MINI TACO BITES

Simple and delicious mini taco bites are the perfect party appetizer or cute weeknight dinner!

1 vine tomato, chopped
2 tablespoons onion, small dice
1/2 small jalapeño pepper, small dice
1 small garlic clove, minced
1 teaspoon fresh lime juice
Kosher salt, to taste
Ground black pepper, to taste
6 flour tortillas
3 teaspoons vegetable, canola, or olive oil
1 pound lean ground beef
1 (7 to 8-ounce) can picante sauce (or red salsa)
2 teaspoons chili powder
1 teaspoon ground cumin
1/4 cup crema or sour cream
2 tablespoons fresh cilantro leaves

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Make pico de gallo: combine tomato, onion, jalapeño, garlic, cilantro, and lime juice. Season with salt and pepper and stir.
  • Use a 3-inch cookie cutter to cut out 4 small taco shells from each tortilla. Save the scraps and toast them for a crispy garnish for salads or soups . Warm the tortillas for 10 to 20 seconds, covered, in a microwave, or wrap in foil and heat in a warm oven until pliable.
  • Brush both sides of each tiny tortilla using 2 teaspoons of oil and sprinkle with salt, keeping them covered and warm in between. Press into openings of a mini muffin tin. Repeat with 11 more little tortillas, lightly reheating if needed to keep them pliable.
  • Repeat with a second mini muffin tin or repeat after cooking first batch of mini taco shells, for a total of 24.
  • Bake for 10 to 12 minutes or until lightly browned.
  • Meanwhile, heat a large skillet over medium heat. Add 1 teaspoon of oil followed by ground beef . Cook, breaking up into small pieces, until no longer pink. Use a spoon to scoop out any excess oil.
  • Add picante sauce, chili powder, and cumin. Season with salt and pepper and stir. Simmer for about 5 to 10 minutes, or until no longer watery. Taste for seasoning.
  • Add a heaping spoonful of beef mixture to each tortilla shell, followed by a dollop of crema, a scoop of homemade pico de gallo, and a sprig of cilantro.

48 Wonton Wraps
2 Cans Black Beans (15 oz each)
1 Cup Cheese + extra for topping
GOODFOODS Tableside ® Chunky Guacamole
Sour Cream
Diced Tomatoes
Cilantro
Various Toppings

Steps:

  • First, preheat your oven to 375 degrees fahrenheit. Then thoroughly spray 2 muffin pans with oil & place 1 wonton wrap at the bottom of each muffin tin.
  • In a bowl mix the 2 cans of beans & 1 cup of cheese together. Scoop a small spoonful of your bean & cheese mixture into each muffin tin.
  • Place a second wonton wrap on top of each taco bite & gently press down. Then add a second small spoonful of bean & cheese mixture in the second/top wonton. Then top each taco bite with extra cheese if desired.
  • Bake your Quick Crispy Taco Bites for 10-12 minutes until golden.
  • Let cool & top with GOODFOODS Tableside® Chunky Guacamole, sour cream, diced tomatoes, cilantro, & all of your other favorite taco toppings.

1 pkg wonton wrappers
1 lb ground beef or turkey
1-8 oz Frontera Taco Skillet Sauce (package)
GARNISHES:
diced tomatoes
Mexican shredded cheese
sour cream
shredded lettuce
diced avocado

Steps:

  • 1. Prepare your skillet and season then brown your ground beef/turkey until no longer pink. Drain, if necessary.
  • 2. Add in your Frontera Taco Skillet sauce or whatever taco seasoning sauce you are using. Once done, cover and put to the side.
  • 3. TO PREPARE WONTON WRAPPERS: You will need a mini muffin tray, non-stick spray, and wonton wrappers. Preheat oven to 350F.
  • 4. Take one wrapper and spray with non-stick spray then fit the wrapper into the mini muffin tin.
  • 5. When tray is filled, place into the oven and watch carefully until the wrappers turn a golden brown. Do not get distracted as they turn very quickly.
  • 6. When wrappers are golden brown, remove from oven and wait for them to cool.
  • 7. Then remove the wrappers and place on a rack. Proceed to stuff them as you would a regular taco.

