125g lard , chopped
125g butter , chopped
650g plain flour , plus extra for dusting
2 eggs , 1 beaten, 1 separated egg yolk for glazing (freeze the white for another recipe)

Steps:

  • Rub the lard and butter into the flour with a generous pinch of sea salt until completely combined. Add the beaten egg and 100ml ice-cold water and mix until you have a soft dough. Transfer to the fridge and chill for at least 1 hr, or until needed.
  • Divide the pastry into 12 equal pieces and roll out into rounds on a lightly floured surface. Use six of the rounds to line the bottoms of six individual pie dishes, leaving an overhang. Fill the pies with the mixture of your choice, brush the rims with some of the egg yolk, top with the remaining pastry rounds, then trim and crimp the edges. Decorate with the trimmings, if you like. Glaze with more egg yolk, or as indicated in the filling recipe, and chill until you're ready to cook.
  • Heat the oven to 220C/200C fan/gas 6 with a baking tray inside. Put the pies on the hot tray and bake for 30-35 mins until golden. Leave to rest as directed, then serve in the dishes or turn out onto plates.

1/2 pound ground beef
2 tablespoons all-purpose flour
1/2 to 1 teaspoon seasoned salt
1 tablespoon minced fresh parsley
1 teaspoon beef bouillon granules
1/4 cup water
1 cup diced peeled potatoes
1/2 cup diced carrots
2 tablespoons finely chopped onion
2 packages (11 ounces each) pie crust mix

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. Add flour, seasoned salt and parsley; stir until well coated. Dissolve bouillon in water; stir into meat mixture. Add potatoes, carrots and onion. Cover and cook over medium heat until vegetables are crisp-tender. Cool. , Meanwhile, prepare pie crusts according to package directions. On a floured surface, roll each pie crust into a 12-in. square. Cut each square into four 6-in. squares. Place about 1/3 cup meat mixture in center of each square. , Moisten edges of pastry with water and fold over meat mixture to form a triangle. Press the edges with a fork to seal. Make a 1-in. slit in the top of each triangle. Place on 2 ungreased baking sheets. Bake at 400° until golden brown, 20-25 minutes.

These easy beef pasties (beef hand pies) are made with a buttery, flaky buttermilk pie crust wrapped around a savory mixture of beef, carrots, potatoes, and onions in a quick homemade gravy.

1 cup (8oz, 2 stick cold unsalted butter (cut into 1/2-inch chunks)
2 1/2 cups (300g) all-purpose flour
1 tablespoon granulated sugar
1 teaspoon salt
1/2 to 2/3 cup buttermilk
1 tablespoon unsalted butter
12 ounces beef chuck (stew meat) (diced 1/2-inch)
1 1/2 cups diced potatoes (1/2-inch dice)
3/4 cup diced carrots (1/4-inch dice)
Water
1 1/2 teaspoon salt*
1/2 teaspoon crushed rosemary
1/4 teaspoon pepper
1/4 teaspoon oregano
3 tablespoons unsalted butter
1/2 cup finely diced onion
2 tablespoons all-purpose flour
1 egg
1 tablespoon milk

Steps:

  • Before you begin measuring everything out, place the cubed butter in the freezer to chill.
  • Stir together flour, sugar, and salt, and pour into the food processor. Add butter and pulse until butter is cut into the flour, but still has visible chunks.
  • While pulsing, slowly pour in 1/2 cup of the buttermilk and continue to pulse until the buttermilk is incorporated into the dough. At this point, your dough should look like rough crumbs and hold their shape if squeezed together. If dough does not hold its shape, drizzle in a little more buttermilk, up to 2½ additional tablespoons, until it does. The dough will look a little scary at this point, but don't worry. It's supposed to look like that!
  • Lay a sheet of plastic wrap on the counter and dump half of your dough crumbs onto the sheet. Gather the edges of the plastic wrap and press tightly together to form a 1-inch thick disk. Do the same with the rest of the dough. Place in a plastic bag and refrigerate for at least an hour, up to 24.
  • Preheat oven to 400°F.
  • In a medium saucepan, melt butter over medium-high heat (watch closely, you don't want to burn the butter) and add the meat. Cook until well browned.
  • Add potatoes and carrots and cover with just enough water that the meat and vegetables are submerged. Add salt, rosemary, pepper, and oregano.
  • Bring to a boil, turn down to medium and simmer for five minutes. Meat should be cooked through and potatoes should be softened, but still have a bit of a bite to them.
  • Remove from heat and drain the cooking liquid into a separate container for later use. Set liquid and meat and veggies aside.
  • In a medium saucepan, melt remaining 3 tablespoons of butter over medium heat. Add onions and cook until they begin to soften, about 2 to 3 minutes. Add flour and whisk continuously for 1 minute until a sticky paste forms and flour turns golden. Whisk in 1 cup of the reserved cooking liquid from your meat and potatoes (discard the rest). Simmer for 2 to 4 minutes, whisking continuously, until a thick gravy forms. Remove from heat and stir in the meat and vegetable mixture, making sure everything is well coated.
  • Whisk together egg and milk in a small bowl to make your egg wash.
  • On a well-floured surface, divide your dough into 4 to 6 equal-size pieces and roll into balls. If you are slow at rolling out pastry dough, place all the balls, but one, back in the fridge and work with one at a time so the dough stays chilled and easy to work with.
  • Re-flour your work surface and roll first ball out to 3/8 inch thick with a floured rolling pin, forming as round of a circle as you can manage (trim edges with a knife to make a perfect circle if necessary). Pick up your dough to make sure it is not stuck to your work surface. If it is, use a metal spatula to dislodge it before filling.
  • Brush egg wash around the edges of your pie crust to help seal it and spoon beef mixture over slightly less than half of the dough, leaving a 1/2-inch border. Fold dough over the filling and use a fork to crimp the edges closed. Cut 3 slashes in the top and transfer to baking pan.
  • Repeat with remaining dough balls. You may have a bit of meat mixture left over, depending on how thin you rolled out your dough. You can eat it with a spoon.
  • Brush pasties with egg wash and and bake for 15 to 20 minutes, until they are beautiful and golden.
  • Allow to cool slightly and enjoy.

