1 store bought pizza dough - or pick one up from your favorite pizzeria
Extra- virgin olive oil, for drizzling
2 cups whole or part skim ricotta
2 cloves garlic, finely chopped
Handful flat-leaf parsley, finely chopped
2 cups shredded mozzarella or provolone, 1 pouch
10 fresh basil leaves, 1/2 cup, shredded

Steps:

  • Preheat a pizza stone if you use one along with the oven to 425 degrees F.
  • Stretch dough to form a pie and transfer to stone or pizza baking tray. Pierce the dough with the tines of a fork in several places. Drizzle extra-virgin olive oil around the crust. Mix the ricotta cheese with garlic and parsley and season it with salt and black pepper. Spread the ricotta across the dough. Top the pizza with mozzarella or provolone. Bake until crispy, 20 minutes. Top the white pizza pie with the shredded basil leaves, cut and serve.

1 small, firm zucchini
Salt
About 1 1/2 teaspoons or scant half palmful pimenton or smoked paprika
1 teaspoon red pepper flakes
1 teaspoon granulated garlic
1 teaspoon ground mustard
1/2 teaspoon fennel seed
1/2 teaspoon black pepper
One 15-ounce can whole Italian tomatoes
2 tablespoons EVOO
1/2 teaspoon superfine sugar or honey
2 cloves garlic
A few leaves of fresh basil
Salt
One 1-pound ball dough from market or your favorite pizza parlor, or EZ Pizza Dough, recipe follows
AP flour, for stretching dough
About 1 tablespoon cornmeal or semolina
EVOO spray
Salt and pepper or red chile flakes
2 cups shredded mozzarella or mozzarella and provolone
1 cup acacia honey or other light in color and flavor honey
3 scant tablespoons Calabrian chile paste
A few leaves torn fresh basil, to serve
Dried oregano, to serve
Vegetable Antipasti Salad, recipe follows
1 cup warm water
1 package active dry yeast (look for pouches marked "For Pizza")
2 tablespoons EVOO, plus some for bowl
1 tablespoon acacia honey or other light in color and flavor honey
2 teaspoons kosher salt
3 cups AP flour, plus more to roll dough
1 bulb fennel
3 heads gem romaine or 1 small head romaine (cleaned)
2 ribs celery with leafy tops
1/2 small red onion
A handful of fresh parsley
A handful of basil leaves
About 1/3 cup EVOO
2 tablespoons white or red wine vinegar
1 teaspoon dried parsley
1 teaspoon granulated garlic
1 teaspoon red pepper flakes
1 teaspoon granulated onion
1 teaspoon dried oregano
1 teaspoon sugar or honey
1/2 lemon
Salt and pepper
2 large roasted red peppers
6 grilled artichoke hearts or marinated artichoke hearts
3 to 4 hot pickled cherry peppers
About 1/2 cup semi-dried tomatoes (This product is new to markets; chopped sun-dried tomatoes in oil are fine as well.)
1/2 to 3/4 cup pitted Cerignola olives or other olives of choice

Steps:

  • For the zucchini: Preheat the oven to 525 to 550 degrees F (as high as it goes) with rack at center. Preheat a 12-inch cast-iron skillet over medium to medium-high heat, to aid in a crispy bottom crust while pizza is in oven.
  • Gather your ingredients. Thinly slice the zucchini (think pepperoni sausage) and add to strainer. Season with salt, let drain 15 minutes, then pat dry on towel.
  • In a small bowl, combine spices. Add it to the zucchini and toss to combine.
  • For the sauce: In a food processor, combine ingredients for sauce and puree.
  • For the pizza: Roll and stretch dough on lightly floured surface into a 12- to 14-inch even round that will cover pan. (Place some AP flour in a squeeze bottle for flouring counter to roll out dough. I use this tip at home.) Turn off heat under skillet and sprinkle a little cornmeal or semolina in skillet. Press dough into hot skillet and up sides as much as possible. Reminder: The pan is hot. Brush or spray the dough with EVOO and season with a little salt and pepper or red pepper flakes. Top the dough with sauce, half the zucchini, cheese and remaining zucchini, then place pizza in oven.
  • Bake 10 to 12 minutes to deep golden, brown and bubbly.
  • Use a funnel to fill a squirt bottle with honey and Calabrian chile paste. Run under hot tap water to loosen when using. Hot honey will keep for months in pantry and is great with cheeses for snacking and fried foods as well as pizza, of course.
  • Drizzle the pizza with the hot honey mixture and top with basil and oregano. Serve with Vegetable Antipasti Salad.
  • To a mixer with dough hook attached add warm water and yeast and let the yeast bloom and foam, 5 minutes. Add EVOO, honey and salt and turn on mixer. Add the flour gradually to form dough, then transfer to a bowl drizzled with a little EVOO and cover, let stand 1 hour. Cut dough in half, wrap half the dough and freeze for later use. Roll and press remaining dough on floured surface to 12-inch round.
  • Gather ingredients.
  • Thinly slice fennel. Chop and combine lettuce, celery, onions, parsley and torn basil, arrange on a platter.
  • Combine dressing ingredients (EVOO, vinegar, dried herbs and spices, sugar or honey and lemon juice) in squirt bottle, small jar or bowl, then season with salt and pepper to combine.
  • Slice the peppers into strips, quarter the artichoke hearts, thinly slice the hot cherry peppers. Arrange the vegetables and olives on the bed of salad. Shake up dressing and top evenly over salad to serve.

