2 1/4 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon baking soda
1 cup margarine
3/4 cup honey
1/4 cup packed brown sugar
1 cup solid pack pumpkin
2 teaspoons vanilla extract
1 egg
1 (12 ounce) package white chocolate chips
2/3 cup chopped macadamia nuts

Steps:

  • Combine flour, cinnamon, cloves and baking soda in a small bowl.
  • Beat margarine, honey and brown sugar in large mixer bowl until creamy.
  • Beat in pumpkin, egg and vanilla until blended; gradually beat in flour mixture. Stir in 1 1/2 cups morsels and nuts.
  • Drop a rounded teaspoon of dough onto a cookie sheet, leaving about 2 inches between each. Bake in a pre-heated 350 degree oven for 11-12 minutes. Cool cookies on a wire rack.
  • Place remaining white chips in a heavy-duty plastic bag. Microwave on medium-high power for 10-second intervals; kneading until smooth. Cut tiny corner from bag; squeeze to drizzle over cookies.

2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon baking soda
1 cup butter or 1 cup margarine, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 cup Libby's canned pumpkin
1 large egg
2 teaspoons vanilla extract
2 cups nestle toll house premier white chocolate chips
2/3 cup coarsely chopped macadamia nuts or 2/3 cup walnuts, toasted

Steps:

  • Preheat oven to 350°F.
  • Combine flour, cinnamon, cloves and baking soda in small bowl.
  • Beat butter, granulated sugar, and brown sugar in large mixer bowl until creamy. Beat in pumpkin, egg and vanilla until blended. Gradually beat in flour mixture. Stir in morsels and nuts.
  • Drop by rounded tablespoon onto greased baking sheets; flatten slightly with back of spoon or greased bottom of glass dipped in granulated sugar.
  • Bake for 11-14 minutes or until centers are set. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

I'm not sure where I got this recipe from originally but the combinations fascinated me. When I went to make them I didn't have any cardamom (and almost past out when I saw the price of a little bottle!) so I used 1/4 tsp. nutmeg and 1/4 tsp. ginger in place of it. I loved the results! If I every can afford the cardamom (ha ha!) I'll try the recipe again as written.

2 cups flour
2 teaspoons cinnamon
1 teaspoon cardamom, ground (or substitute spices mentioned above)
1 teaspoon baking soda
1 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar, packed
1 cup solid pack pumpkin
1 egg
2 teaspoons vanilla
2 cups white chocolate chips
2/3 cup macadamia nuts, coarsely chopped, toasted

Steps:

  • Combine first 4 ingredients in a small bowl.
  • Beat butter and sugars in a large bowl until creamy.
  • Beat in pumpkin, egg and vanilla until well mixed; gradually beat in flour mixture. Stir in chips and nuts.
  • Drop by rounded Tbls. onto greased baking sheet; flatten slightly with back of spoon or greased bottom of glass dipped in sugar.
  • Bake in preheated oven at 350°F for 11-14 minutes.
  • Cool for 2 minutes, remove to wire rack to cool completely.

2 teaspoons cinnamon
1 teaspoon clove
1 cup butter, softened to room temp
1/2 cup sugar
1/2 cup brown sugar
1 cup canned pumpkin
1 egg
2 teaspoons vanilla
2 cups white chocolate chips
2/3 cup macadamia nuts, chopped

Steps:

  • 1. Combine flour, soda, cinnamon and cloves.
  • 2. Beat butter and sugars until creamy.
  • 3. Beat in pumpkin, egg and vanilla until blended.
  • 4. Gradually beat in flour mixture.
  • 5. Stir in macadamia nuts and 1 1/2 C morsels (reserve 1/2 C for topping).
  • 6. Spread onto greased 15 1/2" x 10 1/2" jelly roll pan.
  • 7. Bake at 350°, 18-22 minutes or until toothpick inserted comes out clean.
  • 8. Melt morsels in plastic bag (med. setting on microwave). Drizzle onto bars.
