Pulled Pork Enchiladas with Red Chile Sauce image

Tender pulled pork is simmered with Mexican spices for these Pulled Pork Enchiladas. The pork is layered with tortillas and plenty of shredded pepper jack cheese to make this cheesy, saucy, slightly spicy recipe.

3 cups red chile sauce (store bought is fine, buy it as mild or hot as you like)
10 white corn tortillas (cut into pie shaped triangles)
1 recipe Mexican Pulled Pork (cooked per recipe directions (about 4 cups cooked meat))
32 ounces shredded pepper jack or Mexican blend cheese (about 8 cups worth)
chopped fresh cilantro (for serving)
sour cream (for serving)

Steps:

  • Preheat the oven to 350°F. Pour ½ cup red chile sauce into the bottom of a 9x13 baking dish. Place a layer of tortilla wedges across the sauce and then spread half of the shredded pork across the tortillas. Sprinkle with about ⅓ of the cheese.
  • Layer more tortillas over the cheese and pour about a cup of sauce over the tortillas. Layer the rest of the pork, then another ⅓ of the cheese, and top with more tortillas. Pour the remaining sauce over the tortillas and then cover with the remaining cheese.
  • Bake until bubbling around the edges and lightly browned, about 30 minutes. Let cool at least 15 minutes before serving. Top each plate with a sprinkling of cilantro and a scoop of sour cream, if desired. Serve with plenty of tortilla chips. Enjoy!

Enchiladas from the Mexican state of Oaxaca are made with a red chile sauce. Ours has raisins to pull the fruit flavors from the ancho chiles and add a touch of sweetness. The pork is braised with aromatics and seasonings that turns into a deeply flavored blended sauce. Frying the tortillas a bit before rolling them gives them a durability that is important when assembling the dish.

1 red onion, sliced into thin rings
1 1/2 cups distilled white vinegar
Kosher salt
2 teaspoons sugar
2 tablespoons plus 1 cup vegetable oil
One 1-pound piece boneless pork shoulder
1/2 medium yellow onion, chopped
6 cloves garlic, chopped
2 tablespoons tomato paste
1 tablespoon ground cumin
1 teaspoon dried oregano
2 ounces ancho chiles (about 9 chiles), stemmed and seeded (see Cook's Note)
2 ounces pasilla chiles (about 8 chiles), stemmed and seeded (see Cook's Note)
2 bay leaves
1/4 cup raisins
3 cups low-sodium chicken broth
Eight 6-inch corn tortillas
8 ounces quesillo or whole milk mozzarella, grated (see Cook's Note)
Lime wedges, for squeezing

Steps:

  • Rinse the red onion in cold water, breaking up the rings and removing any white membrane between the layers. Drain well. Toss the red onions, vinegar, 1 1/2 cups water, 2 teaspoons salt and the sugar in a medium bowl until the sugar and salt dissolve. Cover with plastic wrap and let sit at room temperature until ready to serve.
  • Heat 2 tablespoons of the oil in a large heavy pot or Dutch oven over medium-high heat. Cook the pork, turning once, until golden brown on two sides, 4 to 5 minutes. Transfer to a plate.
  • Add the yellow onions to the same pot, season with salt and cook, stirring occasionally, until lightly browned, 3 to 4 minutes. Add the garlic, tomato paste, cumin and oregano and cook, stirring occasionally, until the paste is brick red and the mixture is fragrant, about 1 minute. Add the ancho and pasilla chiles, bay leaves, raisins, broth and 1 tablespoon salt. Return the pork and any accumulated juices to the pot. Bring to a boil, reduce to low, cover and simmer until the pork is falling apart and easily shreds, 1 1/2 to 2 hours.
  • Remove the bay leaves and discard. Transfer the pork to a medium bowl. Reserve the cooking liquid.
  • Let the hot cooking liquid cool for 5 minutes or so, then transfer it to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters, and pulse until smooth. Pour the sauce into a medium bowl and repeat with any remaining cooking liquid. Season with salt.
  • Pour 1/2 cup of the chile sauce over the pork. Use a potato masher to smash the pork into the sauce; it should fall apart completely. Remove any remaining large pieces of fat and discard. Stir to combine and season with salt if necessary.
  • Arrange a rack in the center of the oven and preheat to 425 degrees F.
  • Heat the remaining 1 cup oil in a medium skillet over medium-high heat until it bubbles immediately when the edge of a tortilla touches the surface. Working one at a time, fry the tortillas until just starting to brown and crisp, about 10 seconds per side (they should still be somewhat pliable). Drain on paper towels.
  • Dip both sides of each tortilla in the chile sauce just to coat and transfer to a rimmed baking sheet. Spread 1/2 cup of the chile sauce in a 6-inch strip down the center of a 13-by-9-inch baking dish.
  • Spoon 1/4 cup shredded pork across the center of a tortilla. Fold one side over the filling, then roll up the tortilla. Place seam-side down in the prepared baking dish. Repeat with more sauce and remaining tortillas (the enchiladas should be nestled right up against each other in the pan). Top with any remaining sauce in your bowl or leftover on the baking sheet. Cover tightly with foil and bake until the sauce bubbles, 20 to 25 minutes. Remove the foil, top with the cheese and bake until the cheese is melted but not brown, 5 to 10 minutes. Let sit 10 minutes.
  • Top the enchiladas with the pickled red onions. Serve with lime wedges for squeezing over.