STEAK PIZZAOLA WITH THE WORKS

1 24 ounce to 2 pound piece porterhouse or rib-eye steak
Salt and pepper
3 tablespoons extra-virgin olive oil, 3 turns of the pan
4 cloves garlic, crushed away from the skins
1 teaspoon crushed red pepper flakes
12 mushrooms, sliced
1 small onion, sliced
1 green bell pepper, seeded and sliced
1/3 stick pepperoni, casing removed, then chopped, optional
1/2 cup dry red wine, eyeball it
1 (28-ounce) can crushed tomatoes
1 teaspoon dried oregano or 2 teaspoons chopped fresh oregano leaves
1/4 cup grated cheese, Parmigiano or Romano

Steps:

  • Heat a large nonstick skillet over high heat. Season the steak with salt and pepper. Add 2 tablespoons extra-virgin olive oil to the pan. Brown 3 minutes on each side and remove. Add another turn of the pan extra-virgin olive oil and reduce heat to medium high. Add garlic, pepper flakes, mushrooms, onions, peppers and pepperoni, if using. Cook mixture 5 minutes, then add wine and scrape up any good-bits from the bottom of the skillet. Add tomatoes, oregano, salt and pepper, to taste. Slide steak back in and reduce heat to medium. Cover pan and cook 5 or 6 minutes for medium rare, 10 to 12 minutes for medium well. Remove meat, cut away from bone or divide into 2 large portions. Cover steaks with sauce and top with grated cheese.

MEGA MEATBALL PIZZA

1 pizza dough, store bought or from your favorite pizza shop
A palm full all-purpose flour or cornmeal
Extra-virgin olive oil, for drizzling, plus 2 tablespoons - 2 turns of the pan
2 tablespoons finely chopped rosemary leaves, a couple of sprigs
Coarse salt
1 1/2 pounds ground sirloin
1 medium onion, finely chopped
4 to 6 cloves garlic, finely chopped
Black pepper
1 (6-ounce) can tomato paste
1/2 cup grated Parmigiano-Reggiano
A handful flat-leaf parsley, chopped
1 teaspoon dried oregano
3/4 pound fresh mozzarella or brick mozzarella, your choice, sliced or grated

Steps:

  • Preheat oven to 425 degrees F.
  • On a round pizza stone or pan or on a rectangular baking sheet, using flour or cornmeal to dust the dough, spread out the dough to form your crust. If you are using a baking sheet, drizzle pan with extra-virgin olive oil then set crust in place. Poke the pizza dough in several areas with the tines of a fork. Drizzle the dough with extra-virgin olive oil then season it with finely chopped rosemary and a little salt. Place in oven 10 minutes.
  • Heat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan, then the meat. Brown and crumble meat a couple of minutes, then add onions and garlic. Season the meat with salt and pepper then work in the tomato paste using the back of a wooden spoon to combine. Stir in the cheese, parsley and oregano.
  • Remove pizza crust from oven and top with meat. Arrange cheese over the pizza, working to edges. Return the pizza to the oven and bake until cheese is golden, another 10 to 12 minutes.

