This delicious Bean Dip is a creamy, cheesy, easy, stove-top recipe requiring only SIX ingredients and just TEN minutes!

Ingredients

1 (8-ounce) package cream cheese (at room temperature)
2 (16-ounce) cans refried beans
3/4 cup salsa (mild, medium, or hot, depending on your preference)
1 tablespoon Homemade Taco Seasoning (plus more to taste if desired)
8 ounces (2 cups) grated pepper jack cheese (OR Monterrey Jack or sharp cheddar)
1/4 cup chopped fresh cilantro leaves (plus additional for garnish)

Steps:

In a medium pot set over medium heat, break up the cream cheese into chunks. Add the refried beans, salsa, and taco seasoning and mix together until well incorporated. Stir occasionally until smooth and heated through, adjusting the heat as necessary to prevent the bottom from burning.
Stir in the grated cheese until melted, and then add the cilantro. Garnish with additional cilantro, if desired, and serve warm with tortilla chips.

1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
16 oz Velveeta®, cut into 1/2-inch cubes
1/2 cup chopped green onions
Tortilla chips, optional

Steps:

Garnish with additional green onions and serve queso bean dip with tortilla chips, if desired.
Combine refried beans, undrained tomatoes, Velveeta® and onions in medium saucepan. Heat over medium-low heat until Velveeta melts, about 12 to 15 minutes, stirring frequently.

I created this trying to use left over refried beans from Recipe #272760, submitted by Larry in DC. Served with Tortilla chips in front of a football game - it was a HIT!!

1 cup prepared refried beans (I recommend Refried Beans by Larry in DC, as these freeze well once prepared)
1 cup nacho cheese

Steps:

Combine Nacho Cheese and Refried beans in a microwave safe dish.
Microwave on high about 1 minute.
Stir to combine and heat until warmed through
Serve with Tortilla Chips.

Place butter into a small saucepan over medium heat to melt. Whisk in flour, salt and pepper, stirring for about 60 seconds. Slowly stir in heavy cream, whisking continuously until thickened. Once thickened, reduce heat to low and stir in 1 1/2 cups of cheese until melted smooth and thick. Stir in can of tomatoes, stirring to combined. Pour queso over beans, stir to combine. Transfer bean mixture to individual baking dishes or a 9×13 inch baking dish. Top with remaining cheese and bake for 20-25 minutes, until cheese is melted. Remove and serve warm with tortilla chips.
