1 small sugar pie pumpkin (2 to 3 pounds)
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 teaspoons pumpkin-pie spice
1/2 cup packed light brown sugar
2 large eggs, separated
1/4 cup plain Greek yogurt
1 cup whole milk
4 tablespoons unsalted butter, melted
1/4 cup slivered almonds
1/4 cup raw sunflower seeds
1 1/2 tablespoons pure maple syrup
Coarse salt
1/4 cup dried cherries or cranberries
Whipped cream, for serving (optional)

Steps:

  • Prep the pumpkin: Preheat the oven to 350 degrees F. Remove the stem and cut the pumpkin into quarters with a serrated knife. Scrape the seeds and pulp into a strainer; set aside.
  • Roast the pumpkin: Put the wedges on a baking sheet and cover tightly with foil; bake until the flesh is tender, about 1 hour, 30 minutes. Remove the foil and let cool.
  • Puree and strain: Scoop the pumpkin flesh into a food processor and puree until smooth. Transfer to a sieve set over a bowl to drain the excess liquid, about 1 hour.
  • Toast the seeds: Meanwhile, reduce the oven temperature to 300 degrees F. Rinse the seeds under cold water and discard the stringy pulp; blot dry. Spread the seeds in a single layer on a rimmed baking sheet and bake about 30 minutes, stirring occasionally (this helps dry them out).
  • Make the topping: Transfer 1/2 cup pumpkin seeds to a bowl and add the almonds, sunflower seeds and syrup. Spread on 2 baking sheets lined with silicone mats or parchment paper and season with salt; bake until just golden, stirring several times, about 20 minutes. Cool completely on the pan, then toss with the dried cherries.
  • Make the batter: Whisk the flour, baking powder, baking soda, salt and pumpkin-pie spice in a bowl. Whisk the sugar and egg yolks in a separate bowl, then whisk in 1 1/2 cups strained pumpkin puree, the yogurt and milk. Whisk in the melted butter. Pour the pumpkin mixture into the flour mixture and stir with a rubber spatula until just combined (it will be lumpy). Beat the egg whites with a mixer until stiff, then gently fold into the batter.
  • Cook the waffles: Preheat a waffle iron and grease it if it's not nonstick. Spoon in the batter and cook until golden brown. Keep warm in a 250 degree F oven (directly on the rack) until serving. Serve with whipped cream, if desired, and sprinkle with the topping.

2 1/3 cups Original Bisquick™ mix
1 1/2 cups milk
1/2 cup canned pumpkin (not pumpkin pie mix)
1/4 cup vegetable oil
2 tablespoons packed brown sugar
1 teaspoon pumpkin pie spice
2 eggs
1/4 cup chopped pecans
Powdered sugar, if desired

Steps:

  • In 1-quart saucepan, heat syrup ingredients, stirring occasionally, until juice concentrate is melted and mixture is warm.
  • Heat waffle iron; grease with cooking spray, vegetable oil or shortening. In large bowl, beat all waffle ingredients except pecans and powdered sugar with wire whisk or hand beater until blended. Pour batter onto center of hot waffle iron. Close lid of waffle iron.
  • Bake about 5 minutes or until steaming stops and waffle is golden brown. Carefully remove waffle. Sprinkle with pecans and powdered sugar. Serve with syrup.

4 large cooking apples, such as Mutsu, Greening, or Rome Beauty
1/2 cup chopped toasted walnuts
2 tablespoons packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup pure maple syrup
1/2 cup unsweetened apple juice

Steps:

  • Preheat the oven to 375 degrees.
  • Wash and core the apples, leaving the bottoms intact. In a bowl, combine the walnuts, brown sugar, cinnamon, nutmeg, and 2 tablespoons of the maple syrup. Stuff the hollowedout center of each apple with the nut mixture.
  • Place the apples upright and close together in the pan. Combine the apple juice with the remaining 2 tablespoons of maple syrup and pour around the apples. Cover the baking pan with aluminum foil and bake for about 45 minutes, until the apples are tender.
  • Serve hot or cold with vanilla frozen yogurt or whipped cream

1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
2 large eggs
1 tsp. maple flavoring
1/2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg
1 (8- or 9-inch) prepared graham cracker or baked pie crust
1/3 cup firmly packed brown sugar
1/3 cup Pillsbury BEST® All Purpose Flour
1/2 tsp. ground cinnamon
3 tbsps. cold butter
1/2 cup chopped walnuts

Steps:

  • HEAT oven to 425 degrees F. Combine pumpkin, sweetened condensed milk, eggs, maple flavoring, cinnamon, salt, ginger and nutmeg in large bowl. Mix well. Pour into pie crust.
  • BAKE 15 minutes. Reduce oven temperature to 350 degrees F. Bake an additional 30 minutes.
  • COMBINE brown sugar, flour and cinnamon in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in nuts. Remove pie from oven. Top evenly with crumb mixture.
  • BAKE an additional 10 minutes. Cool. Garnish as desired.

