CHEESE QUESADILLAS WITH FRESH GUACAMOLE



Cheese Quesadillas with Fresh Guacamole image

Four 12-inch flour tortillas
1/2 cup grated Cheddar
1/4 cup grated mozzarella
1/2 cup grated queso blanco
Olive oil
Guacamole, recipe follows

Steps:

  • Lay out 2 of the flour tortillas on a flat surface. Top with the cheeses, spreading evenly over the tortillas. Top with remaining tortillas and press to seal.
  • Heat a large saute pan over high heat. Add enough oil to coat the bottom of the pan and lower the heat to medium. Cook until golden brown on both sides, about 3 minutes per side. Repeat with the other quesadilla.
  • Let cool for 5 minutes. Slice into 8 or 10 pieces. Serve with the Guacamole.
  • 1 small ripe Haas avocado
  • 1 tablespoon minced jalapeno pepper
  • 2 tablespoons minced red onion
  • 1 tablespoon chopped cilantro leaves
  • 1/2 lime, juiced
  • Salt
  • Halve the avocado and remove the pit with a sharp knife. Discard the pit. Scoop the flesh into a small bowl and mash with a fork. Stir in the remaining ingredients, season with salt to taste, and set aside.

2 ripe Haas avocados
1 lime, juiced
A couple pinches salt
1/4 cup sour cream, 3 rounded tablespoonfuls
2 chipotle peppers in adobo, available in cans on specialty food aisle in Mexican section
1/2 pound chorizo sausage, sliced thin on an angle
1 tablespoon extra virgin olive oil, plus some for drizzling
1 clove garlic, cracked away from skin and crushed
12 large shrimp, peeled and deveined, tails removed, ask for easy-peels at fish counter
Salt and freshly ground black pepper
4 (12- inch) flour tortillas
1/2 pound, 2 cups, shredded pepper Jack cheese

Steps:

  • Cut avocados all the way around with a sharp knife. Scoop out the pit, then spoon avocado flesh away from skin into a food processor. Add the juice of 1 lime, a couple of pinches salt, sour cream and chipotles in adobo. Pulse guacamole until smooth. Transfer to a serving bowl.
  • Heat a 12-inch nonstick skillet over medium high heat. Brown chorizo 2 to 3 minutes, then remove from pan. Add oil, garlic, then shrimp. Season shrimp with salt and pepper and cook shrimp until pink, 2 or 3 minutes. Transfer shrimp to a cutting board and coarsely chop.
  • Add a drizzle of oil to the pan and a large tortilla. Cook tortilla 30 seconds, then turn. Cover 1/2 of the tortilla with a couple of handfuls of cheese. Arrange a layer of chorizo and shrimp over the cheese and fold tortilla over. Press down gently with a spatula and cook tortilla a minute or so on each side to melt cheese and crisp. Remove quesadilla to large cutting board and repeat with remaining ingredients. Cut each quesadilla into 5 wedges and transfer to plates with your spatula. Top wedges of quesadillas with liberal amounts of smoky guacamole.

This one is so very, very good! The smoky guacamole is a MUST; it just won't taste the same without the chipotle. I got the recipe from my sister, who got it from someone at the Food Network.

This speedy vegetarian lunch or supper is packed with calcium, folate, vitamin C and iron - serve with an avocado and pumpkin seed salad

10 spring onions , trimmed
2 tbsp pumpkin seeds , plus extra to serve
1 tbsp olive oil , plus 1 tsp
2 soft flour tortillas (or gluten-free alternative)
10 slices of jalapeno chillies (from a jar)
85g cheddar , grated
1 avocado , halved, stoned and peeled
juice 1 lime
small pack coriander , plus extra leaves to serve
½ cucumber , peeled, halved lengthways and sliced on the diagonal
2 Little Gem lettuces , cut into thin wedges

Steps:

  • Boil a pan of water and add the spring onions. Cook for 2-3 mins until just tender, then drain and run under very cold water. Set aside on some kitchen paper. Toast the pumpkin seeds for 1-2 mins in a hot, dry pan until slightly golden. Tip into a bowl and leave to cool.
  • Heat a griddle pan on a high heat. Drizzle the spring onions with 1 tsp olive oil and season. Griddle for 2 mins each side until lightly charred. Lay out a tortilla and place the spring onions across, top to tail. Scatter over the jalapeños and the cheese. Top with the other tortilla and press together. Cook in the griddle pan for 1-2 mins each side, turning carefully, until the cheese has melted and the tortilla is crisp.
  • Meanwhile, whizz together the remaining oil, the avocado, lime juice, coriander and 1 tbsp water. Season the dressing before tossing with the cucumber and lettuce. Sprinkle with pumpkin seeds and the remaining coriander leaves. Cut the quesadilla in quarters and serve with the salad.

2 Tbsp. KRAFT Zesty Lime Vinaigrette Dressing
1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese
1/2 cup cooked crumbled Mexican chorizo
1/4 cup drained canned chopped green chiles
1/2 cup guacamole

Steps:

  • Brush 2 tortillas with 1 Tbsp. dressing. Top tortillas, dressing sides down, with cheese, chorizo and chiles. Top with remaining tortillas; brush with remaining dressing.
  • Cook 1 quesadilla in nonstick skillet on medium heat 3 min. on each side or until lightly browned on both sides. Repeat with remaining quesadilla.
  • Cut quesadillas into wedges. Serve with guacamole.

This meal began as a mix-and-match of our favorite quesadilla and guacamole recipes and evolved into a legendary family favorite in no time. Serve with salsa and sour cream, over rice and re-fried beans or whatever else you like.

1 avocado
2 teaspoons lime juice
1 teaspoon minced garlic
1/8 cup chopped green onion
1/4 cup diced tomato
1/8 cup diced yellow onion
1/8 cup diced green bell pepper
salt and chili powder
1 tablespoon olive oil
48 inches flour tortillas
1 cup shredded cheddar cheese

Steps:

  • Pit avocado and mash in a small mixing bowl with the lime juice. Add garlic, green onion, tomato, yellow onion, bell pepper, salt and chili powder. Mix thoroughly. Cover and refrigerate for 30 minutes.
  • Heat oil over medium heat in a medium skillet. Place tortilla in skillet and top with 1/3 cup cheese. When cheese has melted and tortilla is slightly browned, spoon on some guacamole and top with another tortilla. Flip, and allow the second tortilla to brown.
  • Remove from heat and cut into wedges. Repeat with remaining ingredients.

An appetizer recipe I found in my Weber's Charcoal Grilling cookbook that plan to try soon!! Time doesn't include the 3 hour marinating of the chicken. I haven't tried this recipe yet, but plan to grill some onions, along with the chicken and chiles.

2 large garlic cloves
1 jalapeno pepper, stem removed
1 cup tightly packed fresh basil leaf
3 tablespoons extra virgin olive oil
2 tablespoons tequila
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
2 large boneless skinless chicken breast halves (about 8 oz. each)
2 Hass avocadoes, pitted and skins removed
1 tablespoon fresh lime juice
2 medium garlic cloves
1/4 teaspoon kosher salt
1 tablespoon finely chopped fresh cilantro
1/8 teaspoon fresh ground black pepper
2 medium poblano chiles, stems removed
