1/2 cup pumpkin puree (8 oz.)
1/2 cup sweet cream butter (unsalted)
1/4 cup granulated sugar
3/4 cup light brown sugar
1 large egg
1 teaspoon of pure vanilla extract
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/2 teaspoon of baking soda
1/4 teaspoon of ginger
1/4 teaspoon of allspice
2 cups of all-purpose flour
24 Riesen candies (or you could use another chocolate-covered caramel, like Rolos)

Steps:

  • 1. Combine butter, pumpkin, granulated sugar, and brown sugar in a large bowl and mix on low. Add in egg, vanilla, cinnamon, nutmeg, baking soda, ginger, and allspice and mix again. Slowly add in flour and stir by hand (to avoid too much gluten formation).
  • 2. Cover the bowl and refrigerate for 30 minutes.
  • 3. Cut the Riesen caramels in half. Then take about 1 large tablespoon of dough, put the candy on top of it, and form the dough into a ball around the candy.
  • 4. Put the dough/candy balls back in the refrigerator for another 30-60 minutes.
  • 5. Preheat the oven to 350 F. Place balls on a parchment-covered baking sheet at least two inches part as they will flatten as they cook. Bake for 15 minutes.

These soft, cake-like pumpkin cookies smell wonderful and are a great reminder of autumn. The recipe came from my great-grandmother and yields a small batch, so we sometimes double it. The caramel frosting is glaze-like and quite thin, so it helps to place the cooled cookies on waxed paper while frosting. I usually use an entire can of pumpkin, rather than letting a small portion of it go to waste. Store in an airtight container for very soft cookies, store in a loosely covered container for firmer cookies.

1 cup unsalted butter, softened
1 cup light brown sugar
1 cup pumpkin puree
1 large egg
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract

1 pinch ground nutmeg, or to taste
2 ½ cups all-purpose flour
½ cup chopped walnuts
½ cup raisins
½ cup brown sugar
4 tablespoons milk
3 tablespoons unsalted butter
1 cup powdered sugar
¾ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cream butter and brown sugar for cookies together in a bowl with an electric mixer. Stir in pumpkin, then egg. Add baking soda, baking powder, vanilla extract, salt, cinnamon, and nutmeg. Stir in flour. Mix in walnuts and raisins.
  • Drop spoonfuls of dough 2 inches apart onto ungreased cookie sheets.
  • Bake each sheet on the bottom rack in the preheated oven for 6 to 7 minutes; continue to bake on the top rack until edges are golden, 6 to 7 minutes more. Continue with remaining cookie sheets in this manner. Let cookies cool on the cookie sheets for 5 minutes, then transfer to a cooling rack to cool completely.
  • While the cookies cool, melt brown sugar, milk, and butter for frosting in a medium pot over low heat. Bring to a boil; continue to boil mixture for 2 minutes, stirring constantly. Remove from heat and cool for 3 to 10 minutes. The longer the mixture is cooled, the thicker the frosting will be on the cookies.
  • Add powdered sugar and vanilla extract to the frosting mixture, stir well, and drizzle or spread onto cooled cookies. Allow the cookies to cool for 1 to 2 hours before stacking.

1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2 ¼ cups all-purpose flour
1 teaspoon baking soda
¾ cup unsweetened cocoa powder
1 cup chopped walnuts
1 tablespoon white sugar
48 chocolate-covered caramel candies

Steps:

  • Beat butter until creamy. Gradually beat in white sugar and brown sugar. Beat in eggs and vanilla. Combine flour, baking soda, and cocoa. Gradually add to butter mixture, beating well. Stir in 1/2 cup walnuts. Cover and chill at least 2 hours.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine remaining 1/2 cup nuts with the 1 tablespoon sugar. Divide the dough into 4 parts. Work with one part at a time, leaving the remainder in the refrigerator until needed. Divide each part into 12 pieces. Quickly press each piece of dough around a chocolate covered caramel. Roll into a ball. Dip the tops into the sugar mixture. Place sugar side up, 2 inches apart on greased baking sheets.
  • Bake for 8 minutes in the preheated oven. Let cool for 3 to 4 minutes on the baking sheets before removing to wire racks to cool completely.

Steps:

  • Cream shortening, white sugar and pumpkin. Add eggs and mix well. Sift together the baking soda, ground cinnamon, salt and flour. Add to pumpkin mixture and mix well.
  • Drop from spoon to cookie sheet. Bake 10 minutes at 350 degrees F (175 degrees C).
  • To Make Frosting: Cook butter, milk, and brown sugar until dissolved. Cool and add confectioners' sugar and vanilla. Spread over warm cookies.
