"CHEESY" SCALLOPED POTATOES RECIPE BY TASTY
Here's what you need: medium yukon gold potatoes, vegan butter, garlics, all-purpose flour, non-dairy milk, low sodium vegetable broth, salt, pepper, nutritional yeast, medium yellow onion, fresh parsley

Steps:
- Preheat the oven to 400°F (200°C).
- Thinly slice the potatoes into rounds about ⅛-inch (3 mm) thick. Submerge in a large bowl of water to keep from browning and set aside.
- In a medium pot over low heat, melt the butter. Once the butter begins to foam, add the garlic and cook for 2-3 minutes, until fragrant. Add the flour and stir until flour and butter resemble the consistency of wet sand, creating a roux.
- While stirring continuously, add the non-dairy milk, vegetable broth, salt, and pepper and bring to a boil. Stir in the nutritional yeast and continue to cook for 2-3 minutes, or until the sauce thickens. Remove from the heat.
- In a medium baking dish, add 2 layers of the sliced potatoes, followed by a layer of the sliced onions. Pour on half of the cheese sauce and spread with a spatula to coat all of the potatoes and onions. Add another 2 layers of potatoes and pour on the remaining cheese sauce.
- Cover with a lid or foil and bake for 1 hour. Then, uncover and bake for 10-15 minutes more, until the top is golden and bubbling and the potatoes are tender.
- Garnish with parsley and serve warm.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a casserole dish.
- Arrange sliced potatoes in the casserole dish; season with salt.
- Melt butter in a saucepan over medium heat. Stir in flour until a paste forms. Pour in milk gradually, stirring constantly, until a thick white sauce forms, about 5 minutes. Stir in cheese and remove from heat. Pour sauce over the potatoes.
- Bake in the preheated oven until potatoes are cooked through and tops are lightly browned, about 1 hour.

This is a very quick low salt version of scalloped potatoes I discovered while being very rushed one night making dinner. Even my wife was amazed this one turned out so good.

Steps:
- Preheat over to 375.
- Skin potatoes.
- Cut into large thin oval slices.
- Place potatoes on microwave safe plate and cook until tender i just used The potato setting a couple of times.
- In a small sauce pan over low heat slowly heat all remaining ingrediants until cheese is melted.
- Combine cheese mix and potatoes into a lightly oiled pan. I used a large pyrex with lid.
- Mix until potatoes are well coated.
- Bake with lid on for 20 minute.
- Remove lid and place the dish on an upper rack closer to the top of the oven for another 5 minutes.
- Variations: if my kids liked onions i would have used diced onions and for those who want to splurge a little you can always add more white american cheese or sprinkle some on top before placing it in the oven.

- Preheat oven to 325°F.
- Spray a medium sized casserole with cooking spray.
- Layer casserole with potatoes, onions, cheese, and a sprinkling of chives; season layer with salt and pepper to taste, and dot with butter.
- Repeat layers until all ingredients are used.
- Pour milk over layers.
- Bake, covered with a lid or foil at 325F for 45 minutes; uncover and bake 30-35 minutes further or until potatoes are tender, and top is golden.
- Note: if you have difficulty browning top, place under broiler for a minute or so.

- Spray 2-qt. baking dish with nonstick cooking spray; set aside.
- In small saucepan over medium heat, melt butter.
- Stir in flour, salt and pepper until smooth.
- Gradually stir in milk.

- Boil 2 minutes until thickened, stirring constantly.

A delicious recipe from Southern to the Core cookbook received from BusyMomof3 in the 2011 Cookbook Swap, must admit to cooking this but I add ham and spring onion (scallion in place of onion) to the mix so consider this the base mix and delicious. On preparation time it can vary hugely dependig on if you use a mondolin or food processor or by hand and then depending on your knife skills, so I have tried to take a middle line here on the timing.

- Grease 9 x 13 inch baking dish and spread half of your potatoes on the bottom of the dish, overlapping as necessary and then layer half of your onions.

This is the way my mom used to make scalloped potatoes, when I started making them I just developed my own way because it is so easy. When ever I make them everyone goes crazy over them, especially my husband. This is how much of everything that I put in but you can come up with your own variation if you have a different size casserole dish. REALLY GARLICY (that is how I like it, ifyou don't use less).

- Slice potatoes thin (the thicker they are the longer it will be till they are done.
- Cut up the garlic how you like, I slice it (keep in mind the more cut up it is the more flavor it will have). Chop up onion (I leave it in partial slices).
- Take out a casserole dish (I use 1.9L). First put in 1T. butter (so it doesn't stick too bad to the bottom). Add 1/3 of the potatoes (pressing down to spread the butter on the bottom), 1/3 of the onion, about 1 clove of garlic, 1-2 teaspoons butter, about 2-3 tablespoons cheese whiz (sometimes I melt it first), and sprinkle with salt and pepper.
- Repeat 2 more times to create layers, ending up with cheese layer on the top so it will coat all the potatoes.
- Heat oven to 350 degrees. Bake till potatoes are tender about an hour, check often to make sure it is not burning and mix only twice to evenly coat but not to break up potatoes too much.

- Arrange potato slices in a buttered, 2 quart baking dish.
- Pour blended mixture over potatoes.
