Beef is not one of my favorite types of meat. That is, I want to make sure I enjoy my beef, that it's not too dry or bland, and it is healthy-ish. This is a very quick meal and very tasty.

400 g beef
2 garlic cloves
salt
pepper
dill
1 chili
20 ml olive oil
1 onion
2 carrots
1 broccoli
400 g potatoes
20 g butter

Steps:

  • For mash: Boil the potatoes with some salt. Drain when boiled and add butter, pepper, and dill.
  • For beef: add garlic, salt, pepper, olive oil. Fry 2 minutes on both sides to seal the flavour. Then fry other 4 minutes (rare), 6 (medium), and 8 (well done). Put the chopped onion to give extra flavour.
  • For vegetables: peal, wash, cut and microwave the vegetables on a plate covered with cling film.
  • you can serve with gravy and yorkshire pudding.

2 tablespoons vegetable oil
1 pound beef sirloin, cut into 2-inch strips
1 ½ cups fresh broccoli florets
1 red bell pepper, cut into matchsticks
2 carrots, thinly sliced
1 green onion, chopped
1 teaspoon minced garlic
2 tablespoons soy sauce
2 tablespoons sesame seeds, toasted

Steps:

  • Heat vegetable oil in a large wok or skillet over medium-high heat; cook and stir beef until browned, 3 to 4 minutes. Move beef to the side of the wok and add broccoli, bell pepper, carrots, green onion, and garlic to the center of the wok. Cook and stir vegetables for 2 minutes.
  • Stir beef into vegetables and season with soy sauce and sesame seeds. Continue to cook and stir until vegetables are tender, about 2 more minutes.

2 cups raw rice, which will yield 4 cups when cooked
8 ounces beef sirloin, thinly sliced 1/8 inch and the fat removed
2 tablespoons vegetable oil
1/2 cup fresh carrot, peeled and thinly sliced 1/8 inch
1/2 cup onion, thinly sliced 1/8 inch
1 clove garlic, chopped fine
1/2 cup celery, cut like matchsticks
1/2 cup white cabbage, sliced thin 1/8 inch
1/2 cup fresh green beans, cut in 1 inch pieces
2 tablespoons soy sauce
2 teaspoons sugar
1 teaspoon salt
1/8 teaspoon white pepper, ground
1 tablespoon parsley, chopped
1 tablespoon chives, chopped

Steps:

  • Cook the rice according to the packages instructions and it keep warm.
  • Preheat a pan then quickly fry the beef and vegetables together with the vegetable oil over high heat until golden brown, about 4 to 5 minutes.
  • Season with salt, ground white pepper to your taste.
  • Turn off the heat and add the soy sauce and sugar, stir for one minute.
  • Add the meat and vegetable mixture to the rice in the pot in which the rice was cooked.
  • Heat on a low setting, until hot throughout.
  • Add the parsley and chives.
  • Serve from the pot in bowls with additional soy or hot pepper sauce if you like.

Pan Fried Steak With Vegetables image

This has become a mainstay at my house. It evolved out of a recipe I saw on the Food Channel a while back. I've done this recipe with fish filets, chicken breast, lamb and a number of other things, and for some reason it's always worked. You just have to use an appropriate wine for your meat of choice, i.e. a nice fat Cabernet will work well for steak, but will gag and bury any white fish.

2 steaks, i suggest a medallion cut sirloin
1/2 bunch asparagus, cleaned and woody stems removed
1 tablespoon fresh rosemary, chopped
2 cups cleaned and sliced mushrooms (portabello are nice but button or brown are good too)
1 cup red wine
2 shallots, chopped
1 garlic clove, minced
1 1/2-2 cups halved cherry tomatoes or 1 1/2-2 cups grape tomatoes
3 tablespoons butter
1 tablespoon olive oil
kosher salt and pepper

Steps:

