- Preheat oven to 375 degrees F.
- Butter a glass 12 by 10-inch baking dish and set aside
- In a large bowl, whisk eggs together. Using a spoon, stir in sweet corn, creamed corn, milk, cream, flour, baking powder, and salt. Pour mixture into butteed baking dish. Cook for 1 hour until it is golden brown and slightly puffed up on the top. Serve immediately.

My father-in-law was always a picky eater. However, the first Thanksgiving I made him this recipe, he went crazy! It soon became a tradition, and now he is gone, it is always mentioned as one of his favorites.

- Preheat oven to 350 degrees F (175 degrees C ). Put butter in 2 quart casserole dish, place in oven until melted.
- Remove casserole dish and add creamed corn, kernel corn, corn muffin mix and sour cream. Mix well, bake uncovered approximately 30 minutes.

- Preheat the oven to 325°F and spray a 1/12 quart baking dish with nonstick cooking spray.
- Chop the green onions finely. Place the butter in a small microwave-safe bowl. Microwave on HIGH until melted, about 15 to 30 seconds.
- Drain whole kernel corn. Combine with green onions, butter, cream-style corn, sour cream and corn muffin mix in a medium bowl and mix well.
- Whisk the eggs in a small bowl until blended. Add the eggs to the corn mixture in bowl and mix just until ingredients are moistened. 5 Spoon batter into prepared backing dish. Back until set, about 45 minutes to an hour. Serve immediately.

This is a super easy side dish I've ate since I was little. Don't let the name fool you, it won't be of pudding consistency but rather, more brownie/cake like.

- Mix all ingredients together.
- Spray pan ( the bigger the pan, the thinner the dish, the quicker it cooks. I double the recipe and use a 9x13).
- Pour mixture into pan and smooth out to edges so it will bake evenly.
- Bake 30 min- 1 hour depending on thickness of layer (til knife inserted in center comes out clean).

Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the bell peppers and cook, stirring occasionally, until the peppers are tender, about 5 minutes more. Stir in the ham, salt, and black pepper and cook, stirring, for 1 minute. Set aside to cool.
- Meanwhile, combine the corn and half-and-half in a blender or food processor and puree until smooth. Add the eggs, sugar, and cayenne. Blend thoroughly.
- Spoon the bell-pepper mixture into the prepared baking dish and then sprinkle the Monterey jack over the top. Pour the egg mixture over all. Bake until a toothpick inserted in the center of the pudding comes out clean, about 40 minutes.
