CREAMY CHICKEN LASAGNA

This is an unusual but fantastic combination. Everyone that tastes it raves!

3 skinless, boneless chicken breast halves
6 uncooked lasagna noodles
1 cube chicken bouillon
¼ cup hot water
1 (8 ounce) package cream cheese, softened
2 cups shredded mozzarella cheese
1 (26 ounce) jar spaghetti sauce

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles for 8 to 10 minutes, or until al dente. Drain, rinse with cold water, and set aside.
  • Meanwhile, place the chicken in a saucepan with enough water to cover, and bring to a boil. Cook for 20 minutes, or until no longer pink and juices run clear. Remove from saucepan, and shred.
  • Preheat oven to 350 degrees F (175 degrees C). Dissolve the bouillon cube in hot water. In a large bowl, mix the chicken with the bouillon, cream cheese, and 1 cup mozzarella cheese.
  • Spread 1/3 of spaghetti sauce in the bottom of a 9x13 inch baking dish. Cover with the chicken mixture, and top with 3 lasagna noodles; repeat. Top with remaining sauce, and sprinkle with remaining mozzarella cheese.
  • Bake for 45 minutes in the preheated oven.

1 egg
1/4 teaspoon ground black pepper
1 tablespoon minced garlic
1 tablespoon dried oregano
1 (28 ounce) can crushed tomatoes
6 oven-ready lasagna noodles
3 cups torn baby spinach leaves
1 1/2 cups skinless roast chicken, finely chopped
3/4 cup shredded provolone cheese

Steps:

  • Preheat oven to 375 degrees. Lightly coat a 12 by 8 inch pan with cooking spray.
  • In a small bowl, beat ricotta, egg and pepper with a fork until well blended.
  • Gently stir in garlic and oregano. Spread 1/4 c tomatoes over bottom of baking dish and place 3 noodles over sauce. Spread on half of the ricotta mixture, half the spinach, half of the chicken, half the remaining tomatoes, and half the provolone. Top with the remaining noodles, ricotta mixture, spinach, chicken, tomatoes, and provolone.
  • Coat one side of a 14 inch long piece of aluminum foil with cooking spray. Lay the foil, sprayed side down, over lasagna and loosely seal the edges. Bake for about 45 minutes or until bubbling. Let sit for 5 minutes.

From Holly Clegg's website, this recipe is indeed quick and delicious. I used Bertolli's Vidalia Onion and Roasted Garlic sauce. I had never used goat cheese before, but it gave the dish an interesting and flavorful twist. My family went nuts over this recipe; hope yours does, too!

1 rotisserie roasting chicken, skin removed and chicken torn into pieces (3 cups)
2 (26 ounce) jars pasta sauce
2 cups shredded part-skim mozzarella cheese
2 (10 ounce) packages chopped spinach, thawed and drained
1 (4 ounce) package crumbled goat cheese
1 (8 ounce) package no-boil lasagna noodles

Steps:

  • Preheat oven to 350 degrees.
  • Cut chicken into small pieces.
  • Mix chicken with both jars of pasta sauce.
  • In an oblong dish, spread a thin layer of chicken sauce.
  • Top with a layer of noodles, chicken sauce, mozzarella cheese, half the spinach, goat cheese.
  • Repeat layering with noodles, chicken sauce, mozzarella, remaining spinach, and goat cheese.
  • Continue with remaining noodles, chicken sauce, mozzarella and goat cheese.
  • Bake, tightly covered, for 50 minutes.
  • Uncover and bake 5 minutes longer or until bubbly.

No need to cook the noodles first, and only 240 calories per serving. This is from the book, "Quick & Healthy" by Brenda J. Ponichtera. I use the recipe as a starting point and change it however the mood strikes. If you don't have or don't like Ricotta, use three cups of cottage cheese, and process 2 cups in the food processor.

4 cups spaghetti sauce (less than 4 g fat per 4 oz)
2 cups low-fat ricotta cheese
1 cup low fat cottage cheese
2 tablespoons dried parsley
1 teaspoon chopped garlic
4 ounces grated part-skim mozzarella cheese
3/4 lb uncooked lasagna noodle
1/4 cup parmesan cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9-inch by 13-inch pan with non-stick coating.
  • Mix Ricotta cheese, cottage cheese, parsley, and garlic.
  • Pour 1 cup of sauce in bottom of pan.
  • Arrange 1/3 of the noodles in the pan so that they touch but do not overlap.
  • Spread 1/2 of the cheese mixture over the noodles.
  • Top with 1/2 of the mozzarella cheese.
  • Top this with 1 cup of sauce, 1/3 of the noodles, the remainder of the cheese mixture and the rest of the mozzarella cheese.
  • Add another cup of sauce, another layer of noodles, and the remainder of the sauce.
  • Sprinkle with Parmesan cheese.
  • Bake, covered tightly with aluminum foil for one hour.
  • (This can be put together ahead of time and refrigerated. Increase the baking time by 15 minutes if it has been refrigerated.).