  • Pat 1-2 pinches of salt into each side of the steaks.
  • Heat a large sauté pan or iron skillet to medium high.
  • You'll want to avoid non-stick for this purpose and don't put any oil in the pan either, as we're going to want all those little bits that stick to the bottom of the pan for later.
  • Place steaks in pan and let sear.
  • DON'T YOU DARE POKE AT 'EM!
  • Cook on each side to desired doneness-- when they're just underdone, remove from skillet, place on plate, and stick that plate in a 200°F oven to keep warm, and to rest.
  • Heat olive oil in the same pan as you cooked your steaks inches.
  • Add your mushrooms, shallots, garlic and a pinch of salt and few grinds of pepper and sweat at medium until tender, stirring occasionally.
  • Raise heat to medium-high and add rosemary and asparagus and gently add red wine.
  • Cover and let sit for 5 minutes.
  • Uncover, and add tomato halves.
  • Keep stirring occasionally until liquids have reduced to a syrupy texture.
  • Squish 6-10 tomato halves with a fork (another reason to avoid non-stick pans for this) and add the butter in chunks randomly throughout the pan.
  • Reduce heat to minimum and let the butter melt.
  • Get the steaks out of the oven (carefully! that plate is gonna be hot!) and place one on each plate to be served.
  • Using tongs or a slotted spoon, divide veggies between the two plates.
  • Spoon some of that sauce over each plate, making sure to keep the portions equal (many arguments over 'who got more sauce' whenever we have this--trust me the extra care is warranted).
  • Garnish with some parsley or rosemary sprigs and serve.

I really like this recipe from McCall's Cooking School (Meat 39). Its introduction states: "This Chinese method of cooking uses a small amount of oil over high heat. Meat stays tender and juicy, vegetables crisp and colorful. Our version of this exquisite cuisine: snow peas, bok choy, green onions, water chestnuts and baby corn tossed with sirloin-steak slices and egg noodles."

1 lb sirloin steak, 1 inch thick
peanut oil, divided
1 teaspoon salt
1 teaspoon sugar
1 dash pepper
1 garlic clove, minced
1/2 lb fresh snow pea
1 bunch bok choy (1 3/4 pound)
6 green onions
1 (8 ounce) can water chestnuts, drained
2 tablespoons cornstarch
1/2 cup cold water
1/4 cup dry sherry
2 tablespoons soy sauce
1 (8 ounce) package chinese noodles or 4 ounces spaghetti
1/2 cup beef broth
1 (15 ounce) can baby corn, drained

Steps:

  • Pat steak dry with paper towels. Partially freeze beef, about 15 minutes, in order to make slicing it easier. Then, using sharp knife, cut steak in half lengthwise, then cross-wise, on diagonal, into slices 1/8 inch thick; set aside.
  • In large shallow bowl, toss steak slices with 1 tablespoon peanut oil, salt, sugar, pepper and minced garlic; mix well. Let stand at room temperature 15 minutes. Rinse snow peas under cold water; drain. With fingers, remove stem ends and strings; do not shell.
  • Prepare bok choy: Cut base from stalk; discard. Cut stems into 1/4-inch diagonal slices; cut leaves into 1-inch pieces. Wash stems and leaves separately; dry on paper towels. Wash green onions; pat dry; trim off roots and green tops; cut into 1/2-inch diagonal slices.
  • In small bowl, combine cornstarch, water, sherry and soy sauce; mix well; set aside. Fill an 8-quart kettle with water and bring to the boil; Add Chinese noodles or spaghetti and cook as package label directs; drain, and keep warm.
  • Heat 1 tablespoon peanut oil in large, heavy skillet or wok. Add green onion; with slotted spoon, stir-fry 1 minute. Add snow peas, water chestnuts, bok-choy stems and beef broth; cook, covered, over high heat 2 minutes. Remove vegetables and liquid from the pan.
  • Add 2 tablespoons oil and the beef; stir-fry over high heat 2 minutes. Return cooked vegetables and the corn to skillet; add bok-choy leaves; stir in cornstarch mixture; cook until sauce is thickened. Add noodles, and toss gently.
  • Serve on pre-warmed platter.

1 beef top sirloin steak (1 pound), cut into thin strips
SAUCE:
1 teaspoon cornstarch
1/2 cup reduced-sodium chicken broth
2 tablespoons ketchup
1 tablespoon reduced-sodium soy sauce
2 teaspoons sesame oil
2 teaspoons canola oil, divided
1 medium sweet onion, cut into chunks
1 medium green pepper, cut into chunks
3 plum tomatoes, cut into chunks

Steps:

  • In a large bowl, combine the first five ingredients; add beef and toss to coat. Refrigerate for 15 minutes. For sauce, in a small bowl, combine the cornstarch, broth, ketchup, soy sauce and sesame oil until smooth; set aside., In a large nonstick skillet or wok coated with cooking spray, stir-fry the beef mixture in 1 teaspoon canola oil until no longer pink. Remove and keep warm. Stir-fry the onion in remaining canola oil for 2 minutes. Add green pepper; stir-fry for 2 minutes. Add tomatoes; stir-fry 1 minute longer., Return beef to the pan. Stir sauce; add to beef and vegetables. Bring to a boil; cook and stir for 2 minutes or until thickened.

1/4-1/3 cup light soy sauce
