Add puff pastry to the list of good things you can snackify in your waffle iron. Although they don't puff up as much as oven-baked puff pastry, they turn out crispy on the outside and tender on the inside, and they take only minutes to make. Serve hot or at room temperature with syrup, fruit, Nutella®, fruit preserves, or nut butter.

1 (17.3 ounce) package frozen puff pastry, thawed
cooking spray

Steps:

  • Line a cutting board with parchment paper. Unfold puff pastry onto cutting board. Cut each sheet into 4 equal squares.
  • Preheat a waffle iron according to manufacturer's instructions. Grease with cooking spray.
  • Place one puff pastry square in the preheated waffle iron; cook until golden brown, 3 to 5 minutes. Repeat with remaining puff pastry squares.

For the puff pastry:
All-purpose flour, for rolling
One 14- to 17-ounce box of puff pastry (preferably all-butter puff), thawed according to package directions
For Almond Butter and Jelly Puffles:
4 tablespoons almond butter
6 tablespoons fruit jelly or jam
Butter, for serving
Maple syrup, for serving
For S'mores Puffles:
4 ounces finely chopped bittersweet chocolate or chocolate chips (about 2/3 cup), divided, plus more for garnish
1 cup mini marshmallows
Lightly sweetened whipped cream, for serving
For Croque Monsieur Puffles:
1/2 pound Gruyere or Swiss cheese, grated (about 1 1/3 cups)
8 slices ham (about 6 ounces)
3 tablespoons grainy Dijon mustard
Butter, for serving
Powdered sugar, for serving
Special equipment:
an electric waffle maker (preferably a square Belgian waffle maker)

Steps:

  • Heat the waffle maker to medium-high heat and lightly flour your work surface. Unroll the pastry and cut it in half widthwise. Measure the cooking surface of your waffle maker. Roll each piece of pastry to the same width but double the length of your waffle maker. For example, if your waffle maker measures 8 inches square, roll each piece of pastry to an 8x16-inch rectangle.
  • Divide the filling ingredients of your choice between the two pieces of pastry, distributing the ingredients evenly on one half of each piece of dough, leaving a 1/2-inch border. Lightly brush border with water. Fold the other half of each piece of pastry over like a book and crimp the edges to seal in the filling. (If your waffle maker is circular, trim the edges of the pastry to fit, then fill and seal.)
  • Place one filled waffle inside the waffle maker and cook until golden brown and puffed, about 5 to 6 minutes each, depending on your piece of equipment. Repeat with remaining waffle. Cut each waffle into four pieces and serve topped with suggested garnishes.

1/2 cup figs, sliced into quarters
2 tablespoons honey, plus extra to drizzle
1/4 cup filtered water
3 sheets puff pastry, lightly thawed
1 block Brie cheese, cut evenly into 8 pieces
2 egg whites, beaten (for washing pastries)

Steps:

  • Preheat oven to 350 degrees F.
  • Put a medium saucepan on the stove over high heat. Put the figs, honey, and water in the pan, stir, and bring to a boil. Reduce heat, and allow the water to simmer. The honey and natural sugars from the figs should thicken the water. Continue to simmer figs until a sauce is achieved that is thick enough to cover the back of a spoon. When sauce has reached that consistency, remove from heat. Put "fig sauce" in a refrigerator-safe container, and allow cooling for at least 20 minutes.
  • Spread a sheet of puff pastry out on a clean, lightly floured surface. Scoop a small amount of fig sauce on the puff pastry sheet with about 2 inches around the sauce on every side. Put a piece of Brie on top of the sauce. Carefully fold the edges of the puff pastry over the cheese. Squeeze the edges of the pastry together then carefully flip the pastry over, so the smooth surface of the pastry is facing up. Gently take the pastry and put it on a sheet tray lined with parchment paper. Repeat this until all the cheese is used. You should have 8 small stuffed pastries.
  • When all the pastries are on the sheet tray, take a pastry brush, and lightly brush egg whites on the top and sides of each pastry, this will give the pastry a shine when it comes out of the oven. Drizzle a small amount of honey on top of each pastry.
  • Bake the pastries until the puff pastry is a golden brown. This should take about 15 minutes, but keep your eyes on the baking process. When the pastries are golden brown, remove from the oven, and allow them to cool on a cooling rack. Allow them to cool for 3-5 minutes, then serve warm.

Unbleached all-purpose flour, for dusting
1 sheet (about 14 ounces) all-butter puff pastry, such as Dufour, thawed completely in refrigerator
1/4 cup chocolate-hazelnut spread, such as Nutella
Strawberries, halved if large, and warmed pure maple syrup, for serving

Steps:

  • Preheat a nonstick waffle iron according to manufacturer's instructions. Dust a clean work surface with flour and roll out pastry to flatten creases; cut in half crosswise.
  • Dollop chocolate-hazelnut spread by the teaspoon onto one piece of dough, spaced 2 inches from edges of dough and 2 inches apart. Brush between dollops with water, then top with second piece of dough, pressing gently between dollops to seal.
  • Center a 2 1/2-inch heart-shaped cookie cutter over dollops and stamp out shapes. Freeze 5 minutes. Cook in waffle iron until puffed and golden, 5 to 6 minutes. Serve with strawberries and syrup.

  • First unroll the pastry. I cut it into three 5x10-inch rectangles, which worked perfectly for my waffle maker. As they're all different, the best thing is maybe to measure the cooking surface of your waffle maker before you get started. Then just roll each piece of pastry to the same width of your waffle maker but double the length of it.
  • Then cut an apple into thin slices and put them on one half of the pastry rectangle. Sprinkle them with some cinnamon and agave. Fold the other half of each piece of pastry over and seal the edges.
  • Then heat the waffle maker and lightly grease it with some oil, for example coconut oil. Cook until golden brown. This will probably take about 5 minutes depending on your waffle maker.
