DUCK BREAST WITH BERRY SAUCE

- Season the duck breast with salt and pepper. Heat the oil in a large saute pan over medium-high heat. Brown the duck breast, skin side first, then flip over, reduce heat and cook other side, about 10 to 15 minutes. Remove the duck breasts to a platter, reserving the juices in the pan. Work in batches, if necessary.
- To make the sauce, add the balsamic vinegar and red wine to the pan and cook until reduced by half. Add the stock and reduce by half again, then add brown sugar, rosemary and berries and cook for 3 minutes. Strain into a bowl and whisk in the butter to finish. Place the duck breast on each plate and drizzle the sauce around.
CRISP-TENDER ROAST DUCK WITH CHERRY-ROSEMARY SAUCE
Steps:
- Preheat the oven to 300 degrees F.
- Rinse the duck inside and out and pat dry. Trim any excess fat from the neck and cavity, snip off wingtips and discard. Mix 1 tablespoon salt and 1/2 teaspoon pepper in a small bowl, and sprinkle the bird inside and out. Using a paring knife, make dozens of slits through the skin and fat (taking care not to pierce the meat) all over both sides and all parts of the bird.
- Put the duck breast-side up on a rack in a roasting pan and roast for 1 hour. Take the bird out of the oven, transfer to a platter and carefully drain the fat from the pan into a measuring cup (you'll end up getting 2 to 3 cups). Return the duck to the pan, prick with the knife again, turn it breast-side down and roast another hour. Repeat each hour, roasting the duck for a total of 4 1/2 hours.
- While the duck cooks, make the sauce: In a small saucepan, heat 1 tablespoon duck fat over medium heat and cook the shallots until soft, about 4 minutes. Add the garlic and cook until fragrant, 1 minute. Add the cherries, stock, preserves, honey and rosemary, and simmer until slightly thickened, about 10 minutes. Remove from the heat, add the lemon juice, swirl in the butter and taste for salt and pepper. Set aside until the duck is finished.
- After 4 1/2 hours of roasting, turn the oven temperature up to 350 degrees F, prick the duck skin one last time, salt the skin again and return bird to the oven, breast-side up. Roast for 30 minutes until the skin is nicely browned.
- Remove from the oven, tent with foil and let rest for 20 minutes. Gently reheat the sauce over low heat. Carve the duck, put the pieces on a serving platter and serve with sauce.
PAN SEARED DUCK BREAST WITH CHERRY PORT WINE REDUCTION

- 1. Heat olive oil in a medium skillet over medium heat. Saute shallots and rosemary for one minute.
- 2. Add port wine, chicken stock, vinegar, cherries, salt, and pepper to the skillet. Mash cherries with the back of a fork. Increase heat and reduce to approximately 1 1/4 cups. Remove from heat and cool slightly.
- 3. Transfer sauce to a blender or the bowl of a food processor. Process until smooth. If making the sauce ahead of time, store blended sauce in refrigerator until serving.
- 4. Immediately prior to serving, transfer sauce back to skillet and heat through. Add butter and whisk until melted and incorporated.
- 1. Score the skin of the breasts with a sharp knife in a diamond pattern.
- 2. Place a large iron or non-stick skillet over medium low heat. Place breasts in skillet, skin side down. Cook for approximately 8 to 10 minutes or fat is rendered.
- 3. Increase heat to medium high heat and turn breasts meat side down. Continue cooking for about 5 minutes. Turn skin side down again for 1 to 2 minutes or until internal temperature reaches 130 degrees for medium rare. If you prefer the breasts be medium, continue cooking until internal temperature reaches 140 to 145 degrees. Cooking time can vary according to thickness of breasts.
- 4. Let duck rest for five to ten minutes. Slice and serve over a pool of cherry port reduction.

SEARED DUCK BREAST HALVES WITH BALSAMIC CHERRY REDUCTION

- To prepare marinade, whisk balsamic vinegar through pepper together until combined.
- Marinate duck breast halves in a covered dish in the refrigerator for 2-10 hours, turning occasionally.
- Remove duck from marinade; reserve marinade.
- Wipe and pat duck breast halves dry with paper towels, rub on all sides with one teaspoon of olive oil, and sprinkle with salt.
- Heat 2 teaspoons olive oil in a heavy skillet on medium-high until the oil starts to smoke.
- Add the duck breast halves and cook 3 minutes on each side, or until golden brown.
- Remove to platter and keep warm.
- Turn heat to high; add wine to skillet and bring to a boil, scraping the bottom to release browned bits.
- Add reserved marinade and cherries and cook, stirring frequently, several minutes or until sauce has reduced by about half.
- Taste and adjust for seasoning if needed.
- Pour reduction (sauce) over duck and serve at once.

