With so much chocolate flavor in the brownies and in the frosting, you'd never guess this version is actually healthier than the average brownie!

¼ cup butter
½ cup white sugar
2 eggs
⅓ cup applesauce
1 teaspoon vanilla extract
⅓ cup unsweetened cocoa powder
⅓ cup white whole wheat flour
¼ teaspoon salt
¼ teaspoon baking powder
3 tablespoons butter, softened
3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
½ cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • Melt 1/4 cup butter in a large saucepan over low heat. Remove from heat and stir in white sugar, eggs, applesauce, and 1 teaspoon vanilla extract. Beat in 1/3 cup cocoa powder, flour, salt, and baking powder. Spread into prepared pan.
  • Bake in preheated oven until brownies are just set in the center, 20 to 25 minutes.
  • Combine 3 tablespoons butter, 2 tablespoons cocoa powder, honey, 1 teaspoon vanilla extract, and confectioner's sugar in a bowl; beat until smooth. Frost brownies while they are still warm.

These brownies are not cake-like. They are more moist and gooey. I always undercook them a bit because we like them very moist.

1/2 cup vegetable oil
1 cup sugar
1 teaspoon vanilla
2 large eggs
1/4 teaspoon baking powder
1/3 cup cocoa powder
1/4 teaspoon salt
1/2 cup flour

Steps:

  • Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
  • Mix oil and sugar until well blended.
  • Add eggs and vanilla; stir just until blended.
  • Mix all dry ingredients in a separate bowl.
  • Stir dry ingredients into the oil/sugar mixture.
  • Pour into greased 9 x 9 square pan.
  • Bake for 20 minutes or until sides just starts to pull away from the pan.
  • Cool completely before cutting.
  • Note: I usually double the recipe and bake in a 9 x 13 pan. If you double the recipe, you will need to cook longer than 20 minutes.

2 tablespoons ground flax seeds
6 tablespoons water
1 cup zucchini, cut into large chunks
1 avocado, cut into large chunks
1 teaspoon vanilla extract
1/2 cup almond meal
1/2 cup coconut flour
1/2 cup coconut sugar
4 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips (optional) or 1/2 cup walnut pieces (optional)
oil, for coating the pan

Steps:

  • Mix ground flax seed and water to make "flax eggs" and set aside for about 5 minutes.
  • Preheat the oven to 350°F/180°C degrees.
  • In a food processor or blender, place flax eggs, zucchini, avocado, and vanilla and blend well.
  • In a bowl, combine almond meal, coconut flour, coconut sugar, cocoa powder, baking powder and salt.
  • Add the blended vegetable mixture and mix well. Add chocolate chips or walnut pieces if you are using them.
  • Transfer the batter to an 8-inch (20 cm) square pan coated with oil.
  • Bake for about 25 minutes.
  • Cool, infuse love and serve (with powdered sugar on top and/or ice cream if you wish).
