RANCH TURKEY

Ranch Turkey image

Provided by Katie Lee Biegel

Categories     main-dish

Time 9h

Yield 10 servings

Number Of Ingredients 10

One 15- to 18-pound turkey (neck and giblets removed)
Two 1-ounce packets ranch seasoning
10 tablespoons (1 1/4 sticks) unsalted butter, softened
3 carrots, cut into thirds
3 stalks celery, cut into thirds
1 medium onion, cut into 8 wedges
Kosher salt and freshly cracked black pepper
2 tablespoons maple syrup
4 cups low-sodium chicken stock
3 tablespoons all-purpose flour

Steps:

  • Allow the turkey to come to room temperature for 2 hours.
  • Preheat the oven to 425 degrees F.
  • Remove 2 tablespoons of ranch seasoning from 1 packet and reserve. In a small bowl, mix together 1 stick (8 tablespoons) of butter with the remaining ranch seasoning from both packets until well incorporated.
  • Arrange the carrots, celery and onions in the bottom of a roasting pan, then put a roasting rack over them. Put the turkey on the rack and spread the ranch butter all over and underneath the skin. Season generously with salt and pepper. Reduce the oven temperature to 350 degrees F and put the turkey inside to roast.
  • In the meantime, add the maple syrup and 2 cups of chicken stock to a saucepan, then stir in the 2 tablespoons reserved ranch seasoning. Bring to a simmer just to warm through and incorporate the seasoning. Roast the turkey, basting with this liquid every 20 minutes, until a thermometer inserted in the thickest part of the thigh reads 160 degrees F (allow about 1 hour of cooking time for every 3 pounds of turkey). Tent with a piece of aluminum foil and let rest at least 30 minutes. (There will be carryover cooking and the temperature will rise to 165 degrees F while resting.)
  • For the gravy, strain the juices left in the bottom of the roasting pan into a fat separator and pour the fat off the top. Put the roasting pan on a burner on top of the stove over medium heat. Add the remaining 2 tablespoons butter and whisk in the flour, cooking for a minute. Slowly whisk in the remaining 2 cups chicken stock along with any remaining braising liquid and the juices from the roasting pan. Season with salt and pepper and serve alongside the turkey.

RANCH CHICKEN TACOS

Ranch Chicken Tacos image

A great change from regular Mexican style tacos. A cool summer dinner, made quick with leftover rotisserie chicken. Naturally you can use any type of chicken cooked the way you like; just be sure to shred it for real tacos.

Provided by Joan Dredge

Categories     World Cuisine Recipes     Latin American     Mexican

Time 25m

Yield 4

Number Of Ingredients 12

½ cup ranch dressing
¼ cup reduced-fat sour cream
1 (1 ounce) packet taco seasoning mix, divided
1 tablespoon mild chunky salsa
2 cups shredded rotisserie chicken
8 (6 inch) corn tortillas
shredded lettuce
1 tomato, chopped
4 green onions, sliced
1 (4 ounce) can sliced black olives
1 avocado - peeled, pitted and diced
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Combine ranch dressing, sour cream, 1 teaspoon taco seasoning, and salsa in a small bowl. Cover and refrigerate until serving.
  • Toss chicken with remaining taco seasoning. Cover bowl loosely with wax paper or plastic wrap. Microwave chicken until chicken is heated through, about 2 to 3 minutes.
  • Warm the tortillas in a skillet for about a minute on each side to make them pliable. Place a scoop of chicken on the tortilla and top with lettuce, tomato, green onion, olives, avocado, cheese, and a spoonful of the ranch dressing mixture.

Ranch-Style Turkey Chili image

Provided by Rachael Ray : Food Network

Time 35m

Yield 4 servings

Number Of Ingredients 20

4 poblano peppers
2 large corn muffins, store-bought
2 tablespoons EVOO
2 pounds ground turkey
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
4 cloves garlic, finely chopped
1 large onion, finely chopped
2 tablespoons cumin, a couple of palmfuls
1 tablespoon coriander, a palmful
One 14-ounce can pinto or white beans
2 cups chicken stock
1/4 cup fresh chives, finely chopped
1/4 cup fresh dill, finely chopped
1/4 cup fresh parsley, finely chopped
Hot sauce
1 cup sour cream
Shredded sharp Cheddar
Minced red onion
4 to 5 slices crispy bacon, chopped

Steps:

  • Char the peppers over a gas flame on high heat or under the broiler with the oven door cracked for steam to escape, turning with tongs. Place the charred peppers in a bowl and cover with plastic wrap to steam. Let them cool, then peel, seed and finely chop.
  • Preheat the oven to 400 degrees F.
  • Crumble the corn muffins, arrange on a cookie sheet and toast until crispy and extra golden, about 10 minutes. Set aside.
  • Heat the EVOO in a Dutch oven over medium-high heat. Add the turkey and sprinkle with salt and pepper. Brown and crumble the meat. Add the garlic and onions to the pot and cook to soften, about 5 minutes. Add the cumin and coriander, then stir in the chopped peppers. Add the beans, stock and herbs and simmer 5 minutes. Season with hot sauce.
  • Turn off the heat and stir in the sour cream to combine. Serve topped with the crispy corn muffin crumbles and any of the other toppings you like.

CHICKEN-RANCH TACOS

Chicken-Ranch Tacos image

All ingredients amounts may be adjusted to taste --- you may substitute the bottled Hidden Valley Ranch dressing for the package, I prefer the package --- I have even made these using Caesar salad dressing from my recipe#116849 instead of the Ranch :)

Provided by Kittencalrecipezazz

Categories     Poultry

Time 25m

Yield 4 serving(s)

Number Of Ingredients 9

6 -8 taco shells (I use the stand n' stuff)
2 tablespoons oil
5 -6 boneless skinless chicken breasts (cut into small bite-size pieces)
0.5 (1 1/4 ounce) package taco seasoning mix (can use more to taste)
1 (28 g) package hidden valley ranch dressing mix
2 cups shredded head lettuce
1 -2 tomatoes, finely chopped
2 cups shredded Mexican blend cheese (or to taste)
2 -3 green onions, chopped

Steps:

  • In a small bowl mix together the dry ranch dressing mix with 1 cup milk and 1 cup of mayonnaise (or according to the package directions for dressing, I also add in 1 teaspoon fresh garlic but that is optional) mix until well combined; refrigerate until ready to use.
  • Heat 2 tablespoon oil in a large skillet over medium-high heat.
  • Add in the chicken cubes and toss with a spoon until cooked through, seasoning with the taco mix just before the chicken is finished cooking (do not overcook the chicken cubes or they will be dry) transfer to a bowl.
  • Divide the cooked chicken cubes between each taco shell, then drizzle the top of the chicken with a small amount of prepared Ranch dressing (make certain to save some dressing to drizzle on the top of the tacos).
  • Top with a small amount of shredded lettuce, chopped tomatoes, shredded cheese, then green onion.
  • Drizzle the top of the tacos with more ranch dressing.
  • Delicious!
