RAISIN WHISKEY STEAK
A quick and easy steak recipe that doesn't require an expensive cut of meat to taste good. Goes well with couscous.

Steps:
- Place raisins, whiskey, and brown sugar into a resealable plastic bag.
- Place steaks into the bag, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 10 to 30 minutes.
- Heat canola oil in a large skillet over medium high heat.
- Transfer steaks and marinade to the hot skillet.
- Remove raisins from the skillet with a slotted spoon once they have plumped, about 5 minutes; set aside.
- Cook steaks until they are beginning to firm and are hot and slightly pink in the center, 5 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 140 degrees F (60 degrees C).
- Serve the steaks with the raisins.

- In a shallow dish, combine the first 5 ingredients; add the beef and turn to coat. Cover; refrigerate for 8 hours or overnight., Drain and discard marinade. Place beef on a broiler pan coated with cooking spray. Broil 4-6 in. from the heat for 7-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 1e5°; medium, 140°; medium-well, 145°).

PAN-BROILED STEAK WITH WHISKEY SAUCE
This recipe is one for all you carnivores. Nothing like a good ole steak with some really great sauce. Don't get me wrong, sometimes a steak doesn't need anything other than cooking, but this sauce is pretty dog-gone good. It's excellent for company or just a special meal with your honey.

Steps:
- Trim away any excess fat from the steak or steaks.
- Press the crushed peppercorns and garlic onto both sides of the steak and let it stand at room temperature 1 hour.
- Heat a heavy iron skillet over high heat.
- Grease the skillet with a piece of the fat trimmed from the steak.
- Toss in about half the salt.
- Sear the steaks quickly on one side, then lift out; add the remaining salt to the skillet, turn the steak and sear the other side.
- Reduce the heat to moderate and cook the steaks as desired.
- Remove to a warmed platter.
- Make the sauce.
- Pour off fat from the skillet.
- Melt the butter in the skillet over low heat.
- Add the onion and garlic and cook slowly until soft, stirring often.
- Add the remaining ingredients and simmer for 1 to 2 minutes.
- Pour over the steak or steaks and serve.
EASTER HAM STEAKS WITH WHISKEY SAUCE
Nice way to do ham steaks or if you are cooking a whole ham use the whiskey sauce with raisins to pour over the sliced ham, either way MMMMMMMMmm

Steps:
- If there is any fat around the edges of the steaks cut into the edge or remove the fat.
- Melt 2 tbsp butter& brush both sides of the ham with it.
- Grill both sides of the ham steaks in a skillet for about 8 minutes each side (the time depends on the thickness of the steak).
- Meanwhile prepare the whiskey sauce in a saucepan.
- Add the onions to the saucepan with a 1 tbs butter and saute until translucent, use medium heat.
- Take the saucepan off the heat and whisk in the flour, graduallyy adding the water.
- Add brown sugar return to heat and bring the sauce to a boil.
- Reduce heat& simmer for 2 minutes.
- Add whiskey just before using it, season to taste with salt& pepper.
- Pour over the hot ham steaks and serve.
- You can add raisins to this suce if youwish.

- Season the steaks on both sides with salt and pepper. In a small bowl, mix together the garlic and all but 2 teaspoons of the mustard. Place the steaks on a plate, and spread half of the garlic mustard mixture over one side of them. Let stand for 30 minutes.
- Heat a large skillet over medium-high heat. Fry bacon until crisp, then remove from the pan, leaving the grease. Crumble the bacon and set aside.
- Heat the bacon grease in the skillet over medium-high heat, and add olive oil if necessary to cover the bottom of the pan. Fry steaks mustard side down for about 5 minutes, until golden brown. While the steaks are frying, spread the remaining garlic and mustard over the top. Flip the steaks over, and fry for about 2 minutes, until browned. Remove steaks to a serving platter, and keep warm.
- Keep the skillet over medium-high heat, and stir in the rosemary, whiskey, reserved mustard, Worcestershire sauce, brown sugar, and lemon juice. Simmer for about 2 minutes. Top steaks with crumbled bacon and the sauce, and serve.
