EASY BBQ CHICKEN
Juicy BBQ chicken breasts basted with a sweet, sticky homemade BBQ sauce is a delicious and easy chicken recipe perfect for dinner.

Steps:
- Combine the BBQ sauce ingredients in a small saucepan and set over medium-high heat. Bring to a simmer and cook for 5 minutes until the sugar has dissolved. Remove from the heat and allow to cool to room temperature.
- Combine the seasonings for the chicken then dust the chicken on both sides with the spice mixture, making sure the chicken is completely covered.
- Cook the chicken on a hot grill (or a griddle pan on the stove), basting with the BBQ sauce continuously until the chicken is sticky, glossy and cooked through. Approximately 5-6 minutes per side.
- Remove the chicken from the heat and allow to rest for at least 5 minutes before slicing and serving.

- In a large glass bowl mix lemon juice, vegetable oil, vinegar, oregano, and garlic powder. Place chicken pieces in the bowl, and season with salt and pepper. Cover, and marinate in the refrigerator at least 1 hour.
- Preheat an outdoor grill for high heat, and lightly oil grate.
- On the prepared grill, cook chicken until no longer pink and juices run clear. Periodically brush chicken with the remaining marinade mixture while cooking. Discard any leftover marinade.

- If using chicken breasts, pound them to an even thickness to ensure quick and even cooking. To pound the breast, place them on a cutting board and cover with a piece of plastic wrap. Use a mallet or rolling pin to pound the thicker areas to an even ½ to ¾-inch thickness. There is no need to pound chicken thighs.
- Combine the smoked paprika, garlic powder, salt, and pepper in a small bowl. Season both sides of the chicken pieces with the spice blend.
- Heat a large skillet over medium heat. Once hot, add the cooking oil and swirl to coat the surface of the skillet. Add the seasoned chicken and cook on each side until well browned and cooked through (an internal temperature of 165ºF), about 5-7 minutes on each side.
- Turn the heat off and brush both sides of the chicken with BBQ sauce. Let the chicken rest five minutes before slicing and/or serving.

- For the marinade: Combine the ketchup, sugar, vinegar, Worcestershire, cumin, paprika, garlic, 1/2 teaspoon salt and a few turns of pepper in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.

SO EASY BBQ CHICKEN
This also works with 3-4 chicken breasts, which take about 15-25 minutes to make, not including thickening time. We normally serve this with either mashed potatoes and veggies or macaroni and cheese and baked beans. This is MUCH easier than most BBQ chicken recipes, including Coke ones...and better. My family loves having this for dinner. You should see my brothers fighting for the last one!

- Wash chicken thoroughly and place in a large microwavable casserole dish.
- Place molasses and warm water into a 2c microwave safe measuring cup or bowl and microwave for 30 seconds to allow molasses to mix easily.
- Add ketchup and smoke flavor and mix thoroughly. If you like a kick add hot sauce.
- Pour BBQ sauce mix over chicken evenly.
- Place chicken with cover into microwave oven and set on high for 15 minutes.
- Open casserole and re-arrange chicken, nuke for another 15-20 minutes making sure chicken is cooked to the bone upon removal - times may vary depending on wattage of oven.
- Remove casserole dish, uncover and broil in oven for 5 minutes to brown skin. Watch carefully not to overcook.
