COPYCAT RAGU PASTA SAUCE



Copycat Ragu Pasta Sauce image

Number Of Ingredients 11

1 Tablespoon olive oil
3 garlic cloves, peeled & chopped
1/4 cup onion, peeled and finely chopped
29 oz. (or 1 quart jar) of tomato sauce
1 lb of fresh garden tomatoes, peeled, cored and chopped (or 15-oz canned)
3 teaspoons granulated sugar
1 cup freshly shredded Parmesan cheese
1 Tablespoon fresh basil leaves, chopped fine
1/2 teaspoon dried parsley
1/8 teaspoon black pepper
1 bay leaf

Steps:

  • Heat the olive oil in a nonstick saucepan over medium heat. Add the onion and garlic and saute for a few minutes until the onion is tender.
  • Add the rest of the ingredients, bring to a boil, then reduce heat to a simmer and cook uncovered for about 30 - 45 minutes or until the sauce is thickened to your liking.
  • Remove the bay leaf. Let cool a bit, then blend until smooth. Store in an airtight jar in the fridge.

1⁄8 tsp black pepper
1 bay leaf

Steps:

  • Heat the olive oil in a nonstick saucepan over medium heat. Add the onion and garlic and saute for a few minutes until the onion is tender.
  • Add the rest of the ingredients, bring to a boil, then reduce heat to a simmer and cook uncovered for about 30 to 45 minutes or until the sauce is thickened.

  • Use as desired and enjoy.

This a terrific recipe with no added sugar because tomatoes contain sufficient sugar to make it naturally sweet. We'll put this on pasta not pancakes! It comes from the Sicilian Culture website. Try it and you will see. I also sub 1 lb cooked chicken (if using cooked chicken, cook sauce for complete time and add chicken just prior to serving), or 1 lb Italian hot sausage for the ground beef.

1 lb ground beef
1/4 cup grated parmesan cheese (optional)
1 teaspoon parsley
1/2 cup onion, chopped
3 garlic cloves
6 ounces tomato paste
28 ounces crushed tomatoes
1 tablespoon oregano
1/2 tablespoon basil
salt and pepper (optional)

Steps:

  • Add the olive oil.
  • chop cloves of garlic and add to the oil.
  • sautee and add the onions until they are clear or translucent
  • Try not to burn the garlic, as it will become bitter.
  • Combine the meat and fry the meat, breaking it apart until it is browned and cooked.
  • Add all to the sauce and continue to simmer for 40 minutes or more.
