QUICK MICROWAVE NACHOS
Steps:
- Gather the ingredients.
- Spread the tortilla chips in an even layer on a microwave-safe plate. ( Important : Never use a metal sheet pan or metal dish of any kind in the microwave.) There are no set quantities of these nachos. The important thing is to spread the tortilla chips in an even layer on the plate, with just a little overlap. If you stuff the plate with too many tortilla chips, you won't be able to cover them all with the cheese.
- Sprinkle the cheese evenly over the chips.
- Top with the jalapeño slices, if desired.
- Heat on high for 1 minute, just until the cheese is melted. Be sure to watch the nachos as they cook. Microwave ovens vary dramatically, and so your cooking time will also vary. Let the nachos stand for a few minutes to finish cooking.
- Serve immediately with sour cream, homemade pico de gallo , sliced black olives, chopped fresh tomatoes, and/or guacamole . Enjoy.

I made this for Super Bowl Sunday. It was super quick and no one could tell the difference between those that took longer in the oven. My new favorite way to make nachos. :)

- 1. Prepare ground beef and taco seasoning according to package directions. Be sure to drain off as much grease as possible when browning the meat.
- 2. Meanwhile, put tortilla chips on a large microwave-safe platter. Sprinkle with meat mixture. Dab on refried beans. Sprinkle on cheeses, onion, and jalapeños.
- 3. Microwave at medium (50% power) about 2 minutes. Watch carefully. Microwave just until the cheeses loose shape and start to run together and nachos are steaming.
- 4. Carefully remove from microwave. Let stand one minute and serve with sour cream or salsa on the side. Plate will be HOT!
