Lemon-Basil Mojito Mocktails image

In this twist on the classic summer beverage, lemon and basil take the place of mint. For a grown-up version, just add your favorite rum or vodka. -Cheryl Perry, Hertford, North Carolina

Number Of Ingredients 7

1-1/2 cups sugar
4 cups water
6 cups fresh basil leaves, divided
Crushed ice, divided
2 bottles (1 liter each) club soda
GARNISH:
Fresh lemon wedges

Steps:

  • In a small saucepan, bring sugar and water to a boil. Cook and stir until sugar is dissolved. Place half the basil in a small bowl. With a pestle or wooden spoon, crush basil until its aroma is released. Stir into sugar mixture. Remove from heat; cool completely. Strain; refrigerate until cold., Place 2 cups crushed ice and remaining basil in a 4-qt. pitcher. Using a muddler or a wooden spoon, press basil leaves against ice until their aroma is released. Stir in basil syrup and soda. Serve over crushed ice in tall glasses; squeeze lemon wedges into drink.

2 lime wedges (each 3/4 inch thick)
2 sprigs fresh purple basil
2 tablespoons light rum
Simple Syrup for Cocktails
Splash of club soda

Steps:

  • In a tumbler, muddle 1 lime wedge and the basil. Fill tumbler with ice. Add rum and syrup. Top with club soda. Stir well. Garnish with remaining lime wedge.

2 fresh mint sprigs, chopped
2 fresh basil sprigs, chopped
1 tablespoon sugar
3 tablespoons fresh lime juice
1 1/2 ounces (3 tablespoons) light rum
Chilled club soda or seltzer water

Steps:

  • In a tall glass with back of a spoon crush mint and basil with sugar and lime juice until sugar is dissolved and stir in rum. Add ice cubes and top off drink with club soda or seltzer water.
  • Stir drink well and garnish with mint, basil, and lime.

While stalking the web for a recipe to use my bushels of purple basil, I came across this wonderful recipe. Please tell me how you make it your own! The Farmgirl Fare site where I found the recips does state "Except for the fact that purple basil isn't as pretty as the green and does make a rather oddly colored pesto, I would probably quit growing the green stuff altogether. Mixing a few green leaves into the pesto does help brighten it up a bit."

1/2 cup whole almond (roasted & salted)
4 ounces purple basil (about 4 cups packed, but it's best if you weigh it)
3 -6 large garlic cloves, peeled and coarsely chopped
1/2 teaspoon salt
6 tablespoons extra virgin olive oil

Steps:

  • Mix all ingredients except the olive oil in a food processor until thoroughly combined and the consistency you like.
  • With the food processor running, drizzle in the olive oil through that chute thingie. Add more salt to taste if necessary.
  • Store pesto in the refrigerator for several days or freeze.