2 teaspoons ground cinnamon

2 cups milk
4 eggs, separated
¼ cup butter, melted
½ cup white sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1 cup apple cider
1 tablespoon lemon juice
2 tablespoons butter

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Combine the flour, baking powder, cinnamon, allspice, ginger, salt, and brown sugar in a mixing bowl. In a separate bowl, stir together the pumpkin, milk, and egg yolks. Whip the egg whites in a clean dry bowl until soft peaks form.
  • Stir the flour mixture and 1/4 cup melted butter to the pumpkin mixture, stirring just to combine. Use a whisk or rubber spatula to fold 1/3 of the egg whites into the batter, stirring gently until incorporated. Fold in the remaining egg whites. Cook waffles according to manufacturer's instructions.
  • To make the syrup, stir together the sugar, cornstarch, and cinnamon in a saucepan. Stir in the apple cider and lemon juice. Cook over medium heat until mixture begins to boil; boil until the syrup thickens. Remove from heat and stir in the 2 tablespoons of butter until melted. Serve warm.

1 1/2 cups almond milk (I use Almond Breeze Vanilla) or 1 1/2 cups milk (I use Almond Breeze Vanilla)
1/2 cup canned pumpkin
1/4 cup I Can't Believe It's Not Butter® Spread, melted
2 tablespoons brown sugar, packed
1 teaspoon pumpkin pie spice
2 eggs
1/4-1/2 cup pecans, chopped
syrup
1/2 cup maple syrup
1/4 cup frozen apple juice concentrate, thawed
powdered sugar, if desired

Steps:

  • In a small saucepan, heat syrup ingredients (except powdered sugar), stirring occasionally, until apple juice concentrate is incoporated and mixture is warm.
  • Heat up your waffle iron and grease as you normally would with cooking spray.
  • In a large bowl, beat all waffle ingredients (except pecans) until well blended.
  • Fold in pecans.
  • Pour batter into the center of your waffle iron and cook as you normally would (this takes 3 minutes on my iron).
  • Carefully remove waffle and serve warm with syrup and a sprinkle of powdered sugar.

3 tablespoons butter
¼ teaspoon ground ginger

¼ cup orange juice

¾ cup maple syrup, divided
½ cup dried cranberries
½ cup chopped pecans
2 tablespoons butter
3 eggs
1 ½ cups low-fat buttermilk
½ cup canola oil
½ cup pumpkin puree
1 ½ cups whole wheat pastry flour
2 tablespoons white sugar
2 teaspoons baking powder
¾ teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves

Steps:

  • To make the Apple-Cranberry Relish: Peel, core, and chop the apples into 1/4-inch pieces. Combine the chopped apples, 3 tablespoons butter, 1/2 teaspoon cinnamon, vanilla, orange juice, and 1/2 cup maple syrup in a saucepan. Cook over medium heat for about 3 minutes. Add the cranberries and cook 5-10 minutes until apples are tender and cranberries have softened.
  • Remove apples and cranberries using a slotted spoon and set aside in a bowl. Simmer the apple syrup mixture until thick, about 8 minutes, stirring frequently. Remove from heat and stir in the remaining 1/4 cup maple syrup. Add the pecans and orange zest (if desired) to the apple-cranberry mixture.

Steps:

  • Preheat oven to 275 degrees. Set a rack on a rimmed baking sheet and place in oven. Preheat waffle iron according to manufacturer's instructions.
  • In a medium bowl, whisk together flour, spices, sugar, baking powder, baking soda, and salt. In a large bowl, whisk together, eggs, milk, pumpkin and melted butter; add flour mixture and mix just until batter is combined.
  • Lightly coat waffle iron with cooking spray. Pour about 1 cup batter into center of iron (amount may vary depending on size of iron), spreading evenly with a spatula.
