1 1/2 cups skim milk
1/2 cup rinsed quinoa
2 teaspoons pure maple syrup
Pinch of ground cinnamon
1/2 cup fresh raspberries
Sliced banana

Steps:

  • Bring milk and quinoa to a boil in a small saucepan. Simmer, covered, until mostof milk is absorbed, about 14 minutes. Remove from heat and stir in maple syrup, cinnamon, and raspberries. Top with banana.

1/3 cup quinoa flakes
1 cup rice milk or 1 cup water
1 tablespoon maple syrup or 1 tablespoon agave nectar
1/4 cup dried fruit
2 tablespoons nuts, chopped

Steps:

  • Combine quinoa flakes with liquid of your choice in a 2 - 2 1/2 cup microwaveable bowl -- I used a combination of rice milk and coconut milk the first time I made this.
  • Microwave for 2 1/2 mins watching closely so it doesn't boil over. Use a larger bowl if you want to avoid a potential mess.
  • Add in dried fruit, nuts, and sweetener (honey, agave nectar, maple syrup, sugar).
  • Let stand for a few minutes or until it's at a temperature you can comfortably consume it without burning your mouth!

Quinoa (pronounced Kin-wa) is an ancient grain that was a staple food of the ancient Incas of South America. This recipe is a cooked cereal somewhat like oatmeal, but even healthier! It is gluten-free and according to Bob's Red Mill (the brand of quinoa I used), is the most nutrious of all grains. The added flax meal is for boosting your omega-3s. I make this on the weekend, and then reheat a bowl in the microwave.

1 cup quinoa (whole grain)
2 1/2 cups water
1/4 cup flax seed meal
1/3 cup dried apricot, diced
2 tablespoons sunflower seeds

Steps:

  • Heat water in a covered pot to boiling.
  • Meanwhile, dice dried apricots and measure other ingredients.
  • Add all remaining ingredients to boiling water, stir well and return to a boil.
  • Cover and reduce to simmer for 12 minutes, or until all water has been absorbed, stirring once or twice in the middle.
  • Remove from heat, fluff (like you would rice), cover and let stand for 10 minutes.
  • Serve in a bowl with milk (or dairy free milk alternative like soy milk, rice milk or almond milk), and a drizzle of honey if desired.

Love oatmeal, but not gluten? This has the warmth and nostalgia of apple cinnamon oatmeal and is a wonderful way to prepare this nutritious "grain". A yummy, nutritious way to start the day, and even the kids will love it!

1/3 cup quinoa, well rinsed
2/3 cup water
1 granny smith apple, peeled and finely chopped
1/4 cup raisins
1/4 cup chopped almonds or 1/4 cup cashews
2 -3 teaspoons cinnamon
1 teaspoon soy margarine
1 -2 tablespoon maple syrup (optional)

Steps:

  • Rinse Quinoa well to ensure your dish doesn't have a bitter taste.
  • In a small sauce pan, bring water and Quinoa to a boil.
  • Reduce heat to low and simmer (uncovered) for 10-15 minutes (or until water is absorbed). You will know that the quinoa is done when all the grains have turned from white to transparent, and the spiral-like germ has separated.
  • In a separate sauce pan, while Quinoa is cooking, melt soy margarine, then add raisins, nuts, cinnamon (and syrup, if desired) and simmer until raisins are plumped.
  • When Quinoa is fully cooked, add fruit and nut mixture. Serve immediately.

Oatmeal contains a balanced soluble and insoluble fiber, which reduces your low-density lipoprotein (LDL), the "bad" cholesterol. Walnuts can significantly reduce blood cholesterol, rich in polyunsaturated fatty acids, walnuts also help keep blood vessels healthy and elastic. Cinnamon and honey together reduces the cholesterol in the arteries, lowering LDL cholesterol; helps heart health! A key nutrient in raisins and bananas is potassium which may help reduce the risk of stroke, lower blood pressure, reduce risk of heart arrhythmias. Apples have no fat, cholesterol or sodium, and contain small amounts of potassium, which may promote heart health. Take note: Commercial cultivation of quinoa removes much of the soapy saponins that coats the seeds, I would still thoroughly wash the seeds to remove any remaining saponin residue. Place the quinoa in a fine-meshed strainer, gently rubbing the seeds together with your hands while water runs over the seeds. Quinoa a very good source of magnesium, the mineral that relaxes blood vessels. Since low dietary levels of magnesium are associated with increased rates of hypertension, ischemic heart disease and heart arrhythmias, this ancient grain can offer yet another way to provide cardiovascular health. Leftovers can be cooled and refrigerated in an airtight container for up to 5 days. For results this type of breakfast should be eaten 6 times a week.

1 teaspoon cinnamon
2 tablespoons dried blueberries, and or 2 tablespoons dried cranberries
2 tablespoons walnuts, toasted and rough chopped
2 cups water
raw honey
banana, sliced (optional)
berries (optional)

Steps:

  • Mix all ingredients except for the toppings in a pot and bring to a boil, reduce heat and simmer covered for 20-30 minutes. Depending on size and juiciness of the apple you may need more liquid. Adjust accordingly, by adding water or juice.
  • Stir and serve with raw honey, banana, and rice milk.

My children love this cereal. They don’t eat a whole bowl of it, but use it as a topping on porridge or instead of adding sugar to a plain cereal such as rice puffs.
