2 (15 ounce) cans diced new potatoes
1 cup chopped onion
4 cups milk
1 pound processed cheese food (such as Velveeta ®), cut into chunks
½ pound sharp Cheddar cheese, cut into chunks
ground black pepper to taste
⅔ cup mashed potatoes

Steps:

  • Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add diced potatoes and onion; cook and stir until onion is tender, 5 to 10 minutes.
  • Mix milk, processed cheese food, and Cheddar cheese into beef mixture; bring to a boil. Reduce heat and simmer, stirring often, until heated through and cheese is melted, 15 to 20 minutes; season with pepper. Add mashed potatoes for a thicker chowder; cook until heated through and thickened, about 5 minutes.

  • In a 6-qt. stockpot, cook beef, onion and pepper over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking beef into crumbles; drain. Add garlic to beef mixture; cook 1 minute longer. Stir in flour until blended., Gradually stir in milk. Add potatoes, water and bouillon; bring to a boil. ¾ cup shredded carrots
¾ cup chopped celery
1 teaspoon dried basil

2 cups cubed Cheddar cheese
1 ½ cups milk
¼ cup sour cream

Steps:

  • In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
  • Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
  • Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.

Steps:

  • Brown meat with onions in large saucepan; drain.

½ cup shortening
4 tablespoons cold water
1 pound lean ground beef
1 small onion, chopped

⅓ cup dill pickle juice
⅓ cup milk
½ cup chopped dill pickles
2 cups shredded Swiss cheese, divided

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • To Make Pat-in-Pan Pastry: In a medium bowl, mix 1 1/3 cups flour and 1/2 teaspoon salt. Cut in shortening until mixture resembles tiny peas. Add cold water 1 tablespoon at a time, stirring with a fork after each addition. Mix lightly just until pastry almost cleans sides of bowl. Pat into bottom and sides of an 8 inch pie pan.
