Time P2DT55m

Yield 4 servings

Number Of Ingredients 28

2 tablespoons EVOO
4 cloves garlic, finely chopped
2 to 3 sprigs fresh rosemary, leaves stripped and finely chopped
1 Fresno or Italian cherry chile pepper, finely chopped
1/2 cup Marsala wine, sherry or spicy red wine
1 blood orange or organic navel orange
1/2 cup chicken stock
1/3 cup honey
3 to 4 tablespoons grated red onion
2 tablespoons kosher or fine sea salt
4 cloves garlic, finely chopped
A few sprigs fresh rosemary
1 lemon, sliced
4 pieces skinless, boneless chicken breasts (about 2 pounds)
EVOO, for brushing
Puttanesca-Style Panzanella, for serving, recipe follows
2 pounds plum tomatoes, coarsely chopped
1 cup fresh flat-leaf parsley leaves
1 medium red onion (you can use the rest of the onion you grated for the brine, recipe above), chopped
1 red bell pepper, seeded and chopped
About 1/3 cup EVOO
2 tablespoons red wine vinegar
2 teaspoons anchovy paste
2 cloves garlic, finely chopped or grated
1 Fresno or Italian red cherry chile pepper, finely chopped
1 lemon
1/2 loaf peasant bread
3/4 cup oil-cured black olives, pitted and chopped

Steps:

  • For the glaze: Heat the EVOO in a small pot over medium to medium-high heat. Add the garlic, rosemary and chile pepper, and stir for a few minutes. Add the wine and cook until reduced to 3 to 4 tablespoons, about 2 minutes. Peel the zest from the orange in strips and add to the pot. Stir in the chicken stock and honey, then cook at a low rolling simmer until reduced to about 1/2 cup, about 20 minutes. Let cool.
  • For the brine: Put the onion, salt, garlic, rosemary, lemons and 4 cups water in a large resealable plastic bag. Add the chicken and refrigerate for up to 2 days.
  • Heat a grill pan, griddle or cast-iron skillet over medium-high heat. Remove the chicken from the brine and pat dry. Drizzle or brush the chicken with EVOO, then cook, turning occasionally, until the chicken is cooked through, 12 to 15 minutes. Meanwhile, gently warm the glaze. Baste the chicken with the glaze during the last 5 minutes of cooking.
  • Serve the chicken with the Puttanesca-Style Panzanella.
  • Cook's Note: Make 6 pieces of chicken breast and you'll have extra meat to slice for sandwiches or chicken salad the next day.
  • Combine the tomatoes, parsley, onions and bell peppers.
  • Whisk together the EVOO, vinegar, anchovy paste, garlic, chile pepper and lemon juice in a bowl.
  • Pour water over the bread, then wring out the loaf and tear it into bite-size pieces. Toss the bread, vegetable mixture and olives with the dressing. Serve.
  • Cook's Note: Wrap the bread loosely in foil overnight so it becomes stale and a little hard (if it goes too far, place it in a plastic bag overnight). If you are making the salad ahead of time, you can combine the vegetables and parsley in a resealable plastic bag and refrigerate them. Pit and chop the olives and return them to their container in the refrigerator. Store the dressing in the refrigerator and bring it to room temperature before using.

Provided by Michael Chiarello : Food Network

Yield 2 1/2 to 3 cups or 4 to 6 servings

Number Of Ingredients 12

2 teaspoons chopped and smashed anchovies
2 teaspoons salted or canned capers, rinsed and chopped
1 1/2 cups marinara sauce
1/4 cup clam juice (preferably unsalted)
Freshly ground black pepper
1 1/2 teaspoons hot chili paste, finely chopped (recommended: Peperoncino Piccante Chili "Paste")
1/2 cup peeled, seeded, roughly chopped tomatoes (if you don't have any tomatoes on hand, increase the marinara sauce to 2 cups)
1/2 cup each Kalamata and picoline olives, pitted and quartered
1 tablespoon finely chopped fresh oregano leaves or 1 1/2 teaspoons dried oregano
2 tablespoons finely chopped Italian parsley, optional
1 1/2 teaspoons red wine vinegar
2 tablespoons extra-virgin olive oil

Steps:

  • Smash out the anchovy fillet with the flat side of the knife. After the capers are rinsed, mash those with flat of knife as well.
  • Whisk the marinara and clam juice together in large sauce pot, season with fresh black pepper, to taste. Add the anchovies, capers, and chili paste, and stir. Add the tomatoes to sauce with the olives. Add parsley, oregano, vinegar, and olive oil. Bring to boil. Check and adjust the seasoning.
  • Just before serving, warm the sauce and toss in a pan with some hot pasta. Top with grated pecorino. Add some pasta water, if desired, to thin out the sauce. The sauce is also terrific over grilled fish or on a bruschetta.

EASY PASTA PUTTANESCA RECIPE

Easy Pasta Puttanesca Recipe image

Bold and comforting in the best way, puttanesca sauce takes a few pantry staples including: canned tomatoes, garlic, olives, capers, and anchovies. Spaghetti is a popular choice for pasta puttanesca (and it's what I used in this recipe), but any long, thin pasta would work -- like linguine or vermicelli. Serve with a big salad like Panzanella salad, arugula salad, or Mediterranean bean salad.

Categories     Entree

Number Of Ingredients 12

3/4 pound thin spaghetti
Kosher salt
¼ cup extra virgin olive oil, (I often use Italian Nocellara EVOO for this one)
4 to 8 anchovy fillets, (use to your liking)
1 teaspoon red pepper flakes, (optional)
4 to 5 large garlic cloves, (minced)
1 28- ounce can whole peeled San Marzano tomatoes
½ cup pitted kalamata olives, (sliced)
3 tablespoons capers
2 teaspoons dry oregano
Kosher salt
½ cup chopped parsley

Steps:

  • In a large, deep pan, heat a good ¼ cup or so extra virgin olive oil. Warm the oil over medium heat and add the anchovy fillets and red pepper flakes. Cook for about 2 minutes or so, tossing the anchovies around (they will somewhat melt into the oil infusing it with flavor).
  • Add the garlic and cook for a brief 30 seconds until fragrant, then add the tomatoes, ½ of the olives and capers, and the dried oregano. Bring the mixture to a simmer, while using your cooking utensil to break up the tomatoes.
  • Lower the heat and cover the pan part-way. Allow the sauce to cook for a good 20 to 30 minutes or until thickened to your liking.
  • While the sauce is cooking, cook the pasta in boiling salted water to al dente, according to package instructions (mine took about 9 minutes).
  • When the pasta is ready, transfer it to the pan with the sauce and toss well. If you need to, add a little of the pasta cooking water. Taste and adjust the salt, if needed.
  • Garnish with the remaining olives and capers and fresh parsley. Serve!