1 lb ground beef
16 ounces noodles (elbows or whatever you like)
16 ounces tomato sauce
16 ounces crushed tomatoes
4 ounces cream cheese
1 pint sour cream
2 cups shredded mozzarella cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon basil

Steps:

  • Fry the ground beef and boil the pasta ( al dente).
  • When beef is done add the cream cheese and work it into the beef.
  • When the cream cheese is mixed into the beef well and the pasta is cooked combine all of the ingredients except 1 cup of the mozzarella cheese into a large bowl and mix well.
  • Place into a 13x9 pan and top with the remaining mozzarella cheese.
  • Bake uncovered at 350 for 15 minutes.
  • Let stand 5 minutes before serving.

1 1/2 cups mushrooms
1 onion, chopped
1 (50 g) package hollandaise sauce mix, prepare acorrding to pkg directions
9 lasagna noodles, cooked
3 cups cooked chicken, chopped
1 (12 ounce) can asparagus tips
3/4 teaspoon oregano
3/4 teaspoon basil
1 1/2 cups mozzarella cheese, grated
1/2 cup parmesan cheese
salt and pepper (to taste)

Steps:

  • Saute mushrooms and onion until soft.
  • Spread a small amount of hollandaise sauce on bottom of 9x13 pan.
  • Place a layer of noodles on top cover with 1/2 cooked chicken and sprinkle with salt and pepper.
  • Top with 1/2 mushoroom and onion mixture then 1/2 remaining hollandaise sauce.
  • Sprinkle with 1/2 basil and oregano top with 1/2 mozzarella and parmesan.
  • Place all of the asparagus tips neatly in a layer.
  • Dont use fresh or frozen asparagus.
  • Repeat step 3, 4, 5 ending with cheese.
  • Cook uncovered at 350 for 35 minutes.
  • Let stand for 10 minutes.
  • If using a favorite hollandaise sauce and not a pakaged product you can use 1 1/2 cup.

1/2 large onion
1 (10 1/2 ounce) can reduced-fat cream of chicken soup, undiluted
1 (10 ounce) container refrigerated reduced-fat alfredo sauce
1 (7 ounce) jar diced pimentos, undrained
1 (6 ounce) jar sliced mushrooms, drained
1/3 cup dry white wine
1/2 teaspoon dried basil
1 (10 ounce) package frozen chopped spinach, thawed
1 cup cottage cheese
1 cup ricotta cheese
1/2 cup grated parmesan cheese
1 large egg, lightly beaten
9 lasagna noodles, cooked
2 1/2 cups chopped cooked chicken
3 cups shredded sharp cheddar cheese, divided

Steps:

  • Melt butter in a skillet over medium-high heat. Add onion, and sauté 5 minutes or until tender. Stir in soup and next 5 ingredients. Reserve 1 cup sauce.
  • Drain spinach well, pressing between layers of paper towels.
  • Stir together spinach, cottage cheese, and next 3 ingredients.
  • Place 3 lasagna noodles in a lightly greased 13- x 9-inch baking dish. Layer with half each of sauce, spinach mixture, and chicken. Sprinkle with 1 cup Cheddar cheese. Repeat procedure. Top with remaining 3 noodles and reserved 1 cup sauce. Cover and chill up to 1 day ahead.
  • Bake at 350° for 45 minutes. Sprinkle with remaining 1 cup Cheddar cheese, and bake 5 more minutes or until cheese is melted. Let stand 10 minutes before serving.

1 (10 ounce) can chicken broth
1/2 teaspoon salt
1 cup cottage cheese

1/2 cup sour cream

1/3 cup chopped green pepper
1/3 cup chopped pimento stuffed olive

  • Cook lasagna, using the package directions.
  • Drain well.
  • Rinse with cold water and drain again.

6 ounces fresh mushrooms, sliced

1 jar (2 ounces) diced pimientos, drained
1/2 teaspoon dried basil
2-1/2 cups cubed cooked chicken
8 ounces reduced-fat process American cheese, cubed

9 lasagna noodles, cooked and drained