DUCK BREAST WITH BALSAMIC VINEGAR GLAZE

- Combine the balsamic vinegar, honey, currants and cayenne in a small pot. Bring to a boil, reduce to a simmer and reduce by half to form a thick, syrupy glaze. Remove from the heat and set aside.
- With the point of a knife, score the skin side of the duck breasts in a crosshatch pattern, being careful not to pierce the flesh.
- Season the duck breasts with the salt and pepper. Heat a saute pan over medium heat 2 minutes before adding the breasts, skin-side down. Cook over medium to low heat approximately 6 to 8 minutes to render the fat.
- Carefully remove the excess fat from the saute pan, then turn the breasts over and saute the flesh side 3 to 4 minutes before removing the duck breasts from the pan.
- The breasts should now be medium rare. Slice lengthwise or crosswise and arrange several slices on each plate. Reheat the balsamic vinegar glaze and drizzle some over each of the duck breasts. Sprinkle with toasted pine nuts and serve with Ginger Chestnut Stuffing
DUCK BREAST WITH CHERRY SAUCE

- In a small saucepan heat olive oil over medium heat. Add shallot and saute until softened, about 3-4 minutes. Add garlic and saute a minute more- be careful not to burn.
- Add chicken stock, wine, preserves, cherries, balsamic vinegar, and sugar. Season with salt and pepper.
- Simmer over medium heat until mixture reduces by half and cherries are softened.
- Whisk in dijon mustard and butter. Taste and season with more salt and pepper as needed.
- Preheat the oven to 400 degrees. Prepare duck breasts by scoring the fat (do not slice into the breast-meat). Season with salt and pepper.
- Heat a cast iron (or other oven-safe) skillet over medium heat. Sear duck breasts, fat side down, for 6 minutes. Then flip and cook meat-side down for 1 minute more.
- Flip back to fat-side down. Cook in oven for 5-6 minutes for medium rare.
- Remove from oven and rest on a separate plate for 5 minutes before slicing.
- Serve with cherry sauce.

- For the glaze, combine the balsamic vinegar, honey, cherries and cayenne pepper in a small saucepan.
- Bring to a boil, reduce the heat to a simmer and cook until the mixture has reduced by half to form a thick, syrupy glaze; keep warm until ready to serve.

- Preheat a dry (oil-less) saute pan over medium/high heat before adding the breasts, skin-side down.

- Saute the opposite side of the breasts for another 3 to 4 minutes (the meat should be medium-rare).
- Remove the duck from the pan and slice the breasts crosswise or diagonally.
- For serving, arrange the slices on each plate, drizzle the duck with the warm balsamic cherry glaze and garnish each serving with two fried sage leaves.

GRILLED DUCK BREAST WITH BLACK CHERRY-BALSAMIC REDUCTION
Duck breast has always been one of those foods that I adore in restaurants but have been insanely intimidated to cook. Not so for my dad. Oh, he enjoys it in restaurants all right (but not nearly as much as my mom, who I'm pretty sure has sampled duck at every restaurant that's served it when she was there since 1980), but he's not intimidated to cook it. In fact, he figured out the recipe for duck breast that is still one of the top preparations any of us has ever had. It comes from Alexander's, a restaurant in Roanoke, VA, and this is my dad's version of it. It is ridiculously wonderful.

- Score the fat and skin of the duck breasts.
- Pour chicken broth and most of the vinegar into a saucepan over med-low heat. Add fruit spread and reduce for about half an hour, or until it's reduced by about 2/3. When duck is sliced, add the extra juices to your sauce.
- About 15 minutes before you want to serve dinner, roll your duck breasts in the remaining balsamic vinegar. You really only need a few tablespoons because it's just a simple coating.
- Heat your grill to medium heat and put the breasts on skin side up. Cook most of the way through, then flip for about a minute to get the skin crispy. You want most of the fat to have cooked off by this point, or you'll get crazy flames. Either way, there'll be some flare-up, but it should be controlled. If the flames get too high, flip it back over and finish cooking that way.
- Let rest for about 5 minutes, slice, and sprinkle with sea salt.
- Serve with balsamic cherry jus. We had steamed broccoli and roasted potatoes with the duck, and it was absolutely perfect.