2 cups butter-flavored shortening
7 tablespoons cold water
1 large egg, room temperature
1 tablespoon white vinegar
FILLING:
2 cups cubed peeled potatoes
2 cups finely chopped fresh carrots
1 pound ground beef
1 pound bulk pork sausage
1 cup sliced fresh mushrooms
1 medium onion, chopped
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup frozen peas
1 tablespoon sherry or chicken broth
1/2 teaspoon salt
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
1/2 cup shredded Colby cheese
1/2 cup sour cream

Steps:

  • In a large bowl, combine flour, sugar and salt; cut in shortening until crumbly. Whisk water, egg and vinegar; gradually add to flour mixture, tossing with a fork until dough forms a ball. Divide dough in quarters so that two of the portions are slightly larger than the other two; wrap each in plastic wrap. Refrigerate until easy to handle, about 1 hour., Meanwhile, place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook 5 minutes. Add carrots; cook until vegetables are tender, 6-9 minutes longer. Drain and set aside., In a Dutch oven, cook beef and sausage over medium heat until meat is no longer pink. Remove from pan with a slotted spoon; drain, reserving 1 tablespoon drippings. Saute mushrooms and onion in drippings until tender. Add soups, peas, sherry, salt, seasoned salt, pepper, beef mixture and potato mixture; heat through., Preheat oven to 375°. Roll out one of the larger portions of dough to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge. Fill with half of the meat mixture. Repeat with remaining larger portion of dough and filling., Roll out smaller portions of dough to fit tops of pies. Place over filling. Trim, seal and flute edges. Cut slits in pastry. , Bake until crust is golden brown, 45-50 minutes. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Sprinkle tops with cheese; let stand 10 minutes. Serve with sour cream.

VERY EASY CORNISH PASTY

2 tbsp olive oil
1 large onion, roughly chopped
2 garlic cloves, crushed
4 springs of thyme
250g beef mince
1 medium size potato, diced (about 7x7x7mm)
1 large carrot, diced
1 tbsp flour
500 ml beef stock
salt, pepper
chopped parsley
1/2 cup frozen peas
500 g Ready roll short crust pastry
1 egg, beaten

Steps:

  • Heat the oil in a large frying pan.
  • Soften the onion for about 5 mins, then add garlic and thyme and fry for another 2 mins on high temperature. Add the mince and fry for about 10 mins until browned, add potato and carrot fry for a couple of minutes then add flour, stir well and pour the beef stock over, add a pinch of salt and a generous pinch of freshly ground black pepper and stir some more. Reduce the heat, partly cover and leave to simmer for 30 mins, stir occasionally.
  • When the filling is cooked, taste and add more salt and pepper if needed (make sure you add plenty of pepper )
  • Then leave it to cool.
  • Preheat the oven to 180C, line a baking tray with grease-proof paper.
  • Roll out the pastry and cut into 3-4 circles of about 25cm diameter.
  • Separate the filling in 3-4 portions and place each portion slightly to one side of each pastry circle, top it with few frozen peas. Apply egg around the edge, then fold it in a half and seal it. Place the pastries on the baking try and glaze them with egg.
  • Bake them in the oven for about 30 mins.
  • Cool them and enjoy warm or cold.

QUICK PASTY PIE

This is my much quickened version of a pasty, put into pie form. For those who are unfamiliar with pasties, they are a pastry filled with meat, potatoes and onions, then folded into a half-circle. I live in an old mining town and these are still popular from the old days when the men would take them in their lunch boxes.