1/2 cup sour cream
2 garlic cloves
3/4 teaspoon oregano
3/4 teaspoon chili powder
wonton wrapper
cheddar cheese
green onion

Steps:

  • Separate the won ton wraps. Using an ungreased mini-muffin pan, place one won ton wrap into each muffin cup forming a tart-like shape.
  • Mix cream cheese, sour cream, garlic, oregano and chili powder in a small bowl.
  • Spoon the mixture into each won ton cup.
  • Bake at 350F oven for 10 minutes.
  • Garnish each taco bite with grated cheese, green onion and tomato.
  • Serve warm. If taking with you to a party, bake ahead and garnish when ready to serve.

Who doesn't like cream cheese? :) Before this recipe, I hadn't cooked a lot with wonton wrappers, but they make this appetizer crispy and chewy too!

24 wonton wrappers
1 (8 ounce) package cream cheese (softened)
1 cup sour cream
2 pressed garlic cloves
1 taco seasoning mix
tomatoes
black olives
sour cream
avocado
onion
salsa

Steps:

  • Preheat oven to 350.
  • Spray a mini-muffin pan lightly with vegetable oil.
  • Seperate wonton wrappers and place one in each cup of the pan. Using the pampered chef mini tart shaper, press each wonton into the cup, keeping the cup area open. (If you don't have the tart shaper, just press down with your fingers, being careful not to tear the wonton).
  • Combine all filling ingredients into a mixing bowl, and blend until smooth.
  • Fill the wonton cups with a teaspoon each of the filling mixture.
  • Bake for 10-12 minutes, or until edges are slightly brown. Garnish with toppings of your choice.

1 lb hamburger
1 (1 1/4 ounce) package taco seasoning
1/2 cup salsa, or 1/2 cup picante sauce
3 tablespoons salsa
shredded cheddar cheese
sour cream
salsa
avocado, cubed
cilantro

Steps:

  • For Shells:.
  • Preheat oven to 350 degrees F.
  • Using a tablespoon, scoop shredded cheese on to parchment and shape into a disk. Make sure each cheese disk does not touch the one next to it.
  • Bake on a parchment-lined baking sheet for 7 minutes.
  • Lift the melted cheese disks off of the parchment paper and press into mini-muffin tins. Let the cheese cool for 1-minute (or more) in the muffin tin so that they will hold their shape. Remove from muffin tin and set aside.
  • For the Taco Filling:
  • Cook hamburger until browned.
  • Drain the fat and stir in taco mix and 1/2 cup salsa/picante sauce.
  • Simmer for 3-5 minutes.
  • Assembly:.
  • Spoon beef mixture in cooled cheese cups and top with the 3 shredded cheese, sour cream, salsa, cubed avocados and cilantro.

1 can (28 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 can (4 ounces) sliced jalapeno peppers
1 small onion, quartered
1 teaspoon garlic salt
TACOS:
1 pound ground beef
1/2 teaspoon salt
12 corn tortillas (6 inches)
1/2 cup canola oil
1 cup shredded cheddar cheese
4 cups shredded lettuce

Steps:

  • In a blender, combine the salsa ingredients; cover and pulse until salsa reaches desired consistency. Transfer to a large bowl; cover and refrigerate., In a large skillet, cook beef over medium heat until no longer pink; drain. Sprinkle with salt. 2 tablespoons taco seasoning
1 tablespoon tomato paste
2 tablespoons canned chopped chilies
1 large egg, lightly beaten
1/3 cup plain breadcrumbs
2 tablespoons chopped cilantro
24 -30 corn, chip scoops
cheese, dip (Queso, see recipe below)
1 cup guacamole
1 cup small dice pico de gallo
2 tablespoons finely chopped cilantro
1 cup sour cream
1 1/2 cups grated cheddar cheese
1 1/2 cups grated monterey jack pepper cheese
1 tablespoon cornstarch
1 cup milk
1 tablespoon canned chopped chile

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper; set aside.
  • In a large bowl, combine ground beef, taco seasoning, tomato paste, 2 tablespoons chopped chilis, egg, breadcrumbs and chopped cilantro. Form into 2-inch meatballs and place on prepared baking sheet.
  • Bake for 15-20 minutes until cooked through. Remove and place each meatball in a corn chip scoop. Drizzle with queso, and top with guacamole, pico de gallo and chopped cilantro. Serve with a side of sour cream.
  • For the Queso:.
  • In a large bowl, toss to combine cheddar cheese, pepper jack cheese and cornstarch. In a medium saucepan, bring milk to a simmer. Whisk in cheeses and chopped chilis. Bring to a simmer to thicken, about 1-2 minutes.
