Sweet with a lovely fruity taste to it, a Raspberry Gin Cocktail is a festive drink to make up for Valentine's Day. This raspberry and lemon gin drink is simple to make and so delicious.

Ingredients

1 pint raspberries
1 cup filtered water
1/4 cup maple syrup
1.5 ounces gin
2 teaspoons fresh lemon juice
1 ounce club soda or sparkling water
1.5 ounces raspberry simple syrup
1/2 ounce elderflower liquor (optional)
Rosemary sprigs, for garnish
Raspberry Ice Cubes

Steps:

Add raspberries, water and maple syrup to a small sauce pan. Bring to a boil over medium high heat, and then reduce the heat to simmer until the syrup has reduced to half, about 10 minutes. Strain, and let cool completely.
Add gin, lemon juice, club soda, 1.5 ounces of the raspberry simple syrup, and elderflower to a cocktail shaker with ice. Shake well, and strain into a cocktail glass.
Serve immediately with one or two raspberry ice cubes (or regular ice cubes) and a sprig or rosemary.

200ml elderflower cordial
1l cloudy apple juice
apple slices and ice, to serve

Steps:

In a jam jar, mix gin with cordial. When ready to serve, divide the mixture between 8 glasses, top up with apple juice, apple slices and ice.

Ingredients

25ml lemon juice
1 tbsp (15ml) elderflower cordial
50ml gin
25ml elderflower liqueur (or add another 25ml gin)
ice
75ml chilled sparkling wine
sprig of lemon thyme or a mint leaf

Steps:

Pour the lemon juice, elderflower cordial, gin and elderflower liqueur (if using) into a cocktail shaker. Add a large handful of ice and shake until the outside of the shaker feels icy cold.
Strain the cocktail into two champagne flutes or coupes, then top up slowly with sparkling wine. Garnish each one with a small sprig of lemon thyme or a mint leaf.