1 1/2 cups warm water (105 -115 )
3 tablespoons active dry yeast
1 1/2 teaspoons honey
1 1/2 tablespoons extra virgin olive oil
4 1/2 cups unbleached all-purpose flour
1 1/2 teaspoons kosher salt
3 tablespoons fresh oregano, Chopped
1/4 cup extra virgin olive oil, Divided
1/4 cup grated parmesan cheese
2/3 lb artichoke heart, Quartered
6 garlic cloves, Cracked
1 lb chicken breast, Cut for Stir Fry
salt and black pepper, to Taste
2 cups part-skim ricotta cheese
20 sun-dried tomatoes packed in oil, Drained and Sliced Julienne
2 cups shredded mozzarella cheese
12 -15 leaves fresh basil, Thinly Sliced

Steps:

  • In a large bowl, combine the water, yeast, honey, and 1 tablespoon of the olive oil, stirring to combine. Let sit until the mixture is foamy, about 5 minutes.
  • Add 1½ cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, ¼ cup at a time, working the dough after each addition, until the dough is smooth but still slightly sticky. You might not need all of the flour.
  • Turn the dough out onto a lightly floured surface and knead until the dough is smooth but still slightly tacky, 3 to 5 minutes.
  • Oil a large mixing bowl with remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1½ hours.
  • Pre-Heat Oven to 500°.
  • On a 16-inch nonstick pizza pan or peel, stretch out your dough and form the pizza crust. Drizzle 4 teaspoons of the olive oil on the crust and spread it with a pastry brush over the dough to the edges. Sprinkle crust with grated Parmesan.
  • Heat a small nonstick pan over medium-high to high heat. Add oil, cracked garlic, and chicken and season with salt and pepper to taste.
  • Brown chicken breast until lightly golden all over, 3 to 5 minutes.
  • Chop sautéed chicken and garlic into small pieces on a cutting board.
  • To assemble pizza, dot crust with spoonfuls of ricotta and spread ricotta gently with the back of your spoon.
  • Dot ricotta with chopped broccoli bits and cooked chopped chicken. Add sliced sun-dried tomatoes, scattering them around the pizza to the edges.
  • Complete the assembly with a thin layer of shredded mozzarella.
  • Place pizza in oven on middle rack and lower heat to 450°. Bake for 12 minutes, until cheese is deep golden in color and crust is brown and crisp at the edges.
  • Remove pizza from the oven and let stand for 5 minutes. Top with lots of torn or shredded basil. Cut pizza into 8 slices using pizza cutter and serve.

0.5 pounds chicken breasts

1 cups ricotta cheese
10 units sun dried tomatoes
1 cups shredded mozzarella cheese
12 leaves basil

Steps:

  • 1) Preheat oven to 500 degrees F.
  • 2) On a 12-inch nonstick pizza pan, stretch out your dough and form the pizza crust. Drizzle 2 teaspoons extra virgin olive oil on crust and spread it with a pastry brush over the dough to the edges. Sprinkle crust with 2 tablespoons grated Parmigiano-Reggiano.
  • 3) In a small covered saucepan, bring 2 inches water to a boil.
  • 4) Separate broccoli tops into florets, discarding lower stalks or reserving for soup. Salt water and add broccoli florets. Cook covered 3 to 5 minutes. Drain broccoli and set on cutting board. Chop broccoli florets into small pieces.
  • 5) Heat a small nonstick pan over medium high to high heat. Add oil, cracked garlic and chicken. Season with salt and pepper. Brown chicken breast cut for stir-fry or tenders until lightly golden all over, 3 to 5 minutes. Chop sauteed chicken and garlic on a cutting board into small pieces.
  • 6) To assemble pizza, dot crust with chopped broccoli bits and cooked chopped chicken. Dot crust with spoonfuls of ricotta and spread ricotta gently with the back of your spoon. Add sliced sun-dried tomatoes, scattering them around the pizza to the edges. Complete the assembly with a thin layer of shredded mozzarella, about 1 cup.
  • 7) Place pizza in oven on middle rack and lower heat to 450 degrees F. Bake 12 minutes, until cheese is deep golden in color and crust is brown and crisp at the edges. Remove pizza from the oven and let stand 5 minutes. Top with lots of torn or shredded basil. Cut pizza into 8 slices using pizza wheel and serve.
