CHEESY RANCH POTATO BAKE
This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
- Place the potatoes in the baking dish. Season with chili powder, salt, and pepper. Evenly distribute the butter over the potatoes.
- Cover dish with aluminum foil, and bake 1 hour in the preheated oven, until potatoes are tender. Remove from oven, and mix in the cheese and Ranch dressing. Continue cooking 10 minutes, or until cheese is melted and bubbly.

Steps:
- Preheat oven to 400°F (200˚C).
- Slice the potatoes in half, lengthwise, then slice each half lengthwise three times and across four times, to cube.
- Bring a large pot of water to a boil and drop in chopped potatoes, cook 10 minutes.
- Drain potatoes and mix in ranch, garlic powder, paprika, salt, and pepper.
- Transfer to a 9x13-inch (23x33 cm) baking dish.
- Bake for 30-35 minutes, or until nicely browned.
- While still hot, mix in cheddar and chives.
- Allow to cool for 5 minutes.
- Enjoy!

SUNNY'S ROASTED RANCH POTATOES AND ONIONS
Steps:
- 1.Boil and sliced potatoes. In a large pot over high heat, add the potatoes and cover with water by 1-inch. Bring to a boil over medium heat, then add a pinch of salt, reduce the heat and simmer until slightly tender, but not easily poked by a fork, about 10 minutes. Drain the potatoes and pour put them onto a baking sheet to cool completely. Once cool, cut them in half or smaller for bite-sized pieces. 2.Saute potatoes and onions. In a large pan on medium-high heat add the olive oil, it should cover the bottom with an 1/8 of an inch of oil, if too much don't use all the oil, if not enough, add more. When the oil begins to swirl, add the potatoes, onions and Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix, tossing to combine, then allowing to rest and cook. - Preheat oven to 350 degrees F. Mix together (in a large bowl) the ranch dressing, dill, cheese and bacon. Add in the potatoes. Sprinkle in a pinch of salt and pepper. Toss to coat potatoes. Spoon into a greased 9 x 13 baking dish. Cover with foil. Bake for 60 minutes. Stir gently halfway through to get the bottom potatoes rotated so they don't become burnt and to ensure that the middle and top potatoes get a chance to brown. Remove foil. Raise oven temperature to 400 degrees. Gently stir again, as necessary. Bake for an additional 15 minutes, then sprinkle on a little more cheese, if desired. Bake a few more minutes or until everything is gooey, browned and bubbly on top. Serve with scallions sprinkled on top for garnish. Great with a dollop of sour cream.
ITALIAN RANCH ROASTED POTATOES
I invented this recipe because I wanted something with a little more flavor than just plain roasted potatoes. This might also be good with other flavors of salad dressing mixes (Fiesta Ranch, Herb and Garlic, Mediterranean). You might also want to add some cheese. I sometimes add some chile powder to the seasoning mixture. Just use your imagination.

- Preheat oven to 375 degrees. Cover a baking sheet with foil. I use no-stick foil. If not using that, spray foil with cooking spray to keep potatoes from sticking.
- Scrub potatoes or peel if desired, cut each one in half, then cut each half into eighths. Put into bowl or a zip-lock bag.
- Cut onion into eighths and add to potatoes. Toss together.
- Combine salad dressing mixes with garlic powder.
- Pour 1 T oil over potatoes and toss. Sprinkle with 1/2 of salad dressing mixture and toss. Repeat steps, then pour mixture into prepared baking sheet.
- Bake for 1 hour, until potatoes are browned.
- Pour into bowl and serve. I've also splashed the potatoes with a small amount of balsamic vinegar prior to serving.

CREAMY, RICH RANCH POTATOES WITH CHEESE
Many versions of this...but this is how I make them! Being a meat and potaoes kind of girl, these are just one of my all-time favorite potatoes! The original version just wasn't very creamy.

Steps:
- In large bowl, blend soups and cream cheese.
- Microwave til creamy and cheese is melted, stirring occasionally.
- Stir in well, the dressing mix, then fold in 1 cup (half) the shredded cheese, then the potatoes.
- Fold well til all potatoes are coated.
- Pour/spoon into lightly greased 13x9 glass baking dish, mashing down a little, and spreading in pan evenly.
- Sprinkle top with rest of shredded cheese.
- COVER and bake at 350º for 50-55 minutes.
- Uncover, top with onions.
- Bake UNCOVERED for another 5 minutes or til onions are lightly browned.
- *Nice additions:.
- 1 cup diced, fully-cooked ham.
- Cooked, crumbled bacon (4-6 slices).
- Saute'd onions.
- Saute'd mushrooms.

- Add water to cover.
- Bring to a boil; cook about 10-12 minutes or until potatoes are almost tender; drain.
