MAC AND CHEESE
Raise the volume with Ina Garten's creamy Mac and Cheese recipe, made with Gruy�re, fresh tomatoes and nutmeg for warmth, from Food Network's Barefoot Contessa.

- Preheat the oven to 375 degrees F.
- Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.
- Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt 6 tablespoons of butter in a large (4-quart) pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1 tablespoon salt, pepper, and nutmeg. Add the cooked macaroni and stir well. Pour into a 3-quart baking dish.
- Slice the tomatoes and arrange on top. Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.
RAMAC AND CHEESE
This "ramen hack" uses fresh ingredients to dress up packaged ramen noodles and take them in a non-Asian direction. This one comes out much like macaroni and cheese - although the ramen themselves are softer than traditional elbow macaroni, making this texturally odd. Steps:
- Remove and reserve 2 tbsp (1 oz) grated cheese.
- Toss remaining cheese and cornstarch until well coated. Transfer to a saucepan. Add most of the evaporated milk (reserve about 1 tablespoon) and the hot sauce. Cook over low heat, whisking constantly, until melted, bubbly and thickened, about 5 minutes. (Sauce will look thin and grainy at first, but will smooth out and thicken as it cooks.) Thin to desired consistency with reserved evaporated milk.
- Prepare ramen according to package directions, discarding seasoning packet. When noodles are tender, drain and toss with cheese sauce. Transfer to an oven-safe dish, top with reserved grated cheese and broil until cheese is melted and bubbly.

EASY MAC AND CHEESE
This is from Aunt Debbie who got it from someone else. It is about the easiest mac and cheese to be made. My 4 year old daughter loves this. This is about as easy as you can get. You can add other ingredients after about 45 minutes according to my sister in law. I like it just with cheese.

Steps:
- Heat oven to 350 degrees.
- Put butter, salt, and pepper in 13x9 pan. Place in oven to melt butter.
- When butter is melted, add uncooked macaroni. Toss to coat with butter.
- Cover buttered, uncooked macaroni with all of the cheese.
- Place pan on a cookie sheet and place on rack in middle of oven. DO THIS BEFORE ADDING MILK. THE PAN WILL BE VERY FULL AFTER NEXT STEP!
- Pour milk over noodles/cheese.
- Bake at 350 for 1 hour to 1 hour and 15 minutes. Cool for about 10-15 minutes until set.

RAMEN SHEPHERD'S PIE

- Boil ramen noodles in water until tender. Drain and set aside.
- Meanwhile, heat oil in skillet until shimmering. Add beef and cook until no longer pink, breaking up any large clumps with the edge of a spoon, about 5 minutes. Drain any excess fat and discard.
- Add onion, water, Worcestershire sauce and peas. Season to taste with salt and pepper. Transfer to an oven-safe dish, top with cooked noodles, and broil until brown and crispy.