4 cups leftover pork shoulder (shredded)
⅔ cup barbecue sauce
⅓ cup chicken broth
8-10 flour tortillas (burrito size)
4 cups sharp cheddar cheese (shredded)
2 cups Pepper Jack cheese (shredded)
French's® fried onion strings
15 ounce can red enchilada sauce

Steps:

  • Preheat the oven to 350° and lightly spray a 9 x 13 inch baking dish with non-stick cooking spray. Set aside.
  • In a medium saucepan, over medium heat, add leftover pulled pork, bbq sauce and broth. Stir. Cook until heated through.
  • Pour a little sauce in the bottom of the baking dish and spread so the bottom is covered.
  • Heat up tortillas and then take one tortilla at a time and add pork, a handful of cheese, fried crispy onions and roll up.
  • Place at one end of the baking dish and repeat until the pan is full.
  • Top with the remaining sauce, top with the rest of the cheese.
  • Cover with foil and bake until the cheese is hot and bubbly, approximately 25 minutes.
  • Remove foil and let bake for an additional 5 minutes.
  • Carefully remove from the oven, top with sliced green onions and sour cream, if desired.

1 1/2 cups monterey jack pepper cheese, shredded
1 1/2 cups aged cheddar cheese, shredded
1 tablespoon olive oil
2 cups pork Carnitas
1 cup red kidney beans, rinsed and drained
1 (15 ounce) can corn kernels, drained
6 large corn tortillas
6 tablespoons light sour cream, for garnish
6 -8 large cherry tomatoes, quartered
1 avocado, diced, for garnish
2 tablespoons cilantro, chopped, for garnish

Steps:

  • Preheat oven to 350ºF. In a 9 x 13-inch baking dish, spread on the bottom a fine coat of enchilada sauce; set aside. In a small bowl, combine the two cheeses together; set aside.
  • In a skillet over medium-high heat, add oil. When hot but not smoking, add pork and cook to warm it up, tossing continuously, about 2 minutes. Transfer to a bowl and add red kidney beans, corn, and ½ cup mixed cheese; stir to combine.
  • Fill each tortilla with ½ cup of pork mixture. Roll up by folding the ends and transfer into the prepared dish. Ladle over the remaining enchilada sauce and transfer into the preheated oven; bake for 10 minutes. Remove from the heat and sprinkle the remaining cheese on top. Return the baking dish to the oven and bake for another 10-12 minutes or until the cheese is melted and golden. Sit for 5 minutes before serving. Spread sour cream across, add tomatoes, avocado and sprinkle cilantro.

This enchilada packs a punch! This is my version of a REAL TEXAS pulled pork enchilada. This recipe calls for leftovers of my Recipe #477187. I love to make my carnitas because I have leftovers for 3 additional meals. Freeze about 1 1/2 pds in seperate zip lock bags and thaw them out when ready to use. Sauce needs to sit overnight for best results. The sauce can be made up ahead of time and frozen in ziplock bags as well.

1 1/2 lbs carnita meat (Kitchen Kouture Carnitas)
8 corn tortillas
1 lb sharp cheddar cheese, shredded
1/2 onion, chopped
2 tablespoons butter
2 tablespoons flour
5 teaspoons red chili powder
2 teaspoons cumin
2 teaspoons garlic powder
3 teaspoons garlic salt
1 teaspoon salt
1 teaspoon pepper
1 teaspoon cayenne
1 teaspoon onion powder
1 pinch cinnamon
6 ounces tomato paste
2 1/2 cups water

Steps:

  • Sauce:.
  • Melt butter in a sauce pan.
  • Make a roux by browning flour in melted butter.
  • Add spices and tomato paste; stir until well blended into roux.
  • Add water gradually, stirring constantly.
  • Heat until boiling.
  • Continue simmering and stirring until desired thickness. Let cool.
  • Let sit overnight in the refrigerator.
  • Enchiladas:.
  • Let sauce come to room temperature.
  • Fry tortillas slightly in oil to soften tortillas.
  • Coat the bottom of 11 x 14 pan with the sauce.
  • Coat each side of a tortilla with sauce.
  • Put carnita meat, cheese, & onion in tortilla, and roll up placing fold side down.
  • Continue till you have 8 enchiladas.
  • Pour the remainder of the red sauce over enchiladas.
  • Top with remaining cheese.
  • Cook at 400 degrees for 15 minutes.
