Mexican Quinoa Salad with Chili Lime Dressing image

This healthy Mexican Quinoa Salad is a quick, easy, and gloriously make-ahead dish! Tossed in a speedy homemade chili lime dressing, this fiesta quinoa bowl is full of flavor!

1.5 cups quinoa
2 + 1/4 cups water
1-2 bell peppers ((any color))
2 cups black beans
2 large ripe tomatoes
1 cup corn
1/2-1 cup finely chopped onion ((red or white))
1/4 cup fresh chopped cilantro or scallions
1/3 cup avocado oil
2 TBSP white wine vinegar
1 TBSP lime juice (plus extra to taste)
1 clove garlic ((peeled and minced))
1 tsp chili powder
1/2 tsp cumin
1/4 tsp salt (or season to taste)
1/4 tsp pepper

Steps:

  • First rinse and drain your quinoa using a mesh strainer or sieve.
  • Bring a medium saucepan to medium heat and lightly toast the quinoa to remove any excess water. Stir as it toasts for just a few minutes. This step is optional but really adds to the nuttiness and fluff factor of the quinoa!
  • Next add water, set burner at high, and bring to a boil. Once boiling, reduce heat to low and simmer, covered with the lid slightly ajar, for 12-13 minutes or until quinoa is fluffy and the liquid has been absorbed.
  • While the quinoa cooks, chop and prep your veggies and cilantro. Drain and rinse beans if using canned. Whisk together your dressing ingredients.
  • Snag your now-fluffy quinoa from the pot and give it a little fluff with a fork. Add remaining ingredients and dressing and mix well. Refrigerate to cool quinoa and allow flavors to mingle and amplify, approx. 1-2 hours or more. Enjoy chilled and feel free to add any additional seasoning, veggies, or lime juice to taste!

1 cup quinoa, rinsed
2 cups vegetable broth
1 1/2 cup cherry tomatoes, halved
1 can chickpeas, drained and rinsed (or 1 3/4 cup cooked chickpeas)
large handful of cilantro, chopped
2 avocados, cubed
2 tablespoons olive oil
zest of 1 lemon
juice of 2 small lemons
1 teaspoon liquid sweetener (maple syrup, agave, honey)
1 clove garlic, minced
1/2 teaspoon cumin
salt and pepper to taste

Steps:

  • QUINOA: Start by rising 1 cup of quinoa in a fine mesh strainer. Place the rinsed quinoa and 2 cups of vegetable broth into a sauce pan and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and allow the quinoa to cook for 15-20 minutes or until all of the vegetable broth has been absorbed. Remove the quinoa from the heat, cover the pat and allow it to sit for 5 more minutes. To finish, remove the lid and fluff the quinoa with a fork.
  • DRESSING: While the quinoa is cooking, prepare the lemon dressing by whisking all of the dressing ingredients together in a bowl. Set aside.
  • QUINOA SALAD: To assemble the salad, add the cherry tomatoes, chickpeas and cilantro to the quinoa and pour the lemon dressing over top. Stir well to combine. If possible, chill the quinoa salad in the fridge for about 15 minutes to an hour. Right before serving, add in the cubed avocado. Enjoy!

3 -5 tablespoons fresh lemon juice

Steps:

  • Bring water to a boil. Add quinoa and simmer for about 11 minutes.

1 red onion, small, minced
2 jalapeno peppers, seeded and minced
1/2 red pepper, diced

Steps:

  • Place quinoa in a fine mesh sieve and rinse thouroughly with cold, running water. Bring water to boil in a small pot, add the quinoa and salt, and bring to a boil again. Cover and reduce heat to low for 15 minutes. Turn off the heat and keep the pot covered for an additional 5 minutes. Strain off any excess liquid and spread the quinoa out to cool on a tray while preparing the remaining ingredients.
  • Steam or lightly saute corn until just tender and cool to room temparature. Combine all of the ingredients in a large bowl and gently toss. Season with additional salt, pepper, or hot sauce to taste. Serve with fresh lime wedges.
