QUICK SWEET AND SOUR GREEN BEANS
These quick Sweet and Sour Green Beans are a delicious vegetable side. Served hot or cold, with or without corn, this recipe is a perfect addition to any meal and is definitely worth a try!

Steps:
- Wash, trim and cut green beans and dice your shallots.
- In a medium sized pot boil beans in water for about 5 minutes or until tender and bright green. Drain and leave in your colander.
- In the same pot heat the oil and wait for the oil to shimmer or a drop of water flicked in it dances. Add the diced shallots. Sauté over medium-high heat and stir constantly, until softened, about 3 or 4 minutes.
- Add the vinegar, salt, pepper and sugar and stir until incorporated. Taste mixture. Ken prefers things a little sweeter than I do and so might you!
- Add drained can of corn if using. Return beans to the pot. Combine and remove from heat. Toss gently until corn and beans are well coated. Serve immediately and enjoy!

- In a skillet, cook bacon until crisp; drain, reserving 2 tablespoons of drippings. Crumble the bacon and set aside. Saute the onion in drippings until tender. Stir in flour until thoroughly combined. Add water, vinegar and sugar. Cook and stir until thickened and bubbly; cook and stir 2 minutes more. Gently stir in beans and heat through. Sprinkle with bacon. Serve immediately.

- Place the beans in a heatproof container.
- In a pot, heat the vinegar and 2 cups water to a simmer. Take off the heat and add the mustard seeds, salt, sugar, red pepper and garlic. Whisk until the salt and sugar dissolve.
- Pour the liquid over the green beans. Let cool, and then cover and place in the refrigerator. Allow the beans to pickle 24 hours before using. Pickled green beans will keep tightly covered in the refrigerator for up to 1 month.

- In a large skillet, cook bacon over medium until browned, 3 to 4 minutes per side. With tongs, transfer to a paper-towel-lined plate (reserve skillet with pan drippings).
- Add onion to skillet; season with salt and pepper. Cook, stirring occasionally, until onion starts to brown, 3 to 5 minutes. Add green beans and 1/4 cup water; cook, tossing occasionally, until beans are bright green and tender, about 10 minutes.

I found several Sweet & Sour Green Bean recipes over the years. Like any cook, I liked certain things about certain ones, and decided to make my own. So, here is the result! But, I dare you to have leftovers; as when you are lucky enough to, they are great cold!

- Fry BACON and remove from fat.
- Mix SUGAR, VINEGAR and GARLIC; add to hot BACON FAT.
- Cook mixture for about 5 minutes over medium high heat.
- Place BEANS in a shallow baking dish.
- Sprinkle ALMONDS over BEANS.
- Place ONION rings on top of ALMONDS.
- Crumble BACON over the top of the ONIONS.
- Pour SUGAR/VINEGAR/GARLIC/BACON FAT mixture over the top of the BACON.
- Bake at 250 degrees for 4 hours.
- For a better presentation, I would drain the liquid off of the beans before serving, or serve the beans in soup bowls. But, keep the liquid, just in case you do reheat the beans.
