- Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
- Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.

- Preheat the oven to 350 degrees F.
- Bake the pecans in a single layer in a shallow pan 10 to 12 minutes or until toasted and fragrant, stirring halfway through.
- Line a 15-by-10-inch jelly-roll pan or a 9.5-by-13-inch casserole dish with aluminum foil; lightly grease the foil with baking spray. Arrange the graham crackers in a single layer in the prepared pan, slightly overlapping the edges.
- Combine the sugar, butter and cream in a medium-size heavy saucepan; bring to a boil over medium heat and stir in the vanilla and pecans. Pour the butter mixture over the crackers, spreading to coat.
- Bake for 10 to 11 minutes or until lightly browned and bubbly. Immediately sprinkle with the salt, lift the foil from the pan and slide the bark off the foil onto a wire rack. Cool completely, 30 minutes to an hour. Break into bite-size pieces.

These are make-ahead and filled with flavor. Get these done, refrigerate and just pull them out a little before serving. That's my idea of a great thing to have on hand for any time, however big or small. Rolling the goat cheese in pecans, lemons and parsley also gives the tangy goat cheese the perfect companion: crunchy, toasty pecans. The freshness of the parsley and lemon zest serves as the perfect bridge for these ingredients. These are also naturally gluten-free which can nicely round out any hors d'oeuvre platter you are planning for any occasion. These are balls of goat cheese that are rolled in crushed pecans mixed with a little lemon zest and chopped parsley. The platter can be mixed (some rolled with lemon zest and pecans and some rolled with parsley) to provide two type of colors and flavor, both simple and both centered on pecans. - Break up and mix the goat cheese with the black pepper in a medium bowl. Divide into 24 pieces, about 2 teaspoons each and roll into balls.
- Combine the pecans, lemon zest and parsley in a medium bowl until well blended. Roll the goat cheese balls in the pecan mixture. Arrange on a serving platter. Refrigerate until ready to serve. Take them out 15 minutes before serving so they soften a little and drizzle with a little olive oil, if desired.

- In a small skillet, combine the vinegar and olive oil and bring to a simmer over medium heat. Cook for 1 minute, then add the sliced figs. Simmer until the vinegar is reduced and syrupy, 1 to 2 minutes more. In a small bowl, stir together the goat and mascarpone cheeses. Spoon the cheese mixture into the pastry shells, top with a drizzle of honey, a sliced fig, and a drizzle of balsamic reduction. Chop up the dried apricots and set on the side of the pastry shells on the plate.

- Preheat the oven to 425 degrees F. Heat the olive oil and butter in a large skillet over medium-high heat. Add the garlic and cook until softened, about 1 minute. Add the greens and 1/2 teaspoon salt; cook, stirring occasionally, until the greens wilt and most of the liquid evaporates, 5 to 7 minutes.
- Meanwhile, roll out the puff pastry on a lightly floured surface until large enough to fit in a 9-inch pie plate. Ease into the pie plate and trim the edge; crimp if desired. Scatter the goat cheese and Parmesan in the crust, then top with the sauteed greens.
- Whisk the eggs, heavy cream, nutmeg, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl; pour over the greens. Bake until the crust is golden brown and the quiche is set, about 20 minutes. Slice into wedges.

- Place goat cheese, cream cheese, honey and cinnamon into a large mixing bowl. Use an electric mixer to fully combine ingredients until smooth. Add 1/2 cup of chopped pecans (reserve the rest for later). Stir the pecans into cheese mixture until combined. NOTE: I "dry-toasted" the pecans in a skillet (no oil, etc.), stirring for a few minutes to slightly toast them before using them in this recipe. I then let the pecans cool before adding them to the cheese mixture. THIS STEP IS COMPLETELY OPTIONAL (but good!).
- Place a sheet of parchment paper on kitchen counter. Put remaining cup of chopped pecans, dried cranberries and chopped fresh parsley on the paper. Gently combine pecans, cranberries and parsley. Spread them out on the parchment paper.
- Place a scoop (using cookie scoop or Tablespoon) of the goat cheese mixture on top of the cranberry/pecan/parsley mixture. Make sure the cheese mixture is rounded into a ball. Roll it around in the topping, until the cheese ball is covered on all sides. When done, place the cranberry pecan goat cheese ball on a large plate or platter. Repeat process (one at a time) until all the goat cheese mixture is gone.
- The cheese balls will need to be refrigerated, for peak flavor and texture. They will firm up as they chill. They are at their best, when served cold, right from the refrigerator! You can make these appetizers up to 3 days in advance, which is a great timesaver! They need to be stored in the refrigerator in a sealed, airtight container. Serve as is, or gently insert a stick pretzel into the top of the cheese ball right before serving. Enjoy!