2 refrigerated pie crusts, at room temperature (1 package)
5 -6 cups frozen hash browns
1 lb lean ground beef
1/2-1 small onion, grated with cheese grater
2 garlic cloves, minced
salt and pepper
1/2 cup carrot, shredded (optional)
beef gravy (optional)
ketchup (optional)

Steps:

  • Preheat oven to 450°F.
  • Place crust in an 8-inch pie pan and press into bottom of pan.
  • In a large bowl, thoroughly combine hash browns, ground beef, shredded onion, garlic, salt and pepper, and carrots (if using).
  • Place filling into the pie pan and top with second pie crust.
  • Seal edges of crusts together and cut vents into the top crust.
  • Bake for 50-60 minutes or until meat is cooked through (I use a meat thermometer).
  • Serve topped with beef gravy or ketchup, if desired.
  • ***TIP - to prevent the edges of the pie crust from browning to quickly, wrap aluminum foil around the edges of the pie before baking, then remove with 20 minutes left.

CHEESE, ONION AND POTATO PASTY

This cheesy pasty is a delicious alternative to the regular Cornish pasty and is quick and easy to make.

2 medium potatoes diced small
1 medium onion
220g / 8oz Cheddar Cheese
1 egg
1 Tablespoon chopped parsley
Salt and pepper to taste

Steps:

  • Peel and chop the potato into small chunks and the onion finely chopped and grate the cheese. Finely chop the parsley.
  • Mix all the ingredients together well in a bowl.
  • Divide the pastry in 4 and roll each piece into a round about 15 cm (6 inches) in diameter.
  • Put a quarter of the cheese mixture on each one, dampen the edge with a little water, then fold over and crimp the edges.
  • Lay the pasties on a floured baking sheet and brush them with milk or beaten egg.
  • Bake them for 45 minutes.

2 pounds ground chuck
1 pound ground pork
1 med to large onion chopped fine
1 - 2 pound bag southern style ( the cubed kind) frozen hashbrowns
1 can beef broth or 1 ½ c. hot water mixed with 1 tbs.beef soup base
1 ½ to 2 cups matchstick or fine chopped carrots
2 cans diced rutabagas - drained
4 ready to use premade pie crusts

Steps:

  • 1. Bring 4 ready made refrigerated pie crusts to room tempature . I usually just take them out while prepare the meat mixture and they are softened enough by then to unroll easily. Mix all ingredients ( except the pie crusts) well in a large mixing bowl. It works best to use your hands to mix. Add salt & pepper (to taste) ,a little at a time , as you mix. That allows the salt & pepper to get mixed in better. Place a single crust into each of two deep dish pie plates, press in. Divide meat mixture between the two crusts and pat it down some to hold it together well, it should be well above the depth of the pie plate,be sure to keep it pretty even across so it will cook evenly. Use the other two crusts as tops. Pinch edges together all the way around and cut off excess crust. Cut a few 1 inch slits in top of each pie. Brush edges of crust with a little milk to keep them softer. Bake about 1 hour and 20 minutes at 350* uncovered. If using foil pie plates bake them on a baking sheet. Let the pies set for about 10 minutes before cutting.
  • 2. note* If you're unsure if the middle is done you can use a meat thermometer or simply poke the potatoes with a fork to test for doneness.
  • 3. THIS RECIPE CAN BE CUT IN HALF VERY EASILY TO JUST MAKE ONE PIE. I LIKE MAKING TWO , BAKING THEM BOTH AND THEN FREEZING ONE FOR ANOTHER DAY. ONE PIE WILL SERVE 4 TO 6 PEOPLE EASILY
  • 4. Traditionally in this neck of the woods people eat pastys with either ketchup or beef gravy, but they are also very very tasty on their own.

2tsp baking powder
1tsp salt
125g unsalted butter
2 egg yolks
125ml cold water

Steps:

  • To make the shortcrust pastry: Place the flour, baking powder, salt, butter, and egg yolks into a food processor and blitz until the mixture forms crumbs. Slowly add the water until a ball of pastry miraculously appears - you may not need all the water. Wrap the pastry in clingfilm and leave it to chill in the fridge for an hour.
  • To prepare the Cornish pasty filling: Preheat the oven to 180°C (gas mark 4). Roll out the pastry to the thickness you like, but be careful not to tear it. Using a dinner plate as a template, cut out 6 discs of pastry.
  • Season the vegetables separately with salt and black pepper. Put the beef into a bowl and mix with the flour and some salt and pepper. Place some potatoes, swede, onions, and beef on one half of the circle, leaving a gap around the edge. Dot with butter. Brush around the perimeter of the pastry circle with the beaten egg, then fold the pastry over the vegetables and meat and seal firmly. Starting at one side, crimp the edges over to form a sealed D-shaped pasty. Brush the whole pasty with a beaten egg, then make a steam hole in the center with a sharp knife.
  • Repeat to make the other pasties. Put the pasties in the oven and cook for 50 mins until they are crispy and golden and the filling is cooked through. Leave them to rest for 5-10 mins before eating.
