CLASSIC APPLE CRUMBLE
The humblest crumble ever, I'm mixing this one up with eating apples as well as the classic Bramley. So homely, so simple and so delicious - you're going to love it.

Steps:
- Preheat the oven to 200°C/400°F/gas 6.
- Peel and core the apples, then quarter and chop into 3cm chunks.
- Place in a saucepan on a medium heat with 100g of sugar and a few fine gratings of lemon zest.
- Pop the lid on and cook for 5 minutes, or until the apples have softened. Remove the heat and leave to cool a little.
- Meanwhile, cube the butter and place in a mixing bowl with the flour. Rub together with your fingertips until it resembles breadcrumbs, then scrunch in the remaining sugar to add a little texture.
- Transfer the apples to a 25cm x 30cm baking dish and sprinkle over the crumble topping.
- Bake in the oven for 25 to 30 minutes, or until golden and bubbling. Delicious served with vanilla custard.

- Preheat oven to 350F/180C.
- Peel apples, then cut into 1.5cm/ 3/5" cubes.
- Place apple in a bowl. Sprinkle with flour, sugar and cinnamon, then pour over lemon juice. Toss, then spread out evenly in a 1.5 litre/1.5 quart baking dish.
- Place Topping ingredients in a bowl. Mix until clumps form, like wet sand (see video). Spread over the apples, crumbling with fingers if required to get that crumbly topping.
- Bake for 30 to 40 minutes or until golden brown. Remove, cover loosely with foil to keep warm and let stand for 10 minutes before serving (let's the apple filling come together).
- Serve warm with vanilla ice cream!

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Flatten down with your hand to prevent too much crumble falling through. Stir well being careful not to break up the fruit.
- Put 175g plain flour and 110g golden caster sugar in a bowl with a good pinch of salt and mix well.
- Slice in 110g cold butter and rub it in with your fingertips until the mixture looks like moist breadcrumbs. Taking a few cubes of butter at a time rub into the flour mixture.Shake the bowl and any big bits will come to the surface - rub them in. Keep rubbing until the mixture resembles breadcrumbs. Don't worry too much about getting it even, as this is quite a rustic dish and works well with an uneven texture.You can also make the crumble mixture in a food processor. Place all the topping ingredients into the processor and process on pulse until you get a coarse mixture but be careful not to over-mix.
- Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top. Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out.Sprinkle a good layer of crumble topping over the apples, try to work on a depth half that of the apples. Too thick and the middle won't cook.

- If you're planning to cook it straight after preparing, preheat the oven to 180C/350F/gas 4. If you want, however, you can make the crumble beforehand, and cook it later.
- First, you need to prepare the apples. Half fill a large saucepan with water, and peel, core and chop the apples into 1-2cm chunks. Place them in the saucepan to stop them from ruining.
- Drain all of the water from the saucepan, add another 2 tbsp of water and 50g of the sugar, and place on a medium heat on the hob. Stew until the apples become mushy. Once mushy, put the apples into an ovenproof dish.
- Place the flour and the remaining sugar in a mixing bowl. Add the butter and use your hands to mix everything together until the mixture resembles large breadcrumbs. Pour this evenly on top of the stewed apple.
- If you are making the crumble in advance, cover it with cling film and allow to cool to room temperature before placing in the fridge. When ready to cook, place the crumble in the preheated oven and bake for 30 minutes. Don't worry if the crumble doesn't looked cooked properly, it most likely is! Eat hot from the oven.
