
  • Drizzle glaze from package over bars. Refrigerate 1 hour. Store in refrigerator.

1/2 cup sugar
1/2 cup butter, softened
1 1/4 cups all-purpose flour
1 (8-oz.) pkg. cream cheese, softened
1/2 cup sugar
1/2 teaspoon almond extract
1 egg
4 tablespoons seedless red raspberry jam

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with nonstick cooking spray. In large bowl, combine 1/2 cup sugar and butter; blend well. Lightly spoon flour into measuring cup; level off. Add flour; mix until crumbly. Press mixture in bottom of sprayed pan.
  • Bake at 350°F. for 15 to 18 minutes or until edges are light golden brown.
  • Meanwhile, in large bowl, combine all filling ingredients; beat well.
  • Remove pan from oven; pour filling over partially baked crust. In small bowl, stir 2 tablespoons of the jam until softened. Spoon over cream cheese mixture. With tip of spoon, carefully swirl jam into top of cream cheese mixture. (Do not disturb crust.)
  • Return pan to oven; bake an additional 15 to 20 minutes or until filling is set. Cool 30 minutes.
  • Stir remaining jam; spread evenly over bars. Refrigerate 30 minutes. Cut into bars. Store in refrigerator.

You don't need a springform pan to prepare this cheesecake recipe!! Instead you bake it in a 9x13-inch pan and cut it into bars. They are made extra-special with raspberry preserves marbled throughout the filling. This recipe came from McCormick's - very tasty!!

1 1/2 cups graham cracker crumbs
1/3 cup butter, melted
2 tablespoons sugar
1/2 teaspoon ground ginger
4 (8 ounce) packages cream cheese, softened
1 cup sugar
2 tablespoons flour
1 tablespoon pure vanilla extract
4 eggs
1/4 cup raspberry preserves

Steps:

  • Preheat oven to 350°F Mix graham cracker crumbs, butter, 2 tablespoons sugar and ginger. Press firmly onto bottom of foil-lined 13x9-inch baking pan. Refrigerate until ready to use.
  • Beat cream cheese and 1 cup sugar in large bowl with electric mixer on medium speed until well blended. Add flour and vanilla; mix well. Add eggs, 1 at a time, beating on low after each addition just until blended. Pour over crust. Gently drop small spoonfuls of preserves over batter. Cut through batter several times with knife for marble effect.
  • Bake 40-45 minutes or until center is almost set. Cool completely on wire rack.
  • Refrigerate 4 hours or overnight. Lift out of pan onto cutting board. Cut into bars. Garnish as desired. Store leftover bars in refrigerator.

Got this recipe from a friend who "adapted/adopted" it from Pillsbury. Everyone in our building loves these and I make them a special batch at Christmas and for Valentine's Day.

1/2 cup sugar
1/2 cup butter, softened to room temp
1 cup flour
1 (8 ounce) cream cheese, softened to room temp
1/2 cup sugar
1 teaspoon almond extract (I use 1/2 tsp. almond and 1/2 tsp. vanilla, butter and nut extract)
1 large egg
1/4 cup seedless raspberry jam, red

Steps:

  • Preheat oven to 350 degrees. Prepare an 8 inch square baking pan by spraying it with non stick spray.
  • In a large bowl, combine crust ingredients until well blended.
  • Press into the bottom of the pan and bake for 15-20 minutes (depending on your oven) until the edges are lightly brown.
  • While the crust is baking, combine the filling ingredients in a large bowl and mix until well blended.
  • Remove the crust from the oven and pour the filling over the crust.
  • In a small bowl, heat 1/2 of the 1/4 cup of jam until soft.
  • Carefully spoon the jam over and into the filing without disturbing the crust.
  • Put the pan back in the oven and bake for 15-20 minutes longer until filling is set.
  • Cool for 30 minutes.
  • Stir remaining jam until smooth, then spread it evenly over the cooled bars.
  • Refrigerate 30 minutes.
  • Store leftovers (like you'll have those!) in the refrigerator.
