- Pierce squash several times with a knife or fork; place on a microwave-safe plate. Microwave on high for 3 minutes. Cut into quarters; remove seeds and pulp., Return squash to plate, cut side down. Cover with waxed paper; microwave on high for 4-1/2 minutes., Turn over; microwave on high for 4-6 minutes longer or until soft. Scoop out squash and place in a bowl. Stir in remaining ingredients.

- Preheat the oven to 375 degrees F (190 degrees C).
- Arrange squash halves cut side up in a shallow baking dish. Place one tablespoon of orange juice into each cavity. Sprinkle each one with ginger and nutmeg. Cover the dish with aluminum foil.
- Bake for 60 to 90 minutes in the preheated oven, or until the squash is tender. Baking time will depend on the size of the squash. Remove from the oven, discard aluminum foil, and let the squash rest for 5 minutes before serving to let the juices settle.

- Heat a soup pot over medium-high heat. Add one tablespoon extra-virgin olive oil and 1 tablespoon of butter.
- When the butter has melted, add the onion and carrots and cook until the vegetables are soft, about 5 minutes.
- Season with salt and pepper.
- Deglaze with the orange juice and simmer for 2 minutes, stirring constantly. Don't let the vegetables stick to the bottom of the pan.
- Transfer the mixture to a food processor or a blender. Puree the mixture until it is smooth and then return it to the pot over medium heat.
- Add the frozen butternut squash puree and chicken broth and stir to combine. Season with salt and pepper to taste.
- Bring to a boil and then lower the heat and let it simmer for 10 minutes.
- Grate some fresh nutmeg and stir to combine.
- Garnish with thyme and zest.
