One of my favorite cookie bar recipes.

½ cup packed light brown sugar
1 cup all-purpose flour
¼ teaspoon baking soda
⅛ teaspoon salt
1 cup rolled oats
½ cup butter, softened
¾ cup seedless raspberry jam

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.
  • Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
  • Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

1 (18.25 ounce) package yellow cake mix
2 ½ cups quick cooking oats
¾ cup margarine, melted
1 cup raspberry jam
1 tablespoon water

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together oats, cake mix, and melted margarine so that it makes nice clumps and there is no dry mix left. Press 1/2 of the oats mixture evenly into the bottom the prepared pan. In a separate bowl, mix jam with water, and spread over the crust. Sprinkle the remaining oat mixture evenly over the top.
  • Bake in the preheated oven for 18 to 23 minutes, or until the top is lightly browned. Cool before cutting into bars.

3/4 cup sugar
1/4 teaspoon salt
1-1/2 cups cold butter
2 tablespoons cold water
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
3/4 cup seedless raspberry jam
Confectioners' sugar

Steps:

  • In a large bowl, combine the flour, sugar and salt; cut in butter until mixture resembles coarse crumbs. Stir in water and extracts until mixture forms a ball. , On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with floured 2-1/2-in. cookie cutters. From the center of half the cookies, cut out a 1-1/2 in. shape. Place 1 in. apart on parchment-lined baking sheets., Bake at 325° for 12-15 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks to cool completely., Spread 1/2 teaspoon jam over the bottoms of the solid cookies. Sprinkle cutout cookies with confectioners' sugar; place over cookies with jam.

These are my favorite cookies to order at a place called Crave in Sherman Oaks, CA. I love nothing more than figuring out how to make something at home that I can't always get. They are super simple to make and will definitely be a hit at any holiday party or cookie swap as they are easy to transport!

2 cups firmly packed light brown sugar
2 sticks (1 cup) salted butter
1/2 teaspoon pumpkin pie spice
2 1/2 cups rolled oats
3 tablespoons all-purpose flour
1/2 teaspoon almond extract
1 large egg, beaten
Heaping 1/2 cup seedless raspberry jam, for the filling

Steps:

  • Position a rack in the center of the oven and preheat the oven to 375 degrees F. Line a large baking sheet with parchment paper or nonstick aluminum foil.
  • Melt the base. In a medium pot on medium heat, add the brown sugar, butter and pumpkin pie spice. Cook, stirring, until the butter melts and the mixture is less gritty.
  • Finish the batter. In a large bowl, add the oats, flour, almond extract and egg and toss. Slowly add the butter mixture from the pot while constantly stirring the oat mixture.
  • Bake and rest. Use a teaspoon to drop the batter on the prepared baking sheet about 3 inches apart to allow spreading. This will take patience and several batches. Also, to avoid a big glob, try to gently press the oats so they aren't in a mound.
  • Bake on the center rack until the edges are caramelized and the centers stop rapidly bubbling, 5 to 6 minutes. Remove and leave on the baking sheet for 5 minutes, then transfer the entire sheet of parchment onto a wire rack. After a few more minutes, transfer the cookies from the parchment to rest directly on the wire rack. Continue until all the batter is cooked and the cookies are fully cool and rigid, 15 to 20 minutes.
  • Fill and serve. Pick 2 cookies with approximately the same size and shape and spread about 1/2 teaspoon of raspberry jam on the bottom/flat side of one cookie, then sandwich the matching cookie's bottom/flat side to the other; repeat until done. Store in an airtight container in a cool place, even the fridge, for up to 1 week. Happy holidays and happy cookie making!

2 1/4 cups quick-cooking oats
3/4 cup salted butter
1 (12 ounce) jar seedless raspberry jam
1/2 cup powdered sugar (optional)
water (optional)

Steps:

  • Melt the butter in the microwave.
  • In a large bowl, combine all of the ingredients except the jam. Mix with your hands until the ingredients are crumbly, taking care to break up all clumps of the cake mix.
  • In a 13" x 9" shallow baking pan, such as a cookie sheet, press 1/2 of the oatmeal/cake mixture in the pan. Make sure to keep the layer as even as possible.
  • Pour the jam into a bowl and mix well. This helps the jam to spread easier. Spread the jam onto the first oatmeal layer.
  • Press the remaining oatmeal/cake mixture onto the top of the jam. Try to keep layers as even as possible.
  • Bake for 40-50 minutes or until oatmeal is lightly browned. Cut into bars once cooled.
  • Optional Glaze: Add water to powdered sugar into is is a pourable mix, about 3-4 teaspoons. Lightly drizzle over the pan. Cut into bars once cooled.

This recipe is from my grandmother who left Russia as a girl to come to Canada. It's the only recipe I have of hers. The original recipe calls for a filling of dates, sugar and water to be boiled with no amounts given. Jam works very well too.

1 cup flour
2 cups oatmeal
1 cup margarine
1/4 cup sour cream
1/2 teaspoon baking soda
1/8 teaspoon salt
1/4 teaspoon vanilla
jam

Steps:

  • Mix the sour cream with the baking soda.
  • There are no directions as how to mix the dough but I always do this.
  • Mix the margarine well with the flour, salt and oatmeal. Add the sour cream mixture and vanilla.
  • The dough will be wet. Refrigerate for 2 hours.
  • Preheat oven to 350 degrees.
  • Roll the dough on a floured surface thinly, about 1/3 inch or a bit less. Cut into 2 1/2 to 3 inch rounds and place on cookie sheet.
  • Bake for 4-5 minutes, more or less, not letting the cookies brown too much. I have a fast cooking oven, you may need to allow 8 minutes.
  • Let cool on the pan a few minutes, then remove cookies from the sheet onto a rack.
  • When totally cooled, make sandwiches with a date filling, or jam.
  • I don't know the serving amounts, so guessing.

  • Remove the dough from the refrigerator and place on a piece of parchment paper. Place another piece of parchment paper on top of the dough and roll into a circle with a rolling pin until the dough is about 1/4 of an inch thick.
  • Using a small circular cookie cutter (I actually used a shot glass), cut the dough into circle shaped cookies and place on a parchment paper lined baking sheet. Re-roll any excess dough until you get all the cookies you can out of it. Set aside.
  • Combine the raspberries and coconut butter in a food processor and process until smooth. You want the coconut butter somewhat warm so that it blends smoothly into the raspberries.
