CHEESY RANCH POTATO BAKE

Cheesy Ranch Potato Bake image

This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

Kosher salt
1/4 cup olive oil, take or give
1 pound pearl onions*, peeled and halved (frozen is fine, thaw before slicing & roasting)
1 packet Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix

Drain the potatoes and pour put them onto a baking sheet to cool completely. Once cool, cut them in half or smaller for bite-sized pieces. 2.Saute potatoes and onions. In a large pan on medium-high heat add the olive oil, it should cover the bottom with an 1/8 of an inch of oil, if too much don't use all the oil, if not enough, add more. When the oil begins to swirl, add the potatoes, onions and Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix, tossing to combine, then allowing to rest and cook. Once a crust forms on the bottom give the pan a toss or flip potatoes and onions with a spatula, then allow them to crisp on the other side, about 3 minutes. RANCH POTATOES WITH CHEESE RECIPE - (4.5/5)

Ranch Potatoes with Cheese Recipe - (4.5/5) image

Provided by á-2788

Number Of Ingredients 9

2 pounds potatoes (unpeeled, washed and cut into chunks)
1/2 cup ranch dressing
1/4 cup cheddar cheese, shredded plus more for topping (if desired)
1/4 cup crumbled, cooked bacon
1 tablespoon dried dill weed
3 scallions, washed and chopped
Salt
Pepper
Non-stick cooking spray

Steps:

  • Preheat oven to 350 degrees F. Mix together (in a large bowl) the ranch dressing, dill, cheese and bacon. Add in the potatoes. Sprinkle in a pinch of salt and pepper. Toss to coat potatoes. Spoon into a greased 9 x 13 baking dish. Cover with foil. Bake for 60 minutes. Stir gently halfway through to get the bottom potatoes rotated so they don't become burnt and to ensure that the middle and top potatoes get a chance to brown. Remove foil. Raise oven temperature to 400 degrees. Gently stir again, as necessary. Bake for an additional 15 minutes, then sprinkle on a little more cheese, if desired. Bake a few more minutes or until everything is gooey, browned and bubbly on top. Serve with scallions sprinkled on top for garnish. Great with a dollop of sour cream.

ITALIAN RANCH ROASTED POTATOES

Italian Ranch Roasted Potatoes image

I invented this recipe because I wanted something with a little more flavor than just plain roasted potatoes. This might also be good with other flavors of salad dressing mixes (Fiesta Ranch, Herb and Garlic, Mediterranean). You might also want to add some cheese. I sometimes add some chile powder to the seasoning mixture. Just use your imagination.

Provided by Kendra

Categories     Potato

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 6

6 potatoes, medium sized
1 onion
1 (2/3 ounce) package Italian salad dressing mix (I used Good Seasons)
1 (1 ounce) package ranch dressing mix
1/2 teaspoon garlic powder
2 tablespoons olive oil (I used extra-virgin)

Steps:

  • Preheat oven to 375 degrees. Cover a baking sheet with foil. I use no-stick foil. If not using that, spray foil with cooking spray to keep potatoes from sticking.
  • Scrub potatoes or peel if desired, cut each one in half, then cut each half into eighths. Put into bowl or a zip-lock bag.
  • Cut onion into eighths and add to potatoes. Toss together.
  • Combine salad dressing mixes with garlic powder.
  • Pour 1 T oil over potatoes and toss. Sprinkle with 1/2 of salad dressing mixture and toss. Repeat steps, then pour mixture into prepared baking sheet.
  • Bake for 1 hour, until potatoes are browned.
  • Pour into bowl and serve. I've also splashed the potatoes with a small amount of balsamic vinegar prior to serving.
